Eggplant Parmesan: Original vs Gourmet with Neapolitan Cook Carmela Abbate and Chef Angelo Sabatelli

  • The new episode of the “Original VS Gourmet" series is all about "her Majesty" the Eggplant Parmigiana. We traveled all the way to Zi Teresa in Naples to discover it with the historic cook Carmela Abbate. The second stop is Putignano, Puglia, inside Angelo Sabatelli's Michelin star restaurant (just wait for the upcoming Sicilian version of Parmigiana!). The classic Neapolitan recipe is opulent and "generous": ragù, provola and fior di latte, are the steps to the ancient popular tradition of Campania. Sabatelli's dish, on the other hand, uses different cooking and glazing techniques to preserve the original flavors, giving life to a gourmand but at the same time very light Aubergine Parmigiana. We couldn't stop eating them... What about you?

    senza sminuire la parmigiana di angelo sabatelli che + di una parmigiana, sembra un diplomatico, per me è da preferire quella della chef Carmela Abbate, per la sua manualità dei passaggi e fenomenale spiegazione della preparazione.       Comunque ho apprezzato il fatto che frigga la melanzana intera, esponendo la minor superficie possibile all'entrata dell'olio di cottura! Questa è pensata bene! Se togliesse la parte della salsa di soia, darei un voto diesci!

    There's so much love and respect in Carmela's cooking it's incredible. She is a great cook and a great teacher. There are many great teachers and cooks in this channel but she is smth else. A joy to watch.

    Posto che quella di "Zì Teresa" è un totem sacro e non si tocca, quella di Angelo presenta degli aspetti (sifone a parte) che la rendono curiosamente accattivante, pur che la soia non fa parte della nostra tradizione.

      You can learn some very useful tricks in these re-imagine recipes on this channel. Take the small components, like the parmigiano cream in this recipe, and use it to elevate other dishes. I can imagine using that cream at a topping when plating traditional lagsana.

Italians are such precious cooks and make exceptional dishes . its clear watching both the french and italins cooking that they take great pride in it . my friend a renound historian always says we won many wars against them because we made a dish called stew in which we chucked whatever we found into it and got on building weapons and armoury. i much prefer these guys food but also enjoy the stability of our sterling . best of both. great channel thanks

    As a lifelong lover of all things Italian (particularly the infinite variations of classic preparations of regional dishes), my absolute sentimental favorite dish is eggplant parmesan. I worked as a professional chef for well over a decade and it taught me the importance of quality ingredients and the importance of consistent and well executed technique. When I visit an italian restaurant for the first time there are certain dishes I'll try to determine a "benchmark" of technique and quality in the kitchen - eggplant parm is one of them. Such a simple dish but somewhat difficult to achieve. Everything must be perfectly done and assembled to achieve it's subtle complexity - it's too easy for this dish to become a heavy handed, overly done gut bomb. This lovely lady demonstrates everything correct about the technique and assembly of this iconic dish. I could imagine starting with a glass of prosecco and a light, lovely antipasti, then a pasta with excellent pesto followed by a serving of this heavenly eggplant with some Sangiovese based red wine, a lovely arugula salad, then cheese and fresh fruit, espresso and digestif and something sweet. My mouth is watering! I absolutely love this channel and everything it portrays- Ciao!

    Proverò certamente il trucco dell'acqua e sale. Mi è capitato delle volte che la parmigiana pizzicasse sotto al palato ed ho sempre pensato che fossero le melanzane ad aver assorbito l'olio in frittura.

    Originaleeeee!!!! Meravigliosa. E poi sbucciare le melanzane é un assassinio. Ma perché? Perché? PERCHÉ, buttare via la parte anche piú salutare? No, a volte i gourmet mi sembrano il prodotto dello snobismo che a volte viene causato dall'abbondanza. Non si butta un bel nulla.

      Di solito tutte le cose che vengono “scartate” dalle ricette gourmet vengono poi utilizzate per altre preparazioni (es: brodi, zuppe, salse), io non ho mai lavorato in una cucina di questi livelli ma spesso spiegano come riutilizzare tutti gli scarti

    Scusate, ma quando Chef Sabatelli dice "eliminate l'olio" dai liquidi che restano dopo la cottura in forno delle melanzane, prima di fare la riduzione, cosa intende? come si dovrebbe eliminare?

      Credo che l'olio non si mescoli del tutto con la salsa di soia in quanto apolare. Se attendi senza muovere il contenitore l'olio dovrebbe venir su a galla come surnatante e a quel punto puoi rimuoverlo semplicemente col cucchiaio.

    Friggere nell’olio extravergine è un abominio. A parte il basso punto di fumo dato dalla persistenza di sostanze aromatiche e acidi grassi volatili (quindi bruciano e danno un sapore amaro), qual è il senso di friggere, quindi arrivare almeno a una temperatura di 160-170 gradi, con un olio il cui procedimento di estrazione non supera i 30 gradi proprio per evitare di distruggere determinate sostanze aromatiche? Come distruggere la materia prima.
