I just made this and, let me tell you, it is insanity-producing deliciousness!!! The end result is a crisp, crunchy caramel corn that is perfect... and no, it does not need to be baked. I used a Thermapen (instant digital thermometer) to ensure I properly got the sugar mixture up to 300 degrees F. I used the pastry brush dipped in water to wash the pot's sides also and only gently swirled the pot from time to time. I started the heat at medium-low and gradually increased to medium-high because I felt more comfortable in doing so, as I did not want to scorch the caramel (I've never heated sugar up to 300 degrees F before). Lastly, I did butter my wooden spoon which really helps avoid sticking when tossing the popcorn with the caramel. Everything actually worked. It worked! And the product is excellent.
Stephanie I love your recipes and your videos, how you explain everything, the fact that you give the recipe as you prepare it and give the measurements in grams I have tried several of your recipes and compare to other's and definitely choose yours
I made this for my family and IT WAS AWESOME!! It was the first time I ever made caramel popcorn so I thank you......again.....you know, everytime I wanna bake something these past few months especially, I usually use one of your recipes, everything you bake is soooo delicious!! ♥♥
Iv made caramel popcorn from a few different recipes and this recipe is the first one that actually turned out perfect for me. Lovely crunchy popcorn. Thank you.
Thanks Stephanie. I've learnt so much from your videos - ever since I got into baking about 5 years ago. Tonight my 12 year old son found this recipe as he wanted to make caramel popcorn for his class party. Such clear instructions and we had a great result.
*As always Steph.... You hit it out of the ball park!* _....and after I added 1 cup of 'red skinned' peanuts? This LITERALLY reminds me of those days eating Cracker Jacks at the park!_ (minus the cheap prize of course)
Stephanie....Thanx so much for this recipe...I've used it probably 4 or 5 times.... Just wanted you o know it's our go to recipe for the holidays...Look forward to other baking tips and recipes...Thanks from northern cali ..Humboldt county..Tj
WOW! what an amzing work you have done, I appreciate the effort you put into this, You need to be proud of yourself because everytime i watch your video my mood gets better, you always put me in a better mood, it is incredibly encouraging to those of us who look up to your energy and you leave us with such a great impression...
Love watching your videos. Everything is so easy. Instructions are perfect. I love anything Carmel. I am going to do this recipe. I will add some nuts maybe almonds. I love a product called "fiddle faddle". It's Carmel corn and peanut something like cracker jacks.
Hi Stephanie, the link to the recipe on the website isn't working. It worked the last time I made this at Christmas. I tried searching directly through the website rather than just a link here from the video and it still says "forbidden".
I have my own popcorn shop and caramel corn is the specialty of our shop. The recipe is really good and frankly speaking, I was cooking caramel popcorn in the same way as you have shown in your recipe before starting this popcorn shop.
I don't have any corn syrup in my house, so is there anything to replace it? And how long so we have to cook the caramel cause ido not have a candy thermometer in my house
I enjoy all your recipes - I like the idea of adding the sprinkles before baking. I normally frost mine with different color frosting. Do you have a good recipe for Lemon Chiffon or Lemon Custard Ice Cream? I grew up with Carnation Ice Creams, they had a Lemon icecream that was to die for as a kid.
WHO in there right minds would EVER thumbs down any of your vids !!!! So now you got me making popcorn woman smh your going to have to do an exercise vid lolololol love u Ms. Stephanie ;)
FUGYOO: Or a non-envious fool like me that that knows this recipe is overly complicated, with too much baking soda and no vanilla. This IS NOT true NYC or Chicago style caramel corn. Tip off should have been in the beginning when she pronounced it car-a-mel instead of carmel. Enjoy patting yourselves on the back... you've been played.
Ichigoo or whatever: Carmel is also a city in Indiana :). Took you 6 months to figure this out? WTF! Stick to your non-gmo B.S. and leave me alone... go hug a tree. lmao
Forgive me if this question has already been asked. I have watched quite a few videos on making caramel popcorn because I want to get the feel of it before I make it. Most everyone has put their caramel popcorn in the oven after mixing it all together. I like that you don't have that step. Makes it less work and we get to eat it much sooner. May I ask why we don't have to do this step with your recipe? Thank you so much for all your awesome recipes. I'm a big fan.
It really depends on how much you cook the caramel before you add it to the popcorn. I notice that the recipes that call for the caramel popcorn to be cooked in the oven, don't cook the caramel to the hard crack stage.
Joy of Baking Thank you so very much for answering my question. That did come to my mind but because I'm not a professional and have yet to make it I wasn't sure so wanted to ask. I would rather make it the way you have. It's hot where I live and if I can get out of turning on my oven that's the way I'm going to go. Look forward to your next video. Thanks again!
I just wanted to let you know that I just made this caramel popcorn and it is the best I have ever eaten in my whole life. I can't wait for my family to taste it. Thanks bunches!!
Hi Stephanie! Could you use this caramel recipe for other preparations like a panna cotta?? A proper caramel is very hard to make but I found this way with all the ingredients together much easier. Thanks!
Hi I had a question. Every time I do the caramel popcorn, it doesn't have that smooth texture like the store bought brands. At first it was real grainy because I was stirring it, but know I mix all the contents before putting it on the burner, It turned out a lot smoother, but still not to my satisfaction. Any tips or pointers would be greatly appreciated.
It sounds like you may have sugar crystallization. First, make sure you stir the sugar mixture before it comes to a boil so that all the sugar dissolves. And while the sugar syrup is cooking, you want to make sure that you wash down any sugar crystals that attach themselves to the sides of the saucepan. Because if there are any sugar crystals they will give the caramel a graininess.
ohh this is very inyeresting i have to buy a termometer for my next bacht i wanna ask u if i can change the butter by coconut oil and how i can do diffetent flavours like nutella do i have to put it and the end to the caramel? what if im gonna do salted flavors like specias ? how can i do they keep crunchy?
Tried this ,I don’t think I got it cooked long enough, was soft and sticky, but tasted good on corn, lol, can ya cut back on the sugar was really super sweet, lol
***** Normally the recipes that bake the popcorn don't cook the caramel to as high a temperature. Therefore you need to bake the caramel popcorn to get that hard coating.
Stephanie, I love your recipes. I would like to know what are you using to cook the caramel and were did you buy it ? I really would like to get me one so I don't have to use the stove so much.
I love your videos Joy (mostly because you give measurements in grams) but this one was a little confusing because there's no mention of when or if you placed the salt in the mix. Was it just for 'counter decoration', or did you actually use it at some point?
For some reason that must have got missed in the edit. You put it on after the coated popcorn is spread on the pan and still warm. Here is detailed instructions: www.joyofbaking.com/candy/CaramelCorn.html
@@joyofbaking Thanks! I put it in just before the baking soda, and it seemed to work out fine. This must be pretty hard to mess up because it's not the only deviation I made! 🤣 First, I made too much popcorn (half again) and because the caramel seemed to be stuck at 225(f), I went ahead and added the baking soda and poured it in the bowl a little at a time. To get it crunchy, I placed the parchment lined baking pan in a 250 degree oven for 45 minutes, pulling it out and tossing to get an even coating every ten minutes. (something I remember seeing on another video) _AMAZINGLY?_ *This turned out GREAT!* I'm almost embarrassed to admit all this! Thanks Joy!
+dreaming.of.ag official Yes, the caramel does harden and that is because the caramel is cooked to the hard crack stage before it is poured over the popcorn. Some recipes don't cook the caramel as much, therefore the caramel corn needs to be baked in the oven in order for the caramel to harden.

