    This eggless keto bread recipe uses mainly almond flour plus some coconut flour and flax meal. You will notice that the amount of boiling water seems to be quite a lot, but it is essential as the water helps to activate the glue in the psyllium husk powder, coconut flour is very absorbent hence need more liquid and flax meal needs water to act as a binder. So do not try to reduce the water or replace any of the flours as it won't work. The baking soda helps to make the bread softer but if you do not like the taste of it, then you can leave it out. The dough is rather dry compared to the ones with eggs as eggs does add moisture. As a result, it's hard to mix the dough with a spatula hence, we need to use our hands to knead the dough for 1 to 2 mins. This also helps to create more air so there will be more holes in the crumbs. Remember not to flatten the round top as it will result in a denser texture with no holes in the crumbs. I was pleasantly surprised that this vegan bread tastes as good as the ones with eggs, if not better. It has a golden crispy crust with soft centers, and they are crunchy when toasted. It's definitely a keeper for me!

Psyllium husk powder gives the best result for most keto bread, acting as the "glue" to replace gluten. It has no carbs and adds fiber to our diet which keeps us full and benefits constipation, diarrhea, blood sugar, blood pressure, cholesterol and weight loss. Please remember to grind the psyllium husk until it becomes fine or powdery for best results.

    NUTRITION FACTS PER SERVING
    Total carb = 6.4 g
    Dietary fiber = 4.5 g
    Net Carb = 1.9 g
    Calories = 118
    Total Fat = 9.6 g
    Protein = 3.3 g
    DRY INGREDIENTS
    Almond flour = 300 g (2 1/2 cups)
    Coconut flour = 60 g (1/2 cup)
    Flaxseed meal = 40 g (1/3 cup)
    Whole Psyllium husk (Ground until half its original volume) = 45 g (5 tbsp) (UPDATED)
    Baking powder = 14 g (1 tbsp)
    Baking soda = 8 g (2 tsp) (Optional)
    Salt = 1 1/2 tsp
    WET INGREDIENTS
    Olive oil = 45 ml (3 tbsp) (UPDATED)
    Apple cider vinegar = 45 ml (3 tbsp) (UPDATED)
    Boiling water - 480 ml (2 cups)
    DIRECTIONS
    1. Preheat the oven to 350 F or 180 C.
    2. Mix all the dry ingredients in a bowl with a spatula until well combined.
    3. Add the wet ingredients and mix until it becomes a dough. Knead the dough with hands for about 1 to 2 minutes. Set aside to rest for about 10 mins.
    4. Mould dough into a loaf. It is best to have a round top so that the loaf is lighter with holes in the crumb. Do not flatten the top as the bread will be denser without holes in crumb.
    5. Place dough in an 8" x 4" loaf pan with parchment paper. If there are holes on the top, just smoothen them gently with wet hands.
    6. Sprinkle with sesame seed or any seeds of your preference.
    7. Bake at the lowest rack for 60 to 80 minutes until a wooden skewer comes out clean. Also, the top of the bread should be hard and crusty. Remove loaf from pan, place on a sheet pan with the parchment paper and let it sit in the oven for 30 to 40 mins with heat turned off. This helps to ensure the bread is properly cooked and crumbs are drier.
    8. Let it cool completely before slicing them into thin slices. You can store at room temperature for a few days covered with a towel. You can also wrap them in parchment paper to avoid moisture and refrigerate for about 2 to 3 weeks or freeze for months.

    Found this after searching for almost an entire day! Phew! And am so excited that I found this. Just made and sliced it just now...and am extremely pleased at the result! It does have a flavour from the flax meal and almond meal (I didn't have flour), but closest to bread one can dream of in keto lol. Thank you so so much for this wonderful and easy eggless keto bread recipe. I will be making this many more times.
    Recipe notes for anyone who might be interested:
    I halved the recipe because didn't want to waste more products in case it bombed lol. I measured everything in grams after halving all the ingredients. Baked it in my normal 8x5 bread pan, just made a partition with foil because the dough came up to 2/3rd of the pan. It took 55 minutes. Weighs almost a pound after cooled down. Sliced to 12 thin slices. Yummy with butter. Will try to make french toast with this and update.
    Oh and I used unblanched almond meal because that's what I had. It turned out exactly as in the video, just a bit darker in color.
    Edit: tastes awesome as french toast. Go on make it. You won't regret.

