Update: I tried this a second time because I really liked the taste. I had a better product and there was a more airy center and not so dense. I added 1 TBS of Greek yogurt and a little less of the husk powder. I shaped it right away, let it rest for 10 minutes then baked it!! Perfect and so delicious! My favorite bread to date. Thank you.
I did some research and found this out, Just mill your own flour, bread gives us life. You can live on bread alone apart from spiritual, if its milled. They strip the wheatberries of their bran and germ which contains the stuff we need. All these diets cut out the very thing we need. So silly. Milling wheat berries is easy with the many machines they sell even as low as 45 bucks. Just mill it yourself and it'll not only heal you, it is sustainable and you can eat whatever you want. its that easy.
The variety of clean keto food is virtually inexhaustible. I find I am joyously invigorated by eating the food I prepare and this site is one I intend to learn more recipes from. I've been enjoying the keto lifestyle now for years. First discovered the gateway to low carb back in around 2000, that was thanks to Dr. Atkins. Subscribed.
My 2nd loaf is in the oven now. The 1st recipe lasted beautifully in the freezer. I sliced it up & froze in a ziplock & took out a piece at a time. Thanks for the lovely recipe.😊
After finishing off this loaf, I've just gotta say, this is the best tasting bread, Keto or otherwise that I've ever tasted. AND, it was quick & easy to make. Absolutely delicious with olive oil and salt!!
I have been tinkering with this recipe for a week now and find that I can make fantastic rolls or muffins sort of like an English muffin, which makes incredible sandwich rolls for myself and my daughter-in-law. I add Italian seasoning in the dry mixture and bagel seasoning on top, but I also tried making them in a muffin tin like a sweeter muffin. I chop up an apple I add blueberries I add some cinnamon I guess you can add some Truvia or the like or maple syrup or honey or anything you’d like to sweeten it, they are fantastic. I find the cooking time for the muffins about 30 minutes and for the English muffin sandwich thins approximately the same time.

Thank you from France ! As a French woman, I love bread. Especially the one made with whole wheat and well cooked (the crust must be dark and very crispy). At home, we call it country bread ("pain de campagne). It is the bread of our grandparents, the one that our ancestors ate long before the refined flour baguette existed. The flour was better then because it was not very refined and made with ancient wheat which contained less starch. I bake my own bread with my own sourdough. Sometimes I add a little rye to my bread dough. But I'm going to try your recipe which is very appetizing and out of the ordinary. I already have some savory toasts in mind to make with it. @@lowcarbabode Thanks for the video- just a tip from a carpenter who also makes & works with steel & metal stuff etc whenever you cut bread USE A SERRATED KNIFE & use FASTER CUTTING STROKES- then you will cut all breads easily & much straighter very helpful when you want thinner slices!
Don't feel guilty for being human and wanting to eat bread! People in the Blue Zones who live to over 100 do eat bread. Sourdough ancient grain bread is a lot more cost effective, especially for a family and easy to make and nutritious!

I started on a keto diet five months ago. I have made my own keto muffins and waffles from recipes found on other websites and absolutely love them. I have never made any bread before because I thought I would need a machine to do that. But this rustic bread looks so easy to make and it doesn't require a machine! I will definitely give it a try!

My second loaf is in the oven now. Instead of the caraway seeds the first time, I now dressed it with black sesame seeds. The taste is great and on my recent keto diet, this really does a superb job replacing my used to whole wheat bread. I love the crust and the sturdiness but moreover the taste. Incredible. I just pulled my first loaf out of the oven - it's delicious! The best part about it was the wonderful smell of bread baking - couldn't wait to take it out and slice it up, warm and wonderful spread with butter. This will definitely be in my regular rotation - hubby loves it too and he's a very reluctant someone who really needs keto! Thank you for this and your delicious rolls too.
Just made this for the first time. I had no ricotta cheese so blended the same amount of cottage cheese as a replacement. Also had no coconut flour so added 1/2 cup additional almond flour to make up the difference. Threw in a couple TBSP ground flax and chia seeds… Your recipe is hands down the best most similar to a wholesome artisan bread I’ve had thus far! Keto is so incredibly hard to get a good bread with but…. This one is it! Definitely my new go to keto bread from here on out. Great job 👏🏻 on this one. My goodness it’s fantastic.

