I made the bacon and potato it turned out delicious, i am going to freeze the left over slices for a quick breakfast during the week. I added some red pepper and red onion and a little zucchini, Yummy. Thank you for making it look so simple that I would give it a try. Had to get the cast iron out of the garage. Haha

I made it yesterday with bacon and even my husband loved it. Today I am making it with Jimmy Dean Breakfast sausage. It's in the oven now.

An above heat source should be the broil setting and should not be used for anything baked.

My Frittata's always rise, which I love..... Why?
Pretty simple! When milk or cream is added to eggs, it creates little pockets of steam in the eggs which increases their volume while cooking.

This is not a frittata this is an omelet
It’s definitely a classic frittata as you wouldn’t bake an omelet. Perhaps you have them backwards?
