    Mediterranean Chickpeas Black bean Salad-Healthy Weight loss/Diabetic/Vegan/Vegetarian friendly recipe
    Adding a portion of salad to diet is perfect for healthy Lunch. This Salad is rich in Protein, Fiber, Iron, Vitamin B6, Magnesium, Potassium and Calcium. Less in Sugar. Keeps you feel fuller for longer - Helps for weight loss. Eating salad is helpful for Diabetic. It won’t spike the sugar level after the meal.
    Cooking Time - 15 min (For Chickpeas & Black Beans)
    Soak Time - 8 hours or Overnight
    Preparation Time - 5 min
    Note - If you are using store bought readymade Chickpeas and Beans. It will take just 5mins to prepare this salad.
    But considered cooking the Chickpeas and Black bean at home for more freshness, nutrition, and flavors. It is the best way to avoid chemicals in food.
    Balsamic Vinegar Dressing
    Ingredients -
    Balsamic Vinegar - 3 Tbsp
    Olive Oil - 3 Tbsp
    Maple Syrup - 1 Tbsp
    White Onion - ¼ of onion (Finely chopped)
    Dried Garlic - ¼ tsp
    Instruction:
    In a bowl add all the above ingredients and mix well
    Ingredients for Salad
    Black Beans - ½cup (100 gms)
    Chickpeas - ½ cup (100 gms)
    Salt - 1 tsp (½ tsp for each bean while cooking)
    Water
    Tomato - 2 (Medium size finely chopped)
    Cilantro - 3 Tbsp (finely chopped)
    Balsamic Vinegar Dressing
    Salt - ½ tsp
    Ground Pepper - ½ tsp
    Lime Juice - 1 Tbsp
    Lemon Juice - 1 Tbsp
    Instructions:
    1. In a bowl add Black Bean and Chickpeas. Wash the beans 3 times thoroughly. Soak in the water separately overnight or for minimum 8 hours.
    2. Once soaked well drain the Water.
    3. Add salt ½ tsp to each Bean. Add Water 1 inches above the bean and pressure cook for 4 whistles on medium high heat.
    4. Drain the water, once the Black bean and chickpeas cooked.
    5. In a bowl, add cooked Chickpeas, Black Beans, Tomato, Cilantro, Balsamic Vinegar dressing, Salt, Ground Pepper, Lime Juice, and Lemon Juice and Mix well.
    Serve plain or with Avocado, Tacos or Pita Bread
