Green onions, dill.
I learned to make this when I was visiting a friend in Spain. The trick is to cook over a low heat. It's good to eat either hot or cold. It's a great summer dish cold seved with a nice salad.

The only difference is we make it with cooked onions, we just call it Potatoes, eggs and onions. Next sauté sliced or chopped onion, I love onion, so usually make equal amount as potatoes, then as they are golden brown salt and pepper them. Add potatoes cook together a few minutes whisk together equal amount of eggs, pour over potatoes and onions. If you want a constructive finish, cover a few minutes, then pull edges with a fork, while tilting pan pouring egg mixture around pans edge. Once most of mixture is off the top, pop under a broiler to brown the top. Slide onto large pizza pan if your frying pan can’t be put under broiler, and brown that way too. Cut into wedges. If un constructed just pour beaten eggs over potatoes and onions, and mix until eggs are cooked the way you like them. Serve with toast or garlic bread and salad of your choice. Yeah, of course--it's a **frittata** with potatoes. Nothing more, nothing less. I'm sure it's delicious--potatoes, eggs and cheese, what's not to love. I prefer your method, @patriciacrosby5053 , with sauteed onions--that's how I make it. Gives it a bit more "oomph." But this is a very good recipe, especially for beginner cooks. (Frittatas are basically quiches, w/o cream, and without a crust!).

If having this for dinner , a tomato and lettuce salad with red and yellow peppers would go well with it . Toasted garlic bread and a sweet relish would compliment the meal beautifully .

When I was in Scotland several years ago, I had this potato dish. Fell in love with it but could never find a recipe that came close because I did not know about the egg being added. This is fabulous. In Scotland they baked in a pie crust so we could carry it with us.

I don't have a spring for pan, but I wonder if it would work ok in my angel food cake pan ..... because the base and the center tube lift out as a unit .... I could lift the baked casserole out as a unit and then slice portions around the tube, remove them and then reassemble them on a serving platter.
Made this aa a breakfast, but added onions, bacon, cilantro, tomato, and peppers. I found it turn out better to cook the potatoes in batches that way they were well cooked and combined it all in to a pan. It was a hit.
1. Prepare even thickness potato slices to your liking, rinse off starch, fry in large skillet, turning occasionally. 2. Salt & Pepper the potatoes to your taste. 3. 6 eggs beaten & seasoned with S&P, 1/2 teaspoon dried garlic powder, 1/3 Teaspoon of turmeric powder. I would personally use fresh minced garlic but that difference is not in the video. 4. Mix together in mixing bowl the fried potatoes & egg mixture. Leave to sit covered for 10 minutes. 5. Turn out into a springform metal baking pan. (If not teflon coated, butter /grease the pan's inside surface first) 6. Cover with aluminium foil & bake at 180 degrees C for 30 minutes. 7. Make a side salad of your choice. 250 grams chopped ham, 250 grams sliced pickled mushrooms, 150 grams grated hard cheese, 150 grams tinned sweet corn, 2 Tablespoons mayonnaise. Mix well. 8. Take potatoes out of oven, remove aluminium foil, grate 100 grams of hard cheese to cover top of potatoes, bake further uncovered until cheese melts & is golden. Remove potatoes from oven. 9. Top potato with finely chopped spring onion & dill. Remove spring form pan sides. 10. Serve with side salad.

Here the mushrooms are in oil in a glass jar. Close but not pickled.

That’s the way I would do it too! Boiling a few potatoes doesn’t take long. I like the bacon and tomatoes for breakfast or brunch.❤😊

The potato/egg dish reminds me of a Spanish tortilla with the potatoes and eggs. I will try your recipe, but add onions and the ham to it and serve with a green vegetable or salad.

I do this with leftover French fries too. Nice with good quality bacon bits on top.