Thank you Joy. Time to make some for the kids!!

When do you add the salt ,or did I just miss this step??

Your recipe is very close to my favorite store caramel peanut popcorn.
I always put in a teaspoon of vanilla at the end with the baking soda. Plus add any nuts of your choice too...yes, this stuff is so addicting!!

Brown rice syrup is best or honey or agave syrup or white granulated sugar and 1/4 cup water
Well.... your S.O.L
You can also make corn syrup
my kids will love it! thank you!
Thanks for doing this recipe!!! I will definitely try making this

+John Burks it is an induction burner. You can get them on Amazon. Here is a link: amzn.to/1rfTwix Unfortunately the one I have is discontinued.
When did you add the salt? I didn't see that happen. Hmmm. And why not into the caramel when it's cooking?
Add the salt after you pour the caramel over the popcorn.
Thanks! I made this a couple weeks ago and it was the best I've ever made. And yes, dangerous.
I love caramel corn. This looks so good. I like your pots. When you said they were cast iron you really got my attention! Where did you buy them?
The brand of pots I use is Staub. You can buy them at places like Williams Sonoma and Sur la Table, or online (amazon).
What could be used as a replacement for corn syrup?
I’m glad you didn’t bake it after pouring the caramel. Why do persons bake it afterwards? Also thanks for explaining the baking soda
