I make couscous salad with a homemade Greek dressing. It's got plenty of lemon, oregano and garlic. I add a little bit of mint and some olive oil. Vegans and non-vegans love it. When I make pasta or couscous I take a little bit of the water from Kalamata olives and it flavors the pasta.
That "Mediteranean Salad" was basically just my favorite foods dumped into a bowl. I love it. And broccoli slaw is amazing. When I was young and cabbage was too bitter for me, Asian-inspired broccoli slaw transitioned me into darker greens (that and roasted brussel sprouts, yum)
I buy pre cut tri-color slaw & cook a little bit then put in spring roll wraps. I spray them with a little cooking spray or olive oil & cook in my air fryer or oven. Quick home made vegan egg rolls/spring rolls.

I make a similar salad all the time but I use kalamata olives and add tahini instead of mustard. Otherwise it's almost identical to yours. For gluten free folks or just to add variety use garbanzo beans as the base instead of couscous.

If anyone eats fish at all then first recipe would be great with pan or oven baked salmon and if you could cook and have some time instead of using raw pepper you could grill or oven bake peppers ,courgette or auburgerine with only salt ,pepper a small spoon of olive oil and I also like to use Italian herb mix and mix everything and cook for 30 minutes or mix them and do it on grill it's soooo good . It's 4 am in UK now and my mum is extremely sensitive to smells and I didn't want to cook During the day so now I can't use oven or pans so left with boring sandwich or something like this couscous recipe but using only half of the items mentioned , but I'm gonna have to find it first 😅 .
They all look good (minus the evil cilantro 😁) PC at Superstore now has a delicious plant based sour cream that would be amazing with the lentil tacos. Thanks for the no cook recipes Rose, I am currently still roasting in this prairie heatwave and grumpy with no AC! No way am I turning on the stove!

Personally, for greek flavours I would probably go for slightly different ingredients (Mint instead of cilantro, green pepper instead of the orange one and Kalamata olives since these are my fave) but you have persuaded me I need to try out that feta recipe! My fam did not like the violife feta at all so maybe that one would please them more :D
That lentil taco looks amazing!! Have you tried the vegan taco with diced potatoes before? It's great!!! Well....I guess the potatoes would not be "no cook". Lol!
The couscous preparation isn't a hack, I just bought some to try out this recipe and the way you made it (letting it sit for 5 mins in a bowl of hot water) is literally how the package says to prepare it 😂

Hi, I need to attend a 2 day work trip. I need to carry food that stays fresh for the 48 hrs since they won't serve vegan lunch. Please help 😢 I need ideas with no cutting (or pre-cut) and probably using hot water from the kettle I get there.

Try Oaxaca farmers cheese; just like feta. I use cactus pads in my stir frys that has alot of different vitamins in it.
A bread knife works amazing for cutting tomatoes.
