    Psyllium husk is the best natural replacement for gluten, but I know that some of you experienced stomach discomfort with it while some of you faced difficulty obtaining it in your specific countries. Hence, I am introducing this keto bread which has no psyllium husks, xanthan gum or even yeast, yet it rises so well. It is white in color, so I named it Keto Almond White Bread. Of course, the texture is a little cake-like and crumbly, but it makes a great alternative if you are looking for a keto bread without psyllium husk or xanthan gum.
    The key ingredient is the egg whites which makes the bread looks white and the protein from egg whites helps to boost the rise. When part of the egg whites is whipped to stiff peaks, the meringue helps to provide the volume and rise as well. If you use egg yolks, the bread will not rise as much, tastes very eggy and the color will be yellowish. Alternatively, you could use egg whites from cartons too.
    After baking, you can feel how light and soft the whole loaf is. You can eat it on its own, top with your favorite spread or make sandwiches with it. When toasted, the crust is crispy, and the crumb is tender.

    NUTRITION INFO PER SERVING
    Total Carb = 2.1 g
    Dietary Fiber = 1.0 g
    Net Carb = 1.1 g
    Calories = 104
    Total Fat = 8.7 g

    INGREDIENTS FOR THE BATTER
    Almond Flour = 240 g / 2 cups
    Baking Powder = 16 g / 4 tsp
    Apple Cider Vinegar = 15 ml / 1 tbsp (Note: This is optional. Apple cider vinegar helps to mask any eggy taste and gives a nice yeasty flavor)
    Coconut Oil = 80 ml / 1/3 cup (Note: You can also use olive oil or melted butter)
    Salt = 2 g / 1/2 tsp
    Egg Whites (room temperature) = 6 large (215 g)
    (Note: You can replace the fresh egg whites with the following;
    1. Egg whites from cartons (215 g)
    2. 38 g of egg white powder + 210 ml room temperature water)
    INGREDIENTS FOR THE MERINGUE
    Egg Whites (room temperature) = 6 large (215 g)
    (Note: You can replace the fresh egg whites with the following;
    1. Egg whites from cartons (215 g)
    2. 38 g of egg white powder + 210 ml room temperature water)
    Cream of tartar (helps to stabilize the meringue) = 1/2 tsp (optional)
    NOTE:
    Total large egg whites = 12
    DIRECTIONS
    1. Preheat the oven at 350F or 180C.
    2. In a bowl, add the flour, baking powder, salt and mix until well combined.
    3. Add the apple cider vinegar (if using), coconut oil, egg whites and mix until a thick batter is formed. Set aside.
    4. In a separate bowl, make the meringue. Add the egg whites and beat with a handheld mixer at high speed until stiff peaks. It only takes about 1 minute.
    5. Fold the meringue into the batter. Add 1/3 first and fold gently to combine. Do not mix. The fold method is like scooping up the batter from the bottom. If you simply mix the meringue into the batter, it will affect the rise. Then add another 1/3 of the meringue and fold to combine. Lastly, add the balance of the meringue and fold to combine. The batter is thick and smooth.
    6. Pour the batter into an 8 x 4.5 x 4.5-inch loaf pan lined with parchment paper. With a higher pan, the bread will look taller. You can use a standard 8 x 4-inch loaf pan except that the height of the bread will be shorter, and the top will bloom sideways so it will end up looking like a bloomed flower or a mushroom top.
    7. Bake at the lowest rack for 50 minutes or until cooked.
    8. Cool completely on a wire rack before slicing.
    9. The bread is a little cake-like and crumbly but still firm. It is light and soft. You can eat it on its own, top with your favorite spread or make sandwiches. When toasted, the crust is crispy, and the crumb is tender.

    Thank you very much for your GF & yeast free bread videos! I make your coconut flour bread and sunflower seed flour buns regularly for my hubby. Will try this one when he finishes the coconut flour bread.
    He has no problem with psyllium husk, but it is nice to have another alternative. Anyway psyllium husk is not exactly cheap in Singapore.

Some grocery stores sell just egg whites, but I have never used them. I really don’t eat bread, but my husband does. Just some thoughts for a tastier product. 💙

    I have tried 2 nd time with this recipe as I like the use the minimal amount of ingredients and I love how it’s got the look of a white bread and I so much enjoy - except that it’s too salty for me. I’d added 2g of erythritol to give some sweetness although I don’t like erythritol.     Always looking for bread recipes without psyllium husk and gums - THANK YOU !! Btw, I use some of the yolks to make chocolate milk (non-keto) on stove top, then chill. Chocolate milk from store has carrageenan which I avoid.

    I really appreciate the work you put into making these recipes and that you try them with all different flours for us. I am wondering if you have ever experimented with wheat gluten. I have tried some keto yeast bread recipes that use this gluten flour (oat fiber and lupin flour) and it was very much like regular bread. I am wondering if you would experiment with it to see how it can play the role of gluten in keto baking. I imagine it would be available in Malaysia since it is used to make seitan.

