Hi Andrea! I don't make my own goat cheese, I like to buy plain goat cheese. I try to look for a brand without any added hormones or extra ingredients. Yes! Yogurt cheese and queso fresca could work for sure! You could also use feta cheese. And absolutely, herbs always help! Enjoy :)
Mushrooms would be awesome in this! If you used bell pepper, onion, mushrooms, spinach and topped it with sliced black olives and mozzarella or ricotta instead of goat cheese, it'd taste like a pizza flavored frittata!😋

In the absence of an oven, what I would do is to cook all the ingredients in a pan, let it set on one side, flip it over with a plate, until both sides are cooked, the result is also like a frittata ...😋😋😋🇺🇸🇵🇭
You can eat it cold, or at room temperature. You can microwave it with a small cup of water for hydration. You can put it in the oven again, (also with water for hydration), or in a steamer colander in a pot on the stove. Anyway you can heat up any other leftovers... basically, with attention to wanting to add moisture into the air because eggs dry when reheated.
