    After many experiments, I managed to develop a vegan version of this Keto Coconut Flaxseed Bread. I know many of you are enjoying the updated recipe of the non-vegan version so this would be another option for you. It's eggless, dairy free and nut free so practically everyone can enjoy it.
    The challenge was in getting the right amount of flours, psyllium husk and water. As coconut flour is very absorbent, it needs more eggs and liquid. Since there's no eggs in this recipe, flaxseed meal and water acts as replacement. Psyllium husk powder also need water to activate its glue property. So, the biggest challenge was trying to get the right amount of water to suit all the ingredients. This was so tricky that even a little bit more water makes the bread wet and dense at the bottom. After many trials and errors, I finally found the right formula and have made it a few times to ensure consistency. I have also made a keto vegan pumpkin spice bread successfully using this recipe which I will be sharing next Monday.
    The dough is a lot dryer compared to the vegan version using almond flour (see video) so you need to knead it with your hands for 1 to 2 minutes to ensure the ingredients are well incorporated. Because the dough is quite dry, trying to shape it is a bit tricky so it will end up looking very rustic haha... Even though it may not look perfect before and after baking but the inside turns out just right. Overall, it's a good alternative for a vegan and nut free option with only 1 g net carb per serving.

    NUTRITION INFO PER SERVING
    Total carb = 4.5 g
    Dietary fiber = 4.0 g
    Net Carb = 0.5 g
    Calories = 51
    Total Fat = 3.7 g
    Protein = 1.3 g
    DRY INGREDIENTS
    Coconut flour = 120 g (1 cup)
    Flaxseed meal = 80 g (1/2 cup + 4 1/2 tsp)
    Whole Psyllium husk = 45 g (5 tbsp) (Ground until half its original volume then weight it)
    Baking powder = 8 g (2 tsp)
    Baking soda = 8 g (2 tsp) (optional)
    Salt - 1 to 2 tsp
    WET INGREDIENTS
    Olive oil or coconut oil = 30 ml (2 tbsp)
    Apple cider vinegar = 60 ml (1/4 cup)
    Boiling water - 440 ml (2/3 cup + 2 1/2 tbsp)
    DIRECTIONS
    1. Preheat the oven at 350F or 180C.
    2. Mix all dry ingredients in a bowl with a spatula until well combined.
    3. Add all wet ingredients and mix until it becomes a dough.
    4. Knead the dough with your hands for 1 to 2 minutes.
    5. Shape the dough into a loaf with round top. Do not press or flatten the top down as this will make the bread denser and crumb tighter. The round top will make the bread softer and lighter with holes in the crumb. You can wet your hands to gently smoothen any holes on the top.
    6. Sprinkle with sesame seeds or any of your favorite seeds and press down gently.
    7. Rest the dough for 10 mins to let the fiber absorb the water.
    8. Bake at the lowest rack for about 60 to 80 mins until a wooden skewer comes out clean and the top of the bread should feel hard and crusty.
    9. As an option, you can remove the loaf from pan and let it sit on a sheet pan in the oven with the heat turned off for about 20 mins. This will help to dry the inside of the bread. You can also do this with other Keto bread that uses psyllium husk powder.
    10. Let it cool completely then cut into thin slices.
    11. To avoid moisture, wrap them with parchment paper before refrigerating.

    The *Agoge diet* is a much better option than the keto diet. It is well structured, diverse and peronalized. Keto is just unhealthy and very difficult to follow.

    Hi, thanks for this recipe. Can I use double acting baking powder for this recipe? I did quite well a few times but after I changed baking powder it all became very dense and cannot rise up, I can’t think of another reason but the baking powder.

    I didn't want to trust my measurements if I used cups. So, wherever the recipe said gram or ml, I went with these units. I used my kitchen scale and went gram by gram. I did notice that the 120 g (when I put it in the cup) was actually more than a cup (unless I cram it and make it settle), but then I still went with the 120g instead of the cup. I figured the weight was the more accurate measurement. Did the same for all the other ingredients: measured the water to the 10th of a ml. Still, the dough was crumbly, it didn't seem that the water was enough, but the recipe said 440 ml and I thought that they wouldn't say 440 ml if it could be 450 ml (after all, 450 ml is a more "orthodox" number than 440). So, I stuck with the exact measurements in everything. Biggest waste of my coconut flour. The dough is not a dough, it's a collection of pieces that won't stick together because it's too dry. I had found a good recipe by NutritionRefined (and it came well every time). I should have stuck to it and not experiment with this new one.

    Hello dear, thank you for all your recipes! I made 3 different breads and I like the way it comes out. BUT, why my white bread with yeast didn’t rise? (Every step made 100%) and flaxseed eggless bread have a strong “ammonia” smell and not dry as your video! Thank you

      Did you check whether your yeast is active? The ammonia smell could be due to your baking powder so please use those without ammonia. Or it could be that the flaxseed has turned rancid.

    Thanks for sharing generously all your wonderful keto recipes! I just attempted the loaf but the dough was very dry and crumbly, I could barely shaped it together. I measured all the ingredients, and also kneaded the dough for a few mins., which I'm beginning to think perhaps I have overdone it, causing the dryness. What do you think I might have done wrong?       Yes this dough is on the dry side that's why you need to knead it to incorporate the ingredients well. It will look rustic on the outside but after baking the inside looks fine

    I just cut a slice of the bread I just made from this recipe and way too salty. I followed your recipe exactly and put the 2 tsp salt that it called for. I think 2 tsp makes it too salty, next time I'll put only 1 tsp.

