    ▌材料 Ingredients
    芋泥瑞士卷 Swiss Roll in Taro Paste:
    5 B级蛋 Grade B egg
    75g 牛奶 Milk
    35g 食用油 Cooking oil
    90g 低筋面粉 Cake flour
    15+50g 砂糖 Granulated sugar
    5g 香草精 Vanilla extract
    简易芋泥馅料 Easy Taro Paste:
    300g 去皮芋头 Peeled taro
    50g 砂糖 Granulated sugar
    20g 无盐黄油 Unsalted butter
    15g 鲜奶油 Whipping cream
    1g 盐 Salt
    1tsp 紫薯粉 Purple potato powder
    ▌步骤 Instructions
    1. 芋头蒸熟后与其余材料压烂拌匀,可以根据情况调整紫薯粉用量,调成自己喜欢的紫色,甚至不调色也行,放凉备用
    2. 蛋黄加入15g糖搅拌至泛白后加入牛奶和食用油搅拌至乳化状态,之后筛入低筋面粉,拌匀即可,香草精为选择性添加,也可以不加
    3. 蛋白加糖打至湿性或中性发泡,即提起打蛋头拉出软软的弯钩的状态,蛋白霜打太硬可能导致蛋糕开裂
    4. 蛋黄糊和蛋白霜混合均匀,入模,送入烤箱中层160℃/30mins,建议表皮烤焦一些不容易掉皮
    5. 出炉马上脱模,稍微放凉后即可包入馅料卷起,马上享用,也可冷藏1-2小时后享用

    3. Beat the egg whites with sugar until moist or neutral foaming, that is, lift the egg beater and pull out the soft hook. Beating the meringue too hard may cause the cake to crack.
    4. Mix the egg yolk paste and meringue evenly, pour into the mold, and bake in the middle layer of the oven at 160℃/30mins. It is recommended that the skin be charred and not easy to peel off
    5. Immediately demold and let it cool down a bit, wrap in the filling and roll it up and enjoy it immediately, or refrigerate it for 1-2 hours and enjoy it

    A = 65-70g
    B = 60-65g
    C = 55-60g
    D = 55g and below

      你好。那个配方水量太大,需要慢炒蒸发掉一些水份,操作起来比较难估计适合的干湿程度,太湿的话蛋糕卷起来不挺,太干又不容易抹均匀🙏🏻

      都可以的,如果你不常使用,建议用植物性,因为耐放,动物性鲜奶油开封后需要尽快用完。另外,植物性鲜奶油通常自带香草味,馅料就会多一种味道😇
