For white dough
6 1/2 cups all purpose flour
4 tbsp vegetable shortening
3 cups warm milk
1 tbsp quick rise yeast
3 tbsp baking powder
6 tbsp sugar
For Buns
3 1/4 cups all purpose flour
1 cup warm milk
2 eggs
1/4 cup butter
1/2 tsp salt
2 tbsp sugar
3/4 tbsp quick rise yeast
2 tbsp milk powder
For filling
2 tbsp vegetable shortening
3 tbsp onion
2 tbsp garlic
1 kg boneless chicken
3/4 cup soy sauce
1 tbsp oyster sauce
2 tbsp hoisin sauce
anise seeds or star anise
1 tbsp pepper
1/2 cup brown sugar
2 cups water
Slurry
1/2 cup water
2 tbsp cornstarch

@@Anjstacansi Ung ginagawa ko nilalagyan ko na lahat ng filling at lutuin ko na lahat o isteam na lahat at yong iba saka i-freezer. Then kapag ilabas sa freezer ithaw lang at saka i-steam uli ng ilang minuto or i-microwave ng mga 15 seconds.

I just made this but the siopao result is not white although I used the high quality white flour. Taste is great though. Any advice on why or how I can make the dough white after steaming?

buy a bleached flour, use an asian or chinese lard. the dough is chewy and taste like pork. that is the only way. the filling marinade a while slice of belly or whole chicken. the pork should be sliced in cubes or meaty part pulled by hand, the whole chicken pulled by hand. use freshly ground spices for maximum flavour. use chicken and pork bones stock for gravy inside filling. steam properly.
Para sa whiter dough
1.Gamitin lang ang vegetable shortening kapag wala nito pwedeng coconut oil
2.Paalsahin ng 2 beses sa warm temperature ( i-turn on ang oven ng 2 mins at i-turn off at saka dto paalsahin ang dough, mabilis at mas magandang resulta ng dough
3. Sa pagmamasa dust a bit of flour
4. Kapag i-steam na huwag bubuksan ang takip ng steamer hanggang sa maluto. Umiitim ang bun kapag pasilip-silip o pabukas bukas ng takip.
5. Vegetable shortening lang ang gagamitin kahit sa surface ng bowl o sa pagluto ng filling.

Hi, I tried your recipe. The siopao are soft & fluffy but why do they shrink while cooling? What should I do to make them stay bigger even if they are cold? Thank you.
Make sure your filling is not runny and the the dough not too soft. 1/2 inch apart in the steamer.

How can u make that kind of dough pag mano mano ang pagmasa? Napaka sticky nia po kasi mahirap mag masa ng ganyan... wala po kasing mixer mano mano lang...
Gumamit ka muna ng spoon then spatula para hindi manikit kapag na mix na lahat bago ilagay sa isang bowl , pahiran muna ng vegetable shortening saka ilagay ang dough. Pahiran din ng vegetable shortening ang top ng dough at saka paalsahin sa warm temperature. Kapag umalsa na siya pwede mo nang masahin mano mano hanggang sa maging smooth na ung dough, hindi na siya masyadong madikit. Saka paalsahin uli.

Today I tried 4 siopao recipes for a whiter dough ,all from different vloggers,the problem is nothing seems correct maybe the proportion of each ingredients - they never give the right measurement of each ingredients.I did the same way as shown in YTube but to no avail, the 4 recipes failed, all depleted and the dough turned brownies yellowish. How I wish someone out there will post the real recipe of a whiter and fluffier siopao recipes🙏🙏🙏🙏

Your recipe on dough making is different in your actual demo. You add sugar in your demo but no sugar in your ingredients written in your description box. I dont know what would be the result of my dough im making today. I trusted you and your ingredients because of your title that you've been making siopao for ten years! Ano ba yan ...