    This is the most practical of the Keto bread recipes I have tried, and is relatively inexpensive. I do want to shape it to fit my pan however, so it is true that it ends up very dense. However using the rectangular pan means I can end up with a rectangular flat topped loaf which I can cut in half , then slice lengthways to give eight thin slices.

      Baking soda does help with the rise and softer texture but it does have an unpleasant taste which most people don't Ike. That's why I made it optional

      Did you grind the psyllium husk into finer powder until half its original volume before using? This is important as it will absorb the water more effectively.     I've made this 'bread' twice and I really like it. It's beautiful coming out of the oven, but then it deflates. Is there a way to prevent that from happening?

      Did u use double acting baking powder? If you did you need to reduce quantity by half. Also did you grind the psyllium husk into finer powder until half its original volume before using? This is important as it will absorb the water more effectively.

      @@lowcarbrecipeideas Thank you for the prompt response. I ground the psyllium husk into a fine powder, as fine as fine can be. The container of baking powder has no information on it about 'double acting'. I'll try the recipe again and use half as much baking powder. I'll let you know the results.

      Kneading is just to incorporate the ingredients properly especially if the dough is on the dry side. But it's not fatal if you don't knead it.

    I've tried lots of different keto breads, and this turned out the best. I added a tablespoon of rosemary and some stevia to make it a little sweet, and the flavor was so nice I wanted more! If you like herbed bread, try it.

    Added commen seeds, fresh rosemary flowers 💐 a bit of dry coriander and I did not have the amount of coconut flour so I added more lindseed flour, I had only pomegranate organic vinegar and I added a bit of sesame seeds as I like them a lot and 25 grams inactive yeast and now 1/2 an hour more to see this experiment coming out of the oven inspired by your recipe. Thanks 😊 I also made sesame butter with a bit of organic pomegranate vinegar and lots of garlic… dinner ready as I made a nice cabbage 🥬 salat with hemp dressing.

    What is the size of the loaf pan? Please tell me the OTG setting for baking a bread, do i turn on just the bottom heating elements or both top and bottom elements? Convection mode should be on or off?

      The pan is 8x4 inch. I used top and bottom heat with fan. Bake at the lowest rack.

      Unfortunately you can't replace the ingredients as keto bread is quite complicated and needs a lot of experimentation. Baking soda is optional only.

    Hi I tried this method but the top was hollow and it's more dense at the bottom. I followed exactly as u have stated. May I ask what's the possibility? As it's written baking soda is optional so I didnt put that in. In this case should I still use the apple cider? Coz the apple cider was quite strong the smell.
    I tried watching ur video it says it could be due to too much psyllium husk powder but I used the same. Should I reduce? Or should I knead it more?

      Sorry to hear that ! Did you grind the psyllium husk into finer powder until half its original volume before using? This is important as it will absorb the water more effectively. Or did you use pre grounded ones? If yes, you need to reduce the amount as they're super fine hence very concentrated. Yes you can omit the apple cider vinegar

      @@wendychc1 You can reduce the psyllium husk to 3 tbsp or 27 g. This is an old recipe which I am working on improving it. Meanwhile you can also try the new eggless Coconut Flaxseed buns which are so good

      That usually comes from baking soda which is optional as most people do not like its unpleasant taste. If it comes from baking powder then something is wrong with it.

      lowcarbrecipeideas I think it’s the baking powder as it smells like fish before I use it and I had a batch before and I throughout thinking it’s off but the new batch is the same!! Anyway I’ll try to skip it and see what happens.

    I just noticed that it says flaxseed meal. Is there a difference between flaxseed meal, ground flax seed (cold milled), and home ground flax seed? I keep trying this recipe but it is not working out like in your video.

      Also, I have read through all the other comments and followed through the directions precisely. I grind up my own husk too. My bread keeps coming out damp and dense on the inside and crumbly on the outside making it hard to cut without it falling apart.

      Flaxseed meal is coarser than self ground ones. There are also Flaxseed powder available in certain places. For this bread, you can use either Flaxseed meal or self ground ones.

      Did you use double acting baking powder? If you did you need to reduce amount by half. Otherwise this happens

      Weighing dry ingredients is always the best way to go since measures never come out the same twice. Also, you can pick up a scale for under $20. ;)

    Have just made your coconut flax loaf. Followed your instructions to the letter but my one has turned out heavy and dense. Because it was so moist I put it in the oven a second time. Also I did what you suggested after the first time in the oven of 80 minutes and left it in the oven with it turned off for 20 minutes. Why do you think it is so heavy, it's more like bread pudding.

      Alternatively you can try making them into buns as they cook faster and are lighter and less dense due to the small size

    I tried substituting the phasylium with chia seeds, which I read was reasonable 1 to 1 replacement and the dough wouldn't cook completely in the inside, even after 100-120 minutes, any suggestions on how to make it work without phasylium?

      I have tried with ground chia seeds and the bread is super dense. Even after reducing to a small amount the result is still not good. So it doesn't appear to be a good replacement to me. I have also tried xanthan gum and was disappointed with the result. The best is still self ground psyllium husks as the bread is the closest to the real thing.

      Ground flaxseed means it's finely grounded whereas flaxseed meal is more coarse. Grounded flaxseed makes the bread less dense compared to flaxseed meal.

Also you can rest the bread in the oven after baking with heat turned off for about 40 to 60 mins. The residual heat will ensure the bread is properly cooked and crumbs are drier. But remove the bread from pan first n let it sit on a sheet pan in the oven
