Baked Eggs: Qai Ci (Khai Being)

    Today, I'll be showing you a fun, tasty, and easy Lao appetizer/snack: Khai Being. In the Hmong culture, we like to call these Qai Ci: "Qai" means eggs and "ci" means to bake. These are super fun to eat and also very easy to make. It's just time consuming :) Great for potlucks or any special occasions. These are basically hard boiled eggs but rather than boiled, it's seasoned, hard baked, and no yolk in the center haha. Super fun. I grew up eating this as a kid and I still love it till this day. The great thing about eggs is that you have the freedom to season it how ever you want. So today, I'll show you how we like to season the eggs and how we like to cook it. Hopefully you can give it a try and have a successful bake.

    INGREDIENTS:
    30 Eggs
    1/2 tsp Salt (add more if desire)
    1 tsp Sugar
    2 tsp ground black pepper (more or less depends on you)
    2 Tbsp Oyster sauce
    1 Tbsp sweet soy sauce (Kwong Hung Seng Sauce)
    Sweet chili sauce
    Green onions (optional)

    I never thought of making an egg that way that's pretty cool. I think I'm going to try it but instead of soy sauce and oyster sauce I might just throw a splash of milk in there to help it make a suspension of all the seasonings I'd use.

    With the sauce, I noticed store thins it out, or have differ taste than straight up sweet sauce. I personally prefer the store made sauce. Do you know what they added to the sauce?

    What my mom used to make a nice tiny hole is use a tiny thin nail curved scissor 😌

    I find this to be so labor intensive although they’re so yummy!!! If u don’t mind me asking what state do u live in? The weather is always cloudy there like it’s about to 🌧

    All mine cracked open T_T and the texture is spongey like an omelette, and they're impossible to peel too! Yikes, I need to try again and I think try to get rid of any bubbles, and temperature test my oven. :) Don't suppose you have any ideas about what I did wrong?

      Your oven temp was too high. Every oven is different so I suggest going down to 165 or so. You didn’t go any higher than 175 right?

    My hmong/laos grand mother used to make something like this, it was called qai ci or baked eggs, except it wasn’t green ?😭
