Homemade Caramel Corn that is to die for delicious. Chewy, sweet and salty, the perfect combo.

  • I love caramel corn, but it has to be good to be worth eating. Well, this one fits the bill perfectly. It can be made a little more chewy or more crunchy if you prefer. It is sweet, salty and caramel flavored all in one.
    Caramel Corn
    1c. butter
    1/2c. corn syrup
    2c. brown sugar
    1T. salt
    1T. vanilla
    1/2t. baking soda
    16c. popped popcorn
    Pop your popcorn. We use1c. of kernels and pop them ourselves (1/2c. would have been enough), but if you want to do microwavable just make sure it is unsalted and has no flavor added.
    Melt the butter in a large pan, add brown sugar, corn syrup and salt. Stir well and bring to a boil. Boil on medium heat for 5 minutes stirring constantly.
    Remove from the heat and add the baking soda and vanilla. Please be extra careful when adding the vanilla as it will pop the hot liquid a little.
    Pour the mix over your popcorn in a large bowl. Stir well.
    Pour onto a cookie sheet and let cool. You can eat it as is or if you want a more crunchy caramel corn put in a 250 degree oven for 15 minuets. It will get more crunchy as it cools fully.
    Break it into chunks and store in an airtight container.

    I need to say this but I have watched this four times this year and really love to hear about your mom and growing up and how she taught you that there is nothing that is insurmountable. She sounds awesome. What a blessing.

    My elderly cousin, the age that my grandma would have been, used to make popcorn balls every Christmas. She used leftover popcorn from the business she had during the summer. They were great.

    I always buy butter on sale at Aldi during the holidays! My husband & I both go. We each buy the 6 limit with usually 3 packs of unsalted. It lasts us pretty much all year including cookie baking season.

    I and my siblings had the same type of upbringing. It makes you strong, and teaches you to be a DIYer. I’ve only recently discovered your videos but I have a great respect and admiration for the type of person you are. God Bless you. We were very poor but my mom would always give us dessert after dinner. If she could not afford to buy the 3 row pack of Oreo cookies, which back then were 15 cents a pack, she would make each of us including one for herself, these incredibly crazy shaped raisin cookies using flour, butter, an egg, sugar salt, baking powder and raisins. I learned to create cookies of my own as I grew. I even created my family favorite rice a roni, spam and cheese casserole. I read something once that I hold close to my heart. Don’t despise the small beginnings A lot of people don’t turn out so great being raised in poverty or a what may be difficult circumstances and some of turn out better than ok. I am not rich by any means but I have learned to make things work, use what I have and share what I can. You seem to be that type of person.

    My mom taught me NOTHING……she was jealous of me….I was the cute little blonde haired girl…..I can honestly say she never even taught me to boil water. Sad but true. I LOVE your channel! I just found you this past week….early September 2024…..rant away darlin! I’m now 75, into herbs….have a garden on my deck…..lovin’ it all! I had no idea how to plant anything….or grow it….or cook it…..or preserve it…but now I’m into herbs, growing them and veggies and having a ball! Doing my thang! I adore your sense of humor…..SO like mine…..and all the things you do! You probably won’t see this since it came out 8 months ago, but I truly love you and watch every video I find of yours!     You sound like you have a great mom. You seem like a really great person too. My mom also taught me to cook and clean and sew, but I could never put a roof on my home, or do any installing of appliances. Lol

    I put my popped corn in a brown grocery bag. I cook brown sugar, butter, corn syrup, and salt in a glass bowl, cook in microwave 2 minutes, stir, 2 minutes more. Stir in baking soda and pour over pop corn in the bag. Shake well. Put the bag in the microwave, cook 90 seconds, shake, cook 90 seconds more, shake, cook 45 seconds mire, shake, and pour out on baking sheet to cool.😊

    When popping the corn put the oil in and six kernels into the pot when half pop it’s at perfect temp to add popcorn

    I have a funny story the first time I was making candy, it involved making carmel and I was using a plastic spoon to stir I started smelling burnt plastic and realized it was my spoon it was like those cartoons when the witches pull out the spoon and half of it is missing 😂

    I live in Glasgow, Scotland. I grew up in the Gorbls area, which was an extremely deprived area in the 50's (look it up on google). My father left when I was 14, I had 1 older sister and 3 younger, 1 girl and 2 boys. I learned how to cook, sew, embroider etc. The tenements of Glasgow were 3 storeys high, so roofing etc was something I didn't know how to do but I can make something out of nothing, so I know where you're coming from on this one.