    Your recipe is AMAZING! I love it that you use proper measurements in ml and grams . It is necessary for a great result. I have also tried other recipes using flax seed only and after baking it for an hour it turned out as a disaster and still raw in the middle. ( that one was using only cup as a measurement…)

    I think I'll use Golden Flaxseed Meal instead. The bread won't be so dark then. I wish there was something other than almond flour though.

    Mine failed... the result came out so wet..
    I substituted the husk powder with 1/2 amount of xanthan gum, and I used flaxseed powder instead of flaxseed meal, I guess that makes the dough too wet? How would you suggest me adjust the water in this case? Should I bake it for longer for now:( ? Thank you.

      Hi, yes you can use your coffee bean grinder to grind the whole flaxseeds or you can buy pre grounded flaxseed meal. If you grind it yourself, you grind until a powdery texture so the bread will be less dense. Using flaxseed meal (which is coarser) is fine except that the bread will be denser.

    Hello, can you tell me if it is necessary to use apple cider vinegar or can it be omitted? I did read your commentary that it is an acidic activator for baking powder. But, is it necessary?

      It wd be good to include. You can replace with white vinegar too. But if you omit it i don't think it would be fatal.

    Hi I'm confused... So I tried this almond flour bread recipe you posted but I want to make sure about the psyllium husk... I got the Now brand of husks and blended them to half volume like you said in the other video but bread was still a lil wet at the bottom. I put 5 tbs of the psyllium that I finely grounded. Am I supposed to put less? I saw 2.5 tbs on some of your other breads. So for this bread is it 5 or 2.5 tbs? I wanted to come out airy and fluffy. Also, should I decrease some of the flax meal or water either to make it less wet? Thank you!

      Did you use whole psyllium husks and grind until half its original volume, not more or less? There's a big difference between whole psyllium husks and powder. Yes for newer recipes, I have reduced the amount of psyllium husk so that the bread will be less dense. But this recipe still works. Keto bread is quite complicated and any change in the ingredients must be experimented on first to know whether it will work or not..Also for eggless bread, the texture will be denser as there is not much protein content causing a lack of rise.

      From your description, we should use about 2.5 tablespoons of preground psyllium. I measured my psyllium husk powder (comes as a powder) it took 7 tablespoons to make 45 grams! Shouldn't the powdered version be way less? Do you have any idea why?

    Hi, Thanks for the recipe. Just followed it .. as is. The outer slices cooked well, and have no smell. The inner slices (broader-center loaf part) have a strange musty smell. I tried re-toasting in the oven, the broader slices, but the smell persists. What is it because of... psyllium, flaxseed meal or baking powder/soda? How can I rectify this now? and improve on it for my next batch (This is my first time trying psyllium husk and flaxseed meal). TIA

    Great recipe! I baked this bread many times and its very tasty and filling.
    I recommend varying the flavors of the bread by adding - walnuts, olives, sunflower seeds, caraway or whatever you like.
    After the bread cools - I slice and freeze. It is very tasty as toast.

      Unfortunately you can't replace the ingredients as keto bread is quite complicated. Eggless keto bread is even more complicated and requires lots of experiments

      Psyllium husk powder is the best replacement for gluten so i highly recommend it. But if you must replace it for some reason you can try xanthan gum, ground chia or flaxseeds but i am not sure whether it will turn out exactly the same

    Hi dear, in your previous videos you suggested to use half of baking powder if one has double acting; may I ask why we cannot use it for this bread? Will be okay tu use yeast instead ? Thanks so much for your advice and great recipes 😁

      Hi, the reason I requested to reduce amount by half if using double acting baking powder is because I received feedbacks that some people who used double acting baking powder the bread rises rapidly then collapse later and the inside is uncooked. You can try adding yeast but I am not sure whether it will rise well. Not all keto bread works the same as different low carb flours behaves differently.

