I made this on Sunday (2/4/24). It was fantastic! I have to admit that I was out of zucchini, but I had sliced mushrooms on hand, so I used those instead. It turned out great! I'm definitely going to make this recipe again (I'll be sure to have zucchini on hand next time). Thank you for your fun videos! This was outstanding, Suzy! I've had it for dinner three nights in a row. I've stuck to the ingredients exactly as you have them, but I like to keep clean up to a minimum, so last night I did the whole thing in one skillet. Cooked the veggies in it, in olive oil, cracked the eggs directly in it and broke them up a little, added everything else and topped with feta! Cleanup: One skillet, one plate, knife and fork. An absolute keeper! Thank you! I'm a subscriber!
I just made this dish tonight and it's a winner! I left out the zucchini, used dried thyme instead of fresh and it was still delicious 😋. Now if only I could get faster at prepping veggies!
Absolutely the most delicious frittata I've ever made...and I had all the ingredients in the house and garden! First time I used roasted vegetables in a frittata. Next time I will use more feta. I'm not crazy about eggs and broccoli, but combine in this recipe they made for one of the most enjoyable breakfasts we've ever had. Thank you!
Just discovered your channel. I made this frittata today & it was delicious. I don’t care for feta but substituted w/another soft cheese & will have a serving for breakfast. ❤️
That looks delicious but I have an idea--wonder if it is crazy: could you take 1 baking dish (with sides), oil it up; roast the veggies; lower the oven down a little (maybe 350 ish), take the dish out and pour in the egg mix. Stir it really well. One pan. ? I have a Breville and may try it in there. Your recipes are great--easy and wonderful.
green frittata lovely I also suggest to try vegetable frittata called kuku sabzi it's traditional Persian style can take it as a meal , sandwich or snack, all in my channel
Yummy, adding Milk to the Eggs and then mixing makes them way more "Fluffy" than Baking Soda, the Water and Fat in the Milk boils and that's what puffs up Quiches and Soufflés.

I do the exact same, but do it all in my skillet, and cook it in the oven once the sides bubble. Way less dishes to clean up, and it all takes 20 minutes in total.

I have several questions about this and many other dishes. Suzy always has fresh parsley on the counter. Does she wash the parsley before using it? How does she dry it, if she washes it? How does she keep the parsley fresh? Thanks.
Hi there! I always wash my parsley before I use it. To dry it, I lay it flat spread over a few pieces of paper towel and lay on top another layer of paper towel and dab it until it’s completely dry. To keep it fresh I place it in a tall cup filled with water and cover it with a plastic bag and place it in the refrigerator. Hope that helps!
