Just wanted to share something I made while drunk the other night. Easy burritos. Half a bag of frozen Potatoes O'Brian (or called Hash Browns with onion and peppers) A whole bag of frozen peppers and onions (fajita veggies), A can of Black beans and a can of corn. I also used some oil and minced garlic from a jar. SUPER easy. I have so much I'm going to freeze some. I'm not vegan so I had an egg and some cheese with mine, but for vegan you could leave that out and add more beans and avocado and greens, anything you want really. It was cheap and easy enough to make while drunk and crying. Oh yeah, I put spices and jared salsa in there too.

upcycling leftovers into new things is a budget stretcher. I just took leftover spanish rice and pinto beans and put in the food processor with crushed corn chips, oregano, cilantro, onion and garlic powder and some pickled jalepenos with their brine. Pulsed till blended (leave chunky for texture) and make into patties. Air fry 7-15 minutes depending on size and your fryer ( or bake). I served on a bun with cashew ranch and some roasted anaheim chili and lettuce. I do this bean/grain burger combo all the time with different varieties and spice profiles (soybeans and brown rice with green curry; white bean-sorghum and pasta sauce and italian seasoning, etc). And mushrooms of all varieties have gotten alot more expensive where I live (seattle), but button mushrooms still the least expensive of the varieties

Oyster mushrooms are super super easy to grow and clone. You mix some water with some wood bbq pellets like making a dough, it becomes like thick mash potatoes of sawdust, then you crumble in some of the spores, then you jam it in a plastic bag, twist the bag up tight and then poke a few holes in the bag

I actually just tried stir-frying tofu in place of sausage in a recipe and was pleasantly surprised with how easy it was! White mushrooms and baby bellas are pretty cheap where I am, but I always forget to use them in time so I have strict rule to only buy them if I'm using them that day. I can get six 'ugly' bell peppers for 4.15 so they're one of my staple vegetables to bulk up meals instead. Thanks for the recipes!

And if you have one of the really big stores in your area, sometimes you can find tofu or vegan items. I live in NS but when I visit family in Ontario, I go there for some of my groceries. The Ontario stores are much bigger and have a larger selection of things then the stores in NS.

I do have to say I cringed a little at the raw tortillas. I know the label says "cooked" but they are barely cooked. They're expected to be heated again before serving and that will finish the cooking. If you actually heat them up, you will see a difference in texture and flavor. The light golden brown spots and the smell let you know they're ready. I think you're missing out if you haven't tried them as they're meant to be eaten.

Bell peppers are my jam and they’re in almost every recipe I make. Now the only time I buy fresh bell peppers is when they’re in season and on sale or if I can’t find the frozen. Oh or sometimes you can get a good deal on “imperfect peppers”. So for just frozen peppers I get the “great value sliced 3 pepper blend”, which is a Walmart product and in Canadian dollars it’s only $1.98 for 500gm bag. Or there’s the “president’s choice 3 pepper and onion blend” from Superstore or No Frills which is $4.79 for a 500gm bag, but the price on this varies as the frozen veggies go on sale a lot. The pieces in the PC blend are much larger chunks than the GV. So that’s how I’m able to have peppers in all my meals all year round, lol.

Last week's batch was tofu, chickpeas, mushrooms, vegan sausage, and kale. They're the best way to use up stuff that needs using! Kids, the dried beans are the way to go.. My bulk bin at a local store has 2 pounds of beans/peas for $2.24. In the prepackaged section, most 1 pound bags are 1.89-1.99. I also have a dehydrator..I cook up dried beans I want to use now, and then dehydrate the rest. They keep well in glass jars after dehydrated. You can make almost instant dinners with dehydrated beans and dehydrated veggies. If you see a good deal on bulk foods, dehydrating is also buying you time in the future AND saving you money because no idea how high prices in the future will go. ✌🏼💜

I get my beans, rice & mushrooms at Costco. That's an easy delicious burrito. Pasta with hummus & tofu, rice dishes are yummy too.

Definitely team cilantro love it and especially the smell when cooking. I make a similar dish to the pasta but I add cherry tomatoes that are cut in half and fresh basil, yum! I usually pay 59 cents for canned beans but I just paid 75 for a can of chick peas. The bagged have gone up to over $@ a bag. Oyster mushrooms are over $6 and you only get 3 halves!

I have GERD and can't eat onions, garlic or mushrooms (or red peppers...)...🥲 Any ideas for veggie substitutes for the spinach pasta? I love the idea of making sauce out of hummus!

I just bought 40 lbs of mushrooms, canned 30lbs and turned 10lbs into mushroom powder bc they were on sale .
During the Fall bell peppers were on sale for .99 lb so I dehydrated $40.00 worth ....making winter cooking cheaper.

I love onion flavor but HATE the texture of cooked onions. Its like halfway between slimy and crunchy and super outputting. I have to dice mine super fine when I add them to a dish.

I agree with this entirely. I've been cooking only with cast iron ceramic or glass and stainless steel for years because those have been around for quite a while. Not too long ago they found out baby powder causes ovarian cancer. Meanwhile cast iron has been around for a good 1400 years if it does anything bad we know it by now. Plastic is just a little bit too new and we already know that microplastics shave off from it all the time.

Always love your recipes and help keeping the grocery budget under control is always appreciated. All mushrooms are expensive where I live in Sacramento California unless I’m buying at Costco. Problem with buying at Costco is it’s a big container and definitely a challenge for one person to eat.

Those burritos are a definite go for me, looks like a good lunch option. And...I'm a spice wimp and a definite NO for cilantro as I don't like my food smelling and tasting like soap.