Thanks for the recipe. The best tool in the kitchen is a spatula! You get every last drop of that lovely cream cheese out of the bowl, and it's also better than a spoon or a whisk for mixing. 🙂
Thank goodness we, as humans, have consumed gluten for as long as people have been making bread. For centuries, foods with gluten have been providing people with protein, soluble fiber and nutrients. Gluten in itself, especially gluten found in whole grains, is not bad for healthy people whose bodies can tolerate it.
Many cannot tolerate the grains now..especially if they have the acquired gene intolerance. Commercial bread has deteriorated over the last 20 years, hence my total switch to kicking grains and carbs to the curb. My body thanks me.

I didn't have the Psyllium Husk Powder so instead, I used 4 Tbls Anthony's Oat Fiber Powder and added 1 Tbls Oat bran. It was delicious! The dough was a little less firm than yours so it spread to about 5" x 9". The texture was amazing and the flavor was yummy, a little like corn bread. The whole family loved it! I'm looking forward to getting Psyllium Husk Powder the next time I'm at the store. I'll make this bread again but according to the recipe. @@shaggydog5409 The oat fiber powder I used has zero carbs. The oat bran added 14:4 carbs to my loaf. Since I was lacking that one ingredient, I decided it was okay to add 1 carb per slice of bread to get by until I could run to the store. Is that okay with you, shaggy dog, because that's far more KETO friendly than most of the peeps I hang around with who are on KETO.

@@nikahajnalkahogue4904 While I also rarely eat out..I just wanted to add to this conversation that I have learned there is a HUGE difference between restaurants that serve processed food (in the USA where I live Olive Garden is guilty of this, although many people mistakenly think it is hand cooked) and smaller restaurants where the food is all made by hand. And of course fast food restaurants (McDonald's, Domino's Pizza, etc) ALWAYS have processed & unhealthy food. But I have learned small Japanese, Sushi, Thai, Korean, Persian and Mexican restaurants usually have wonderfully homemade dishes all made by hand using fresh ingredients and I feel just fine afterwards and don't have to spend hours in the kitchen cooking and then doing dishes..lol. Saw this on Keto Twins, and it looks delicious. They used a different psyllium husk and it was a purple hued loaf, but it still looked tasty. I can't wait to try it.❤
thank you so much for this recipe. I've got my variation of it cooking in the oven right how. I added 1 T inulin and 1 T Anthony's monk fruit and eryithrol. I also decreased the almond flour by 1/4 c and replaced it with lupin flour. And oh yeah...I used marscapone cheese rather that cream cheese, as I'm not a cream cheese fan. The dough tasted amazing, so I have high hopes for this :-)
Holy cow does that taste good! It tastes like real bread. Had a lovely crumb, and the crust was slightly crunchy. It was a little damp, so I probably should have cooked it the full 60 minutes instead of 55, and then turn off the oven and leave it in the oven to cool.
@@sheralync5854 So glad to hear that you like it! Yeah, baking times can be a little tricky with keto bread. It usually doesn't hurt to leave the in the oven after turning it off and also let the bread completely cool down before slicing.
I made this bread following your exact recipe. My bread was darker in color and a purple like center. The texture was not spongy or fluffy but instead stiff just different. The taste was kind of sweet and good. It did feel a little dry in the mouth after a few bites. I will definitely make this again because although I didn't like the color and wasn't wild about the texture it did fit the bill regarding flavor and a need for a low carb bread. Thank you!
This definitely isn't a fluffy bread, but more like an old-fashioned rye bread. The purple color is due to the psyllium husk powder. I heard it can occasionally happen with some brands. I personally never had the issue with the NOW brand.

Greetings Ludmila, I just found your channel..and I wanted to thank you for something many people looking up Keto recipes don't realize. As a Type 2 Diabetic..eating Keto for me is the difference between eating a "normal" American diet and having to take insulin and other medications to control my blood sugar..and still feel awful..or just being able to control my diabetes through a grain free and low sugar diet alone and feeling more normal. But here is the "thank you" part: Type 2 Diabetics tend to suffer from incredibly low energy levels due to complications from our disease. These complications may include cardiovascular problems, nerve damage (neuropathy), kidney disease, and depression. Each of these conditions can independently cause fatigue and reduce overall energy levels to the point getting out of bed is a struggle. What this means is that many times we are too tired to do even the basic things. Even talking can be too tiring for us. So I *thank you so much* for making a recipe that is quick and easy to do. So many of these Keto recipes are so complicated and time consuming I don't even try them. But this bread recipe looks quick, simple and easy. I look forward to making it and hope you continue providing recipes that are quick and easy for those of us who are doing Keto to literally stay alive. Blessings to you and your family always! 🥰💗

I made this twice. The first time without the correct psyllium husk powder and it turned out okay. It had a decent taste. The second time, I made sure i had the proper ingredients. It went from loaf shape to more like squashed loaf shape. Still tasty, but nothing like it is pictured.

