Panna Cotta & Homemade Strawberry Coulis - a Delight ♡ (+ anti-waste syrup, vegan, gluten-free)

  • Hello, good evening 😉 In this video I show you how I make my vegan Panna Cotta It's a recipe that I've been developing for years because, when I want a panna cotta, I know exactly what I want. I want 😌 Here the texture is dense, the spoon sinks into it greedily and the panna cotta resists nicely when you tear a bite out of it. The sensation in the mouth is just as fresh and light as it is tasty and conclusive 👌 By this I mean that at the third spoon you think you will be able to eat two panna cotta... but when you have finished the first you have understood that was enough and that you're just going to make yourself a little coffee or herbal tea to finish the meal 😉✌️ (that said, it's certainly not me who's going to judge you if you've also understood that you're still going get a second right away).
    INGREDIENTS, for 4 panna cotta:
    20g blond sugar (you can also add vanilla sugar if you want)
    20 tapioca starch (or failing that, cornstarch)
    2g agar agar
    400g rich coconut milk (or coconut cream)
    200g soy cream (or coconut cream if you don't eat soy, for example)
    10g lemon juice
    For the strawberry coulis:
    400g strawberries
    100g blond sugar
    180g of water
    For the strawberry tail syrup:
    50g strawberry stems
    80g blond sugar
    200g of water
    👉 For this recipe you can replace tapioca starch with cornstarch: don't get stuck if you don't have tapioca starch 😉 but...tapioca starch will actually make the difference for what is the "resistance" of the texture of the panna cotta (with cornstarch, you will have something more melting). You will find tapioca starch in most organic grocery stores, and in all Asian stores. Be careful not to confuse tapioca starch with tapioca pearls 🧐
    👉 You will find agar-agar in most shops, usually close to baking ingredients (chemical yeast, etc.)
    👉 For the flavors of coulis and syrup, don't hesitate to refresh them with a little lime zest, yuzu or bergamot lemon why not, basil is classic, sichuan pepper to stay safe lemony notes and a "final" sensation in the mouth, verbena, fresh mint - here I just choose to stay on very simple ingredients & low budget because I don't want to knock out heads or to block desires to cook with extended ingredient lists 😉 In addition, this coulis is delicious as it is, just strawberry 👌 But if you feel in advance that you need more, treat yourself and trust, and don't hesitate to share either your experience in the comments 🧐
    👉 For an express coulis version (or without fresh strawberries): you can mix jam with a little water until the desired texture and voila 👌

    ...et pour une version coulis express - ou en attendant les fraises plein air ou parce que tu regardes cette vidéo dans 6 mois - tu peux mélanger de la confiture avec un peu d'eau jusqu'à la consistance de coulis souhaitée, et voilà ;) Des bibis!
