      You're right... it's totally crazy in the whole meaning of the word.
      Crazy = no point - useless - or I'd rather say, NONSENSE.
      I do think, some chefs must go "back with their feet on the ground", typical expression I heard around right there !

    In a series that never fails to make me hungry (...), sometimes one encounters a trsnscendent moment. Your presentation on rösti is just such a show. Your reinvention of the dish is truly impressive -- this despite a general aversion to caviar and other fish eggs. Kudos.

    Abito al confine con i Grigioni quindi conosco i rösti molto bene, mangiati in diversi posti e li ho fatti tante volte sperimentando le varie scuole di pensiero e la versione che faccio adesso e' MOLTO simile a quella tradizionale di questo video. L'unica cosa e' che uso una padella di ferro (piu' precisamente acciaio al carbonio) e con essa la crosticina viene molto meglio, piu' omogenea e su tutta la superfice.
    A molti ho visto usare lo strutto per cuocerli invece del burro chiarificato oppure un mix di strutto e grasso d'oca (che ci sta alla grande), e poi aggiunta di burro sul finale di cottura.
    La versione Gourmet comunque e' spettacolare cosi' come i coltelli Berkel, bellissimi.

    I have spent many years cooking professionally and certainly I enjoyed challenging myself and making more complicated dishes, but I have learned that what I really enjoy is the simpler recipes not because they are simple but because usually they just seem to simply taste better.

      I think I saw a quote from Marco that said something along the lines of "young chefs tend to overembellish and focus on presentation and refinement to hide their mistakes. As you grow as a chef and gain more experience, you tend to appreciate simple dishes more because you can simply let the food speak for itself, in all of its natural beauty." Executed simply but flawlessly. ❤️

      @@michaelwyatt8946 Something else worth mentioning is that Many years ago I discovered Dutch ovens and I highly recommend getting one for anyone who is not familiar with it. Learning how to cook with a Dutch oven is a wonderful experience.

    My goodness, how lovely!!! I mean, many wolf say that you cannot mess with a good rosti with some herbs and some sour cream, and I understand that as in its traditional version it’s delicious! I make it myself for lunch sometimes! But as can be seen, he’s not messing with it, so to say, but merely presenting it in a more beautiful way and adding a vivid dressing and some caviar to dress it up a little. He’s keeping tradition in mind, and spicing it up a little rather than distracting from it and creating something that, no matter how tasty, has little resemblance to the traditional version of whatever dish he is cooking. This is elegant yet delicious and while many would say that potatoes are not worthy of 2 Stars or a high price to match, I know that I would pay it happily!!! Alla mia amata Italia Squisita, grazie mille!!!

      @@silvermediastudio It’s more than that. It’s a delicious and new interpretation of a classic dish that keeps the integrity of the original. So often we see new “interpretations” leaving us craving the original, but this keeps all of the hallmarks of the original dish, the butter and potatoes and crème fraiche, but just lightens it nicely with a vinaigrette and some caviar. And anyways, what’s it to you if I like the dish? Are my compliments somehow a critique to you? I don’t recall addressing you specifically in my comment.

    My all time favourite is Rösti topped with sliced tomatoes and mozarella :3 the citrusy-savory approach of the second one is a combination I have never heard before, I definitely want to try something in that style next time when I cook Rösti!

    An aha! moment. I microwaved my potatoes rather than boiling them. Reduced the water nicely. MUCH better than squeezing in a towel. My rösti really improved.

    Bravissimo lo chef e sopratutto molto umile come persona (i grandi sono cosi). Nn me ne voglia ma io mi divorerei la prima versione con aggiunta anche di tante cipolle con kefir ad accompagno. E aneto. Oppure opterei per una versione vegana con un frutto acido per equilibrare l'amidoso delle patate. E' la prima volta (putroppo per me ) che incrocio questo Chef e mi piace moltissimo.

    Interesting. St. Moritz, Rösti with sour cream caviar and a sprinkling of acidity and flavor... Not bad. Fits the Russians guests rather well. Good thinking.
    I much prefer the farmers version. Roasted to a crisp, drenched in butter in cast iron with a good amount of bacon and a fried egg on top. heart attack comes free as a side later in life.
