  • Among the countless variations of lasagna, two are the recipes that can be defined as "classic". The most essential and elegant Bolognese lasagna and the Neapolitan lasagna, extremely rich in ingredients and textures, an almost "volcanic" recipe.       @@ukaszfila772 Burned? Man can you even see? There are only some really small black spots, that's not burnt at all. And it's normal for the cheese to do that, the problem is when it's really dark brown and black ALL OVER the plate, and here it's clearly not the case.
      Soggy? How is that on the bottom a soup to you? The cheese holds everything together, that's not soggy.
      Obviously the comment was referring at how he prepares and mixes the ingredients gently, but of course you must attempt a (failed) joke.
      Also, "wanna be "? He IS an executive chef.
      P.S. Not even commenting the poor attempt at fat shaming the guy.

    Da veneto conosco la lasagna emiliana che, qui da noi, con poche varianti, viene chiamato pasticcio.
    Non ho mai assaggiato la lasagna napoletana ma, devo dire, non ho nessun dubbio che sia anche questo un piatto meraviglioso.
    Due pietanze dallo stesso nome ma profondamente diverse. Il titolo scherzosamente dice vs (versus) cioè contro ma qui non c'è un "contro", qui c'è un "assieme" che rende l'Italia un paese straordinario!
    Su tutto traspare evidente l'amore dei due chef per il proprio lavoro.

      Io ho mangiato la versione tradizionale napoletana preparata dallo chef,tengo a precisare che essendo un piatto di carnevale(quindi prima del digiuno cristiano)é sostanzioso,ad oggi credo la facciano in pochi ancora così carico di ingredienti.E niente,io come sempre sono fortunato....l'ho terminata a fatica,ero ospite da parenti acquisiti di Napoli per la prima volta ed ho fatto lo sforzo di finirla..la nonna:t'ha piaciut?io:si signora..squisita!e lei alla nuora:ja piaciut eh!mittingell n'atra fella(ha gradito,mettigli un'altra porzione)..alla seconda forchettata del bis ho perso quasi conoscenza..ma il peggio é venuto dopo con i secondi!Ho giurato che mai più in vita mia scenderó a Napoli sotto le festività...per carità era tutto buono ma ho visto la morte in faccia!!😵😵😵

    Quella napoletana è esageratissima, sicuramente buona ma preferisco quella del nord (e sono Pugliese!)
    Però mi piace lo chef che sembra debba farci l'amore con la lasagna, si vede che c'è tanta passione e tanto amore per il cibo

      @@quelodequelo La lasagna napoletana è un piatto tradizionale del carnevale, quindi da mangiare prima del digiuno della quaresima. Questo sicuramete spiega il perché dell'abbondanza di ingredienti. Personalmente concordo con chi la reputa troppo complicata, non solo come pesantezza ma anche come sapori. Della cucina napoletana preferisco i piatti più semplici.

      Io sono di Napoli e poche persone la fanno così ricca. Questa è la tradizionale,ma è davvero davvero pesante , veramente si può mangiare solo dopo un digiuno prolungato. Comunque molti levano sia la salsiccia, il salame e l uovo e lasciano solo le polpettine come carne

      That might sound blasphemous, but it seemed like too much filling for me. It was just too much going on. I prefer the simplicity of the lasagna bolognese.

      @@M.C.P. I do believe that. What I meant though was not just the amount of filling, but the variety of it - the ragu, the meatballs, the ricotta, the sausage, the egg, the salami... The Bolognese lasagna has just four components - ragu, bechamel, pasta and cheese - and they all are radically different, combining into an amazing dish of contrasts and harmony. (And I realize that all those ingredients are themselves made from a lot of other stuff (especially the ragu), but they combine into a separate entity each in my mind.) The Neapolitan lasagna on the other hand just seemed like a mess of things that don't really go together, and you have like five different meats, and two chesses, and the egg? Though honestly, I would have to actually try it to judge it fairly, I only ever eaten the Bolognese one.

    La lasagna napoletana è un piatto tipico di Carnevale , è un saluto al cibo prima della Quaresima ( questo spiega perché così abbondante)...al giorno d'oggi però in pochissimi seguono la tradizione e la cucinano solo con ragù polpettine e ricotta

      @Haola Horam per me è l'opposto, la napoletana è una pasta con tante cose buone, non spicca niente in particolare e il sapore del salame, dell'uovo sodo, della salsiccia rimangono i medesimi ma l'emiliana è un perfetto connubio di pochi ingredienti che crea un sapore unico che i singoli ingredienti da soli non hanno.