    Thanks for directing me to this one. I note that the bread is darker compared to the recipe with the yeast. Why is that? In the yeast recipe, it says "golden flaxmeal" but in this one, it doesn't specify golden. Is this why it's darker?

      Did you grind the psyllium husk into finer powder until half its original volume? This is important as it will absorb the water more effectively.       Yes boiling water or hot also fine as the psyllium husk powder will absorb the water more effectively. Remember to grind the psyllium husk into finer powder until half its original volume before using. Flaxseed meal is fine but if you grind it the bread will be less dense.

      Just rest the dough for 10 mins then bake. It will rise during baking but not a lot. The baking soda will help it to rise more if using.

    Help!! I can't figure out why my bread did what it did. I just finished making it. In the oven it rose up so very nice. It smelled good too. I had a huge loaf. The only thing I did different was because I only had 2 1/8 cup of almond flour left, I put a small amount of whey protein in there, just to fill the gap. I didn't want to add more coconut flour or it would have been too dense. I didn't want more flax meal because it would have been too grainy. Anyway, I took it out of the oven to remove from the pan to put it on the cookie sheet and it fell! I mean it deflated!!! I put it in the oven with the heat off anyway just to see if it has any taste to it. The round top part is still there but the base just collapsed. I baked it for 80 minutes. The skewer was very very clean except for the very tip, it was just barely gummy on the tip. I figured that would dry up as it sat. I really want to try this bread. Gonna go get more almond flour. But this should not have happened.

      So sorry to hear that ! There are 3 things that may have caused this problem based on my experience with feedbacks from followers;
      1. Double acting baking powder
      2. Double acting baking soda
      3. Psyllium husk is not grinded to finer powder (see description box of another video titled HOW TO TURN PROBLEMATIC KETO BREAD INTO THE BEST KETO BREAD)
      Double acting baking powder and soda caused the bread to rise tremendously then collapsed after coming out of oven. Sometimes it may not be stated as double acting on packaging but turns out it is after using them. I personally experienced the double acting baking soda which was not stated on packaging but as "pure baking soda". I used it on my buns and tgey ballooned until so huge and looked like they're going to explode then collapsed when out of oven. I switched back to my regular brand and no problem at all.
      A few if my followers had same problem with you. After they sent me pictures of their ingredients i noticed they used double acting baking powder without realizing it.
      Generally, keto bread would not rise very much due to the heavy, moist ingredients and no gluten. When the bread is suucessful the top sd be hard and crusty. If it feels soft then something is wrong. Hope this helps

      Oh dear Lord, I made another loaf. It didn't rise up like the other one so I thought it was probably the whey protein powder. Lo and behold, it deflated somewhat too. When I cut into that one, the bottom half was very gummy, not edible. I just checked and my baking powder is double acting and I got it because it didn't have aluminum and I have been using it in all my other Keto baking recipes with no problem. All the others in the store had aluminum. I will go back to my regular one. The baking soda is one that I have used in all my baking and it is pure baking soda. My psyllium is actually called psyllium fiber powder and it is definitely powder form. When I looked at the ingredients it is psyllium husk powder. So there is nothing wrong with that. It is so fine it's like baby powder. I just ruined 2 loaves of bread AND I wasted very expensive ingredients. I can't try it again, I just can't. Maybe this should be mentioned in the recipe.

    Did you remove the vegan recipe with yeast? I've made it three times now, twice with oat fiber (0 carb) and it turned out fine, I just need to be carefull with water as it needs more water with oat. Just wanted to say that the measurments with gm and spoons where not the same, and wanted to ask what you use (metric or imperial) but I see that you corrected on this recipe.

      My measurements are all based on grams. Then I just Google to convert to US cups or spoons. You're right that not all cups and spoons are the same. That's why I highly recommend to weigh the ingredients for accuracy and best results

      Baking soda does help the bread to rise better but since some people do not like the taste of it so you can choose to omit it

      Self Ground psyllium husk. If using psyllium powder, you probably need only 1 to 2 tsp

      I am not sure about that . I have tried adding ground chia seeds to keto bread and it made the bread super dense.