      All my recipes are free of grain, gluten, wheat and sugar so that's why you do not see me using vital wheat gluten.

    I love your bread! for so long I struggled with Keto bread taste - too eggy, or texture too soggy, or overall just does not taste like bread.. but I have found flax seed, and that was a game changer for me! plus combination of spices and we now only make that bread.       @@anisrazlan1837 flax seed plays same role as gluten, or psyllium husk - it functions as a thickener, binding agent and texture enhancer. In this video description author explains in details that some people have issues with digesting psyllium or finding it in store in some countries, so there are plenty of alternatives for Keto. One of the options is to use milled flax seed, to help with texture of your bread. You add it along with your dry ingredients, same like in this video, principals and process is very similar. If you want, you can check out recipe on our channel, where I showed few months back how I make my simple Keto bread (I hope author doesn't mind).

    I hoped that I had found what I was looking for. I really wanted to love this bread… but, it IS indeed very eggy smelling and tasting. I thought eliminating the yolks would make it taste less eggy, but I could smell the egginess as it was baking. Well, if you like an eggy smelling and tasting bread, this one’s great! 😊

      Replace lemon juice and add 1/2 tsp lemon zest will help to remove eggy tasting.

    I finished making this bread now. Yes I added 6 egg whites with the almond flour and the other ingredients and then I webbed 6 more egg whites and added them again. (Used egg whites from a carton jar. I used the scale to Weigh 215gm for each 6 egg whites x2 ) Total 12 egg whites. I also added 1 Tsp (5 gm) xanthan gum. It turned out excellent. I’m very pleased with the recipe. Hope all you have good luck

As explained in the description box, without psyllium husk, it will be slightly more cake-like and crumbly but still firm enough and makes a great alternative if you're looking for a keto bread without psyllium husk, xanthan gum or gluten.

I am wondering if when I place the loaf in the oven is it the lowest rack near the heat source or away from the heat source? My oven when baking has the heat source at the bottom. Thank you again. 😊

      Its the lowest rack at the bottom as we're using the heat from the bottom. For cookies and cakes, we will usually use the middle rack.

      Most nut flours have 1:1 ratio so you can replace with the same amount

    Thank you for this recipe. I am new to Keto. I live in Switzerland and Almond flower is very expensive here. 1 Kilogram is about $30. I see so many recipes with Almond flowers on TH-cam. Is it so cheap in the US?

      I hear you that's why I use a lot of alternative low carb flours that are cheaper and healthier such as coconut flour, flaxseeds, sesame seeds, sunflower seeds, pumpkin seeds etc. I live in Kuala Lumpur Malaysia and almond flour is not cheap too but majority of people still prefer almond flour. For this recipe I have other variations using coconut flour, almond and coconut flour as well as flaxseeds so you can check out the playlist. I have over 70 videos on Keto Bread alone 😊

      If you look at the video and written recipe, it's clearly shown that I added 6 egg whites into the batter. Then I used another 6 egg whites to beat into stiff peaks for the meringue. So it's total 12 egg whites.

      When you make the meringue, did you find the volume increased significantly? If yes, then after you fold the meringue into the batter, the volume will also increase significantly. If not, then something is wrong with the egg white meringue. As there's no leavening agents used in this recipe, it's the egg white meringue that makes the bread rise. But the bread will usually end up as high as the batter or slightly higher.

    Can i Just add eggyolkes? Why throw away 12 egg yolkes. The glycemic index rises when you extract the yolk. Its basicaly Just fat so in can be included instead of sobe coconut oil

      If you're adding yeast for flavor, it's fine. As this bread rises quite well with the meringue, I think it may over expand if you add yeast and proof it. The recipe does provide for cream of tartar for the meringue.

      Yes you can freeze the bread for up to 3 months. It's best to wrap them individually before freezing. There's so many ways to use the leftover yolks;
      Low Carb fried rice
      Lemon curd, lemon tart, flan
      Salad dressings
      Mayonnaise
      Ice cream
      Scrambled eggs
      Pasta sauce
      ... and many more

      You can use the manual hand whisk but it will take longer to whisk the egg eggs until stiff peaks.

      Using almond meal will make the bread denser. You can grind it until finer texture before using

      Hi Grace, ground almonds is coarser more like almond meal. Almond flour is much finer and powdery

      Around the keto internet usually recipes call for1/4 of the normal flour, not sure if one would need to add any extra moisture though, maybe the egg whites will be enough.

    hmm.. regarding the coconut yeast bread and the baking powder in another video, were you using double acting then as well?

      Actually all along my baking powder is single acting. But I received feedbacks that some people used the same amount with double acting baking powder and their bread rose rapidly but collapse later and inside is uncooked. That's why I suggested to reduce the amount by half if you're using double acting ones. But if you have no problem with it then you dont have change anything