Glad you like it! This occasionally can happen with psyllium husk powder, but it doesn't affect the flavor. So far, I never had this happen with the NOW brand.

Didn’t turn out well at all. I did it actually what the receipe said, but it wouldn’t bake, I had it in the oven for over an hour but it was crisp on outsides and wet inside and as Almond flour is around $10 for 200gms this was an expensive mistake.
Currently testing other breads because I haven’t liked the psyllium containing breads I have tried in the past, they tend to have a wierd gelled crumb. This looks better, with less psyllium and a better crumb. Will return to try out later. Thinking about the possibility of adding cocoa powder and caraway seed to better mimic pumpernikle bread if it works out well for me.

I just found your channel. I'd like to know if you ever made this bread using Walnut, Pecan, Pistachio or Macadamia flours? My system doesn't like oxalates and I'm afraid to use the other nut flours because of the high count of oxalates. Your rustic bread looks delicious with the addition of those cheeses!
I use half sunflower seed to cut down the oxalates. It has a bit higher carb count than almond flour, but is still high in protein. I don't eat bread often so I will accept the slightly higher carb count. Has a different taste, too.

You take a Keto recipe and ruin it completely. why add the sugar junk. It defeats the purpose. You might as well stick to the usual carby breads.
I’m not doing it for keto. I’m doing it for gluten-free for myself and my daughter-in-law so I don’t have a problem with the additives I’m using.

I just pulled my first loaf out of the oven - it's delicious! The best part about it was the wonderful smell of bread baking - couldn't wait to take it out and slice it up, warm and wonderful spread with butter. This will definitely be in my regular rotation - hubby loves it too and he's a very reluctant someone who really needs keto! Thank you for this and your delicious rolls too.

Just made this for the first time. I had no ricotta cheese so blended the same amount of cottage cheese as a replacement. Also had no coconut flour so added 1/2 cup additional almond flour to make up the difference. Threw in a couple TBSP ground flax and chia seeds…

Thanks for the recipe. The best tool in the kitchen is a spatula! You get every last drop of that lovely cream cheese out of the bowl, and it's also better than a spoon or a whisk for mixing. 🙂

Gluten free keto breads, cookies etc are not cheap to make. But reminder to self: "quality over quantity".
Not only are they rather expensive to make, results can be disappointing, as I happen to know!
Thank goodness we, as humans, have consumed gluten for as long as people have been making bread. For centuries, foods with gluten have been providing people with protein, soluble fiber and nutrients. Gluten in itself, especially gluten found in whole grains, is not bad for healthy people whose bodies can tolerate it.
Many cannot tolerate the grains now..especially if they have the acquired gene intolerance. Commercial bread has deteriorated over the last 20 years, hence my total switch to kicking grains and carbs to the curb. My body thanks me.

I didn't have the Psyllium Husk Powder so instead, I used 4 Tbls Anthony's Oat Fiber Powder and added 1 Tbls Oat bran. It was delicious! The dough was a little less firm than yours so it spread to about 5" x 9". The texture was amazing and the flavor was yummy, a little like corn bread. The whole family loved it! I'm looking forward to getting Psyllium Husk Powder the next time I'm at the store. I'll make this bread again but according to the recipe.

With the oats in it it wasn't KETO.
@@shaggydog5409 The oat fiber powder I used has zero carbs. The oat bran added 14:4 carbs to my loaf. Since I was lacking that one ingredient, I decided it was okay to add 1 carb per slice of bread to get by until I could run to the store.
Is that okay with you, shaggy dog, because that's far more KETO friendly than most of the peeps I hang around with who are on KETO.

@@nikahajnalkahogue4904 While I also rarely eat out..I just wanted to add to this conversation that I have learned there is a HUGE difference between restaurants that serve processed food (in the USA where I live Olive Garden is guilty of this, although many people mistakenly think it is hand cooked) and smaller restaurants where the food is all made by hand. And of course fast food restaurants (McDonald's, Domino's Pizza, etc) ALWAYS have processed & unhealthy food. But I have learned small Japanese, Sushi, Thai, Korean, Persian and Mexican restaurants usually have wonderfully homemade dishes all made by hand using fresh ingredients and I feel just fine afterwards and don't have to spend hours in the kitchen cooking and then doing dishes..lol. May I suggest keeping dehydrated vegetables in your pantry for those sick days. Definitely come in handy for a quick easy soup.
Saw this on Keto Twins, and it looks delicious. They used a different psyllium husk and it was a purple hued loaf, but it still looked tasty. I can't wait to try it.❤
Yes, some psyllium husks can do that. It doesn't affect the flavor though. Luckily, I never had that issue ( I use the NOW brand).
I used non-gmo and it didn't turn purple ... I used "just psyllium husk" brand

thank you so much for this recipe. I've got my variation of it cooking in the oven right how. I added 1 T inulin and 1 T Anthony's monk fruit and eryithrol. I also decreased the almond flour by 1/4 c and replaced it with lupin flour. And oh yeah...I used marscapone cheese rather that cream cheese, as I'm not a cream cheese fan.
The dough tasted amazing, so I have high hopes for this :-)

