High Protein Spicy Turkish Chickpea Salad, Nohut Piyazi

  • Piyaz, usually a name for a salad with beans in Turkish cuisine, is adopted from the Persian word, (फ़ारसी) meaning onions. This version with the chickpeas is called “Nohut Piyazi”, meaning “Piyaz with Chickpeas”.
    One of the best things about Nohut Piyazı is its versatility - you can use a variety of vegetables to suit your taste, and it's easy to adjust the recipe to make it spicier or milder. It's also perfect for a light lunch or dinner, or as a side dish to accompany grilled meats or fish.

    Ingredients:
    • 250 g chickpeas (soaked overnight and cooked)
    • Olive oil, ¼ cup, 50 ml, extra 2 tbsp to fry the chickpeas
    • 1 onion, thinly sliced into crescents
    • 2 garlic cloves, chopped
    • 1 red pepper, thinly sliced
    • 2 sun dried tomatoes, finely sliced
    • 2 tsp paprika powder
    • 1/2 tsp ground cumin
    • 1/2 tsp chili / red pepper flakes (pul biber)
    • 1 tsp ground sumac
    • 2 tbsp freshly squeezed lemon juice
    • 1 cup chopped parsley
    • 5 - 6 leaves fresh basil
    • 2 tsp salt or to taste
    Instructions:
    1. Soak the chickpeas overnight, drain and cook in simmering water for 1.5 hours until soft
    2. Drain and set aside. Alternatively use canned cooked chickpeas
    3. In a pan, heat up 2 tbsp oil or olive oil and add the chickpeas.
    4. Add 1 tsp salt and 2 tsp paprika, stir and cook for 5 minutes until chickpeas are red and fragrant.
    5. Set aside the chickpeas, scrape all the spices from the pan.
    6. Chop the onions, garlic, red pepper and the sun dried tomatoes and set aside
    7. Heat the olive oil in a pan over medium heat, add the onions and garlic,
    8. Stir and cook for 3 - 4 minutes until the onions are slightly soft and the garlics are fragrant
    9. Add the chopped red peppers, dried tomatoes and 1/2 tsp salt. Stir and cook for 2 minutes.
    10. Turn off the heat, let it cool down and add ½ tsp cumin, ½ tsp chili flakes, 1 tsp sumac
    11. Add the mixture over the chickpeas together
    12. Mix to combine the spices with the ingredients.
    13. Finely chop the parsley and fresh basil and add into the bowl
    14. Squeeze 2 tbsp of lemon juice and add into the ingredients.
    15. Gently mix the ingredients to combine without bruising the herbs.
    16. Serve in a bowl and enjoy with flatbread as a main or serve as a salad / side dish

    I just made this… so so good. I added chopped cabbage, julienne cut carrots and yellow peppers in addition to red to add more veggies nutrients to make it a dinner meal and it turned out perfect. So yummy. Because I like a little more spicy I also added cayenne pepper powder (which I add to everything anyways 😊). Thank you for the recipe! 🙏 I’m now a subscriber! 👍🏼

    Great job. As another turk I can want to note that you can replace basil by fresh mint. And I never cook the onion, instead I use Green onions, but I will definetly try this version, too.

    Just made this, it was delicious. I added in some seasoned ground beef (za’atar and other similar seasonings) for a little extra protein and it was excellent. This will be a part of my weekly rotation moving forward!

    First of all, I really enjoyed your calm and non-talking video. I love that cutting and cooking are the main focus. Thank you.
    For the dish; I've never cooked the onions or chickpeas before making a piyaz but I guess this looks more delicious and better for my stomach. (I love onions but when it is fresh it is hard for my stomach). Additionally, I always thought of this dish as a side dish next to the mean course but if I do it like this, then I can even eat it as the main dish.

    Lovely! My local co-op has had a version of this in the deli the last few weeks and I've been addicted! While slightly different because theirs isn't spicy and has the addition of olives and Turkish apricots, I'm certain this would be just as outstanding.

    i just made this but with a few tweaks, i used a tbsp of red pesto instead of sundried tomatoes, i used a sweet pepper instead of a paprika pepper, i juiliened a small carrot and blanched it then put it in with the onions and peppers, i also added 1tsp of sweetner to make it a sweet and spicy dish, and oh my god it was amazing i totally reccomend even if you keep the recipe the same 👌

    In India we have something similar to this we called it as a Chana Masala ( spicy chickpea )😅.
    The cooking process is almost 80% similar as you cook and it's so so tasty and healthy😊
    Most we serve it as with rice or flat bread during lunch or dinner.

    I m watching your video for the first time today.The recipe is much similar to the chana masala we have with bharure n chapatis except for the leaves used for garnish n the paprika powder . Indians love their curries to be spicy 🔥 we use red chili powder n coriander leaves for the garnish ...Love from Kerala, India...

    wow, beautiful. you also have lovely parsley and herbs. i would include those parsley stems in the salad. minced, they'll add intense parsley flavor and and little bits of crunch

    You can also substitute beans, black-eyed peas, green lentils for boiled chickpeas. If you roast and use capia pepper, it will be a legendary flavor. Harika tarif 👌🏻

      Yes, in Turkey we call them capia pepper indeed. You can also use red bell peppers!

    On the first sight I thought: this recipe is just for me! I made some changes to it (in particular, replaced chili flakes at step 10 by fresh chili slices at step 9), but at the end it appeared being too heavy with oil and starch, to my taste. Next time I will double the vegetables component, just to make the dish not so heavy on stomach.
