      Not a vegetarian myself, and I was pretty sure that he'll add meat in some manner. But the fact that he went green all the way makes the entire recipe more clean.
      This has to be among the greatest vegetable soups ever.

    So wonderful to hear the accent of home, and to see the elevation of our minestrone through the use of roasted vegetables. The obsessive attention to detail is a rather common Ligurian trait, so that doesn't surprise me. I make a version of this myself, although I don't add eggplant and radish because I don't like them, and I will admit I don't saute so many of the vegetables separately.

    Note to self:
    Soak borlotti/canellini day before
    Cook beans
    Med heat
    Fine dice/fry:
    Onion, celery, white/red spring onion
    Low heat
    Fine dice/fry eggplant
    Dice/fry individually:
    Carrot, zucchini, trombetta, flat beans, asparagus (keep tips)
    Add stock to eggplant
    Add all but eggplant to pot, mix together then heat off
    Fry then add broccoli/cauliflower
    Mash eggplant
    Add:
    Peas, potatoes diced/halves, green beans chopped, radish sliced
    Cover with broth
    Add:
    Spinach, eggplant, cooked beans, thin sliced cabbage.
    Cook low 75 minutes
    Make pesto
    Mill potato
    Add ditallini
    Serve with water down pesto and asparagus tips

    Mamma mia, quando ho visto lo chef aggiungere le verdure essiccate al minestrone mi sono quasi commossa... A vederlo così sembrano boccioli che spuntano dal terreno, che bellezza 😭🌿 Un vero omaggio al mondo vegetale locale e alla stagionalità 🥺

      in una ricetta che mescola asparagi, melanzane, cavolfiore, broccoli, barbabietola rossa (non rapa rossa!) la stagionalità non esiste... non esiste affatto...

    I worked at a place that people love the minestrone soup and all of the persons soups. The reason our soups tasted so good they often use leftovers from the day before . This benefits the customers they get a great tasting soup and the restaurant makes more profits on what would be waste.

    Queste sono le grandi nevrosi degli chef, questi fuoriusciti da ogni tradizione, che reinventano i piatti della stessa perché immaginano di fare meglio, ma nelle famiglie le verdure erano tutte nella pentola, gli chef hanno tempo da perdere che poi faranno pagare caro al cliente, ma sulla necessità della famiglia si è sviluppata la tradizione, non sulla distruzione di essa!

      Sono abbastanza poco d'accordo.. però và bene, è normale pensarla in modo diverso. Però c'è una cosa su cui bisogna essere chiari. Il tempo che il cuoco usa per fare la sua preparazione non è "tempo da perdere" perchè una preparazione di questo tipo è un'ammazzata e si chiama "lavoro". Poi a ognuno può piacere oppure no e decidere se dargli i soldi oppure no. Ma si chiama "lavoro" e non solo manuale, pure di testa e organizzazione perchè io (e penso tanti altri) uscirei matto a dover fare 20 verdure ognuna con la sua preparazione e i suoi tempi. Poi, boh, a parte separare le preparazioni e fare le verdure al forno croccanti non ha fatto niente di strano, è un piatto che a me dà impressione di enorme rispetto per la tradizione, anche se non è tradizione casalinga, certo... ma se voglio il minestrone casalingo me lo faccio a casa.

    Ho già commentato questa preparazione.
    Qui, aggiungo una nota sul protagonista del video: mi turba vedere un Cuoco ai fornelli, senza un copricapo e altri presidî, consoni all'Uniforme professionale. Chi cucina per gli altri, anche se vuole chiamarsi "Chef", mai dovrebbe presentarsi in cucina con il ciuffo e altri eventuali pelami, liberi di svolazzare qui e là, né con gli abiti che indossa nel quotidiano, quindi carichi di polveri, batteri, tracce di umori corporali ... è una questione di serietà e di eleganza.
    Anche se gli Chef vanno di moda e, a volte, presumono di essere grandi Intrattenitori, devono rispettare le regole del loro mestiere: finché intrattengono il pubblico, si presentino nella tenuta che preferiscono ma ai fornelli, tornino affidabili e professionali Cuochi.

    Buongiorno, piatto molto attraente che spero di riuscire a riprodurre a casa. Ma mi domando, perché quelle cotture separate con l'obiettivo di lasciare le singole verdure croccanti quando poi lo si è cotto per più di una ora e si vede chiaramente che le verdure sono cremose e stracotte.

      Quel procedimento permette alle verdure di mantenere il proprio sapore e quindi di non andare a creare un sapore unico in bocca

      Infatti ha poco senso di cuocere separatamente, perché deve finire tutto nel brodo. In ogni caso tutti qui identificano il minestrone con la minestrina che è un altra preparazione.

      It's not a STEW; it's a thick SOUP or MINESTRONE called by the French POTAGE. It's not the watery, tasteless mess served up as minestrone in restaurants in foreign countries. I ate this and the fall and winter versions my whole life, but I've given up ordering minestrone in so called "Italian" restaurants. The Tuscan version with bread is also delicious.

      @@pliny8308 good sir, where do you draw the line between a stew(/ragout) and a soup?
      personally, if it sits as a pile by itself on a plate, I'd say "stew". if it is, however, rather liquid, like, say, a soup, I'd say "soup".
      (*edit* there's hundreds of different variations of minestrone. every nonna has her own only true recipe. going mental on this one sponsored I.S. video makes no sense. tbh, I don't think they'd even made it were it not for the money.)