Holy cow does that taste good! It tastes like real bread. Had a lovely crumb, and the crust was slightly crunchy. It was a little damp, so I probably should have cooked it the full 60 minutes instead of 55, and then turn off the oven and leave it in the oven to cool.
@@sheralync5854 So glad to hear that you like it! Yeah, baking times can be a little tricky with keto bread. It usually doesn't hurt to leave the in the oven after turning it off and also let the bread completely cool down before slicing.

I made this bread following your exact recipe. My bread was darker in color and a purple like center. The texture was not spongy or fluffy but instead stiff just different. The taste was kind of sweet and good. It did feel a little dry in the mouth after a few bites. I will definitely make this again because although I didn't like the color and wasn't wild about the texture it did fit the bill regarding flavor and a need for a low carb bread. Thank you!
This definitely isn't a fluffy bread, but more like an old-fashioned rye bread. The purple color is due to the psyllium husk powder. I heard it can occasionally happen with some brands. I personally never had the issue with the NOW brand.

Made this yesterday and today. It is VERY tasty, and filling. I found it simple to make and your directions and additional information is priceless. I just found your channel..and I wanted to thank you for something many people looking up Keto recipes don't realize. As a Type 2 Diabetic..eating Keto for me is the difference between eating a "normal" American diet and having to take insulin and other medications to control my blood sugar..and still feel awful..or just being able to control my diabetes through a grain free and low sugar diet alone and feeling more normal. But here is the "thank you" part: Type 2 Diabetics tend to suffer from incredibly low energy levels due to complications from our disease. These complications may include cardiovascular problems, nerve damage (neuropathy), kidney disease, and depression. Each of these conditions can independently cause fatigue and reduce overall energy levels to the point getting out of bed is a struggle.
What this means is that many times we are too tired to do even the basic things. Even talking can be too tiring for us. So I *thank you so much* for making a recipe that is quick and easy to do. So many of these Keto recipes are so complicated and time consuming I don't even try them. But this bread recipe looks quick, simple and easy. I look forward to making it and hope you continue providing recipes that are quick and easy for those of us who are doing Keto to literally stay alive. Blessings to you and your family always! 🥰💗

I made this twice. The first time without the correct psyllium husk powder and it turned out okay. It had a decent taste. The second time, I made sure i had the proper ingredients. It went from loaf shape to more like squashed loaf shape. Still tasty, but nothing like it is pictured.
Sorry, it didn't work out. It sounds like there was too much liquid in the dough. Wish I could be of more help.

Dear Girl, can you please tell me if I can use plain cottage instead of Ricotta. The Ricotta cheese in NZ is $6 a pot so I got cottage cheese instead. Hope it’s going to work ok because I can’t wait to make it.

How did it turn out?
Didn’t turn out well at all. I did it actually what the receipe said, but it wouldn’t bake, I had it in the oven for over an hour but it was crisp on outsides and wet inside and as Almond flour is around $10 for 200gms this was an expensive mistake.

Currently testing other breads because I haven’t liked the psyllium containing breads I have tried in the past, they tend to have a wierd gelled crumb. This looks better, with less psyllium and a better crumb. Will return to try out later. Thinking about the possibility of adding cocoa powder and caraway seed to better mimic pumpernikle bread if it works out well for me.

I just found your channel. I'd like to know if you ever made this bread using Walnut, Pecan, Pistachio or Macadamia flours? My system doesn't like oxalates and I'm afraid to use the other nut flours because of the high count of oxalates. Your rustic bread looks delicious with the addition of those cheeses!
Have you seen Victoria's Keto Kitchen Bamboo Fiber recipes! I used pecan flour for my cookies and they are delicious. Less oxalates in pecan flour.
I have seen Victoria's Channel and her Bamboo Fiber recipes. I'll check it out again although I am a walnut lover. Thank you.
I use half sunflower seed to cut down the oxalates. It has a bit higher carb count than almond flour, but is still high in protein. I don't eat bread often so I will accept the slightly higher carb count. Has a different taste, too.
