I have made these a few times now. It is essential to put them in the freezer to harden before dipping in the chocolate, otherwise, they just slide right off into the pan of chocolate. They melt very fast so freeze them solid before dipping. Well worth the effort to make them. I have tried, white, milk, and dark chocolate on these, the dark chocolate is by far the best as the others make them too sweet.
Alternatively... If you want uniformly round pieces or would like a shaped patty instead, you can use 2 sheets of waxed paper and roll it out and cut the peppermint patty circles. Here's how: 1. After you have chilled the dough, place a layer of wax paper down directly on the counter top. (Note, a couple of drops of water on the counter will hold it in place.) 2. Sprinkle powdered (confectioner's) sugar on the waxed paper like she did with the aluminum foil. 3. Place the whole batch of filling in the middle of the waxed paper on top of the powdered sugar and lightly press it out with your hands into a roughly elongated oval shape. (use powder sugar if needed, the mix is a little sticky still at this point.) 4. Sprinkle the top of the mixture with a little more powdered sugar to keep the next step's paper from sticking. 5. Place a second sheet of waxed paper on top of the filling. 6. Using a rolling pin, or another suitable substitute rolling device, roll out the filling into a roughly rectangular shape until it is uniform in your desired thickness. 7. Place this rolled out peppermint layer on a cookie sheet and put this into the refrigerator to firm up again. 8. Once firm, remove from refrigerator and take back to the counter. No need to remove it from the tray it is on. 9. gently and carefully pull off the top layer of waxed paper. 10. Cut out the round (Or other) shapes in the peppermint mixture using your choice of cutters, but leave them on the sheet. (Note, a shot glass or a small juice glass is a pretty nice size). 11. Lift and remove the edges (trimmings) away from the circles and set aside, leaving just the circles on the waxed paper. 12. You're now left with a tray of circles or your choice of shapes. Put these in your refrigerator to firm up just like in the video. 13. Repeat steps 1 through 12 with the trimmings and repeat process again until there's little left to roll out. Any trimmings still left can be rolled and shaped such as she has done herein. *** ***If the mixture becomes a little dry, you can add it back to a mixing bowl and add a few drops of the condensed milk or your substituted liquid to bring it back to the right consistency. 14. Continue with the steps she provided in the video for covering with your choice of chocolate.

Peppermint oil can be found in most baking sections of department stores, etc. I also use it to keep spiders out of my house (put several drops in a spray bottle with water & spray around door & window frames, & places spiders enter.) Of course, you don't need the edible kind for this but you might as well! Then, you can also bake with it! Lol!
These would be fun to make in junior mint size as well as the regular peppermint patty size. Thank you for mentioning to use edible pure peppermint oil instead of peppermint extract. 😊
Richard Richardson IV The Third Peppermint oil, as opposed to peppermint extract, will give you that really cool and refreshing mint flavor. You can adjust the amount added if you want more mint flavor.
To find edible grade peppermint oil you can check a health food store. I found some in their digestive aid section. It was perfect as the directions for digestion was 2 drops per glass of water so it was totally safe for use in cooking. There are also some health food places online you can order from. I have made these several times now and they get eaten up fast.
Looks Good! Assembly line fashion would put the chocolate BETWEEN the two pans as you dip each one and place it to cool. I like that little ring tool to dip with - it doesn't hold too much chocolate after you dip. Is that a candy tool?

Stephanie, I want to make coconut Bon Bons like my Grandmother used to make. The outer coating of the bon bon had different colors. Yellow, pink green, brown(chocolate) etc. What should I use to get all the different colors?

Cut with unflavored dental floss. I do the same for cinnamon rolls

Don't forget our Aussie tablespoons are 4 teaspoons (20ml not 15ml) so always adjust for that :)

Yes, you could use heavy cream. You could use peppermint extract although it does not have quite the flavor of the peppermint oil.

You can usually find peppermint extract on the spice isle of your grocery stores. For peppermint oil I order mine from kingarthurflour.

You can, although the peppermint flavor will not be quite the same as when you use peppermint oil.