    Tanti anni fa insegnava alla scuola di bagnoli , il prof sorrentino lo ricordo con piacere , molto molto sottovalutato perché non è scenico ma è un grande cuoco. Oltre ad essere un ottimo insegnante

      Non mi sembra ci sia molta differenza tra le due, è una cosa ottica, in quella bolognese: pancetta e cicciotti rispetto a polpette e salsiccia, l'uovo è nella pasta fresca ed usa la besciamella rispetto all'altra dove c'è ricotta e provola, poi sta alla mano del cuoco.

    A Neapolitan friend told me that Neapolitan lasagna is so rich in ingredients because in Naples it was used to make it at Carnival. Basically a celebration before starting the quarantine (40 days before Easter).

    I'm from the North, Trieste, and my mother added boiled eggs and chopped salami to her lasagna. My Calabrese mother-in-law made a plain lasagna with just enough sauce and cheese. Both were excellent cooks and both produced amazing lasagna.

      Quella emiliana è più sdoganata (anche per la minore difficoltà nella preparazione), ma la prima ricetta "moderna" della lasagna sta, appunto, nel Liber de Coquina della Napoli Angioina.

      Si possono evitare tranquillamente la salsiccia, il salame e l'uovo sodo. In questo modo, i sapori sono meno sovrabbondanti e nel piatto prevale la cremosità e si riduce il colesterolo non essenziale. Io la faccio così ed è ottima.

    I feel that, outside of Italy, Neapolitan lasagne is harder to replicate as it has a greater number of regional ingredients (sausage, salami, etc)

    As a Canadian I prefer the southern lasagna. My wife from Milan prefers the northern lasagna. I said we should negotiate on which one we should make... we negotiated so we’re having a northern lasagna.

      southern version is even too rich, what I mean is that when you have so many ingredients, none of them stand out. In a way you could make maccheroni with the same sauce and ingredients of the lasagna and it would be the same dish more or less. With the bolognese lasagna tough you have few flavors that combine together to create a new flavor that couldnt' exist otherwise. You cannnot make a pasta with ragù, white sauce and parmesan and expect it to have a similar taste to the lasagna. In fact the bolognese one is meant as a dish for the sundays but the southern one was just meant to be eaten once a year during the easter celebration which is why it's so rich with some many ingredients, it wasn't meant as an everyday dish and the richness matchs perfectly the religious celebration context.

    Io preferisco la lasagna de mia nonna. Non so si la sua lasagna era fata come si fa a Calabria (lei era nata a gli Stati Uniti), ma era fata o senza carne, o con la carne nel ragù, ma non nella lasagna (con la carne servita separatamente. Una delizia. In America, la lasagna ‘e fata comunemente con la carne di manzo in ragù solamente dento de la lasagna, con la bechamela, e senza ricotta y il impasto con spinaci. Io la cucino come mia nonna, condita delicatamente. Non come mia mama, che l’avrebbe fatta con molto basilico e oregano secchi (Blah). Saluti dall’a America. Scusa il mio povero italiano : )

    I don't know it's a toss-up. The Neapolitan lasagna looks more rustic and hearty whereas The Bolognese lasagna looks a little more refinedand isn't drowning in sauce allowing the pasta and the overall flavors to shine through. Thumbs up on both 😋👍👍 they look delicious.

      He use durum wheat flour pasta, napolitan ragu(that he shared the recipe too in description), meatball napolitan style, provola cheese from agerola, sausages, ricotta cheese, basil, boiled eggs, pecorino cheese and salame napoli.

    Da Modenese espatriata e amante della cucina italiana, posso dire che le prime sono proprio come quelle che faccio io! La ricetta è perfetta ed è l'originale! Insomma, da emiliana, sottoscrivo tutto!
    Io semplifico un po' le carni (due tipi, compreso il maiale, e niente pancetta) e non uso il mattarello, inoltre faccio riposare l'impasto mezz'ora e non dieci minuti, altrimenti è più difficile da stendere; forse metto anche un po' più di ragù quando preparo gli strati, ma è meglio farle cosi, in modo da ottere una porzione più stabile e bella da servire. Per il resto, tutto uguale.
    Se vi piacciono le lasagne, queste sono davvero buonissime!

      Priscilla Crossbreed bolognese is better known around the world but southern lasagna has a longer tradition.
