i think ang logic nito kung bkit 4 ing. lng cnabi nya is. meron tayo sa bahay (lagi) ng water, oil and salt. which is di mo na need maghagilap o bumili pa. Basic kumbaga? flour,yeast,sugar and cheese? lagi ba tayong my stock nyan? sugar meron, pero hindi sapat for sure, so bibili k prin. basta logic nlang cgro yun. :)

Yes masarap ang tinapay pag mano mano ang pag masa.. pag overnight ung dough mababa measurement ng yeast para hindi umaasim ang dough. Slapping, pounding,punching stretching, folding ung procedure ng pag masa yan po ang ginagawa mo chef. Ang oil na dapat gamitin ung vegetables oil madalas gamit ko sunflower oil. Pre fermentation palagi ginagamit ko na mixture master chef.. Thanks for sharing master.. Done fullpack support ka master baker..
Master Jimboy, kinompute ko ang mga ingredients mo sa baker's percentage, eto ang results: Flour - 100% Water - 43.4% Oil. - 22.5% Yeast. - 0.25% Sugar - 25% Salt. - 1 % Pag pinagsama ang water and oil, you have about 66% hydration sa dough mo. Amazing yan, Master, kaya malamang maraming air pockets ang pandesal mo! The best din sa lambot dahil sa oil. Nalula ako sa 500grams (25%) na asukal, pero naisip ko na kelangan nga kumain ang yeast ng sugar dahil sa overnight proofing. Kaya slow proof, pero alsado talaga kahit 0.25% lang ang yeast. Ang galing! Naging scientist nako, Master, sa pag analyze ng recipe mo, lol. Sana makatulong sa mga balak gumawa ng recipe mo, pero sa mas konting amount ng ingredients, dahil walang malaking oven 😁. Gloves are really not necessary in dough handling, even with Covid. Bread baking uses Yeast, with its presence it deter bacterial growth. If there is bacterial growth, that means the yeast is already over taken. Viruses on the other hand will be killed off in the oven with 350*F (177*C), which is the usual baking temp. There is a misconception that gloves are sanitary. It is if it is sanitized gloves that went through Autoclave. Other than that, it is just use to protect the worker's hands. Washing hands with soap and water is definitely cleaner.
