Ohio here, first time viewer. I watched because this showed up in my feed and when I looked, I never saw anyone can chicken legs before. We are in a recession and it's only going to get a lot worse. In central Ohio, eggs are now $3.10 a dozen. A five pound bag of red potatoes is $7.49. One honeydew melon is $7.00. A half gallon of milk is $1.80. Prices will increase as winter sets in.
My grandmother had over 800 empty canning jars when she died. She grew up in the depression and had six kids. Her husband worked but she canned so her family could eat well.
Someone would knock on her door. They wanted a quart of green beans, two quarts of her peaches and two quarts of corn. They gave her a beef roast in exchange. Back then, you lived by the barter system. That beef roast could be cooked and used to make beef and noodles so everyone had a nice dinner plate with mashed potatoes and butter bread.
One lady brought a bowl. She wanted some sour kraut. My grandmother went to her cellar and lifted off a board and scooped out some sour kraut and the lady gave her 50 cents. During "rationing" when people had to use ration coupons there was a way out of it. The local feed stores sold flour and sugar in 50lb sacks. My grandfather would bring them to my grandmother so she could bake. A peach pie or a pumpkin pie sold for 75 cents. It was cash she saved to buy other groceries or things the kids needed.
After she died, I put a sign out that we had canning jars. No one stopped. Later that afternoon an Amish family stopped by and asked how much they were. I told them they could take them all for free if they wanted them because we needed to empty the house to get it sold. They started to load up and then I emptied my riding mower and tools into her garage and we loaded them up into the trailer. I told them I didn't want to offend them but said I could drive there with them if that was allowed. They gave me their address and I waited a half hour for them to get home and when I drove up there must have been 2 dozen people who had them unloaded in just a few minutes. (I am not religious at all). They shook my hand and said a prayer of thanks. I gave them a few stories of my grandmothers bartering system and they said they still do that.
But again, I talk too much but I have never seen anyone can chicken legs. Nice video.

This is the first time I’ve ever seen, or even heard of canning chicken on the bone. I’m curious why you chose to do it that way as opposed to just canning the meat? I am just beginning the learning process of using a pressure canner. A huge motivation for getting a pressure canner was to be able to can meet. You’ve given me new things to think about! Thank you.

There are thousands of canning recipes that use chicken on the bone. It all depends on what you’re doing with it.

I enjoy your channel! I had a little stash of the soap that I had purchased from you. Well, my youngest son discovered the stash. I could smell my soap after his shower. I'm like, did you use my soap? I am going to send him the information so he can order his own stash and replace mine. Our favorites ❤ are Loopy Fruit and Cucumber Melon.
