Yes, you can skip the corn syrup. You can replace it with honey or maple syrup or I've seen recipes online that just use butter, brown sugar, salt, and a little water. (Just fyi, I've made my caramel corn with half butter and half transfat-free Smart Balance and it came out great) Your question has motivated me to try a different recipe without corn syrup, too. I will post an alternative version if it works.
I made this and it is delicious. Actually, I made it a few times. I discovered that it is way easier to use a "turkey roaster" type of pan because it has higher sides and makes turning the popcorn easier. Also, I put a piece of parchment paper on the pan, allowing ease of turning, plus easy cleanup. The popcorn is highly addictive, and I may have to go to a detox facility because i cannot stop eating it.

I warm my popcorn in the oven for a few minutes near the end of the cooking of the caramel. I cover the popcorn w foil. The warmed popcorn makes caramel spreading much easier and takes less time. This makes way for covering every kernel too. Then, bake accordingly. Sometimes I even add small pretzels and dried cranberries. Yummy!
@MsIchigo93 - I never thought of it but yes, I guess you could eat it without baking since that's how I make popcorn balls. However, it won't have the crispness or the rich caramelized flavor you get by baking it.
This was great! Thanks! The second time I made it, I cooked the caramel a couple minutes longer & skipped the baking step! You get to eat it much quicker.
I just made this and substituted honey for corn syrup, absolutely amazing!!! I actually just came back from a trip to Chicago where I had Garrett's and was inspired to make my own. Maybe it's because mine was fresher, but my husband and I thought mine was better! Now, to replicate their cheese popcorn so I can make Garrett's Mix 😋 I've been wanting to make Carmel corn for years, but was always intimidated thinking I'd burn the sauce. I didn't burn anything, it was absolutely perfect. Thanks for your amazing recipe!
Is there any junk food that's better and more addicting than Garrett's cheese corn? It wasn't so bad when I lived in Colorado and only pass by Garrett's a couple times a year. It was easy to justify buying it then. But now that I'm back living in Chicago, I'm very glad that the Randolph and Michigan store is closed. I have to pass by it every day

Yes that is a great tip! The corn syrup sticks like crazy to everything so spraying the measuring cup with oil beforehand makes it much easier, also for washing up afterwards.

Jenny I tried your recipe and it is perfect!!! I suggest that you pour the whole pan of syrup into the popcorn and cover your bowl with another bowl and SHAKE IT ABOUT. Easy peasy...

I just made this recipe today, following instructions to a T. It's the best carmel corn I've ever eaten. Perfect salty-sweet ratio in my mouth and a perfect crunch. I used 1/3 cup almonds, 1/3 cup cashews and 1/3 cup pecans. Yummy.
The baking pans I use in the oven for caramel corn/roasting vegetables, etc., are heavyweight aluminum-coated steel and are NOT non-stick. I don’t know the brand since there is no writing on them. My pots & pans are all non-stick and I don’t have any concern about using them as long as they have no scratches, so I only use plastic or silicone utensils in them, never metal or wood. Target has a great line of Calphalon pots & pans that I use that’s not cheap but way less than high end stores.
I went to Target today and made a note of the pans I got there. They are Calphalon "Kitchen Essentials" non-stick. As I said, they're not cheap but they're great pans. A 2-quart saucepan costs $40 at Target and a 2-quart Calphalon at Williams Sonoma is $150. (a 4-quart at Target: $50 and at Williams Sonoma: $200

Garrett's caramel corn is very popular & tasty - I've stood in line there myself when I lived in Chicago. As a health conscious person who loves sweets, I always strive for the healthiest version of treats & my caramel corn has less saturated fat, less sugar, & less salt than Garrett's & mine has no coconut oil. As tempting as store-bought is, I encourage anyone who wants to cut back on calories to make this healthier & delicious version. Share it & everyone will ask you for the recipe!
This may be a substitute for Garrett's caramel corn, but nobody will ever be able to replace their cheese corn! I used to hate it when they were on Randolph, right across in my train station. By the end of the week the smell was just too much to pass by, and despite my resolve not to go in, somehow it end up with a bag of it in my greedy little hands, eating it on the train before I get home, then getting rid of the evidence!
I made many batches of this and gave to my friends - they loved it - I keep some in metal cans - which keep it fresh - so far so good 2 weeks later - still tasty! I made more carmel for the top so it coated the popcorn more.

@AbcDailyVlog - Sugar, butter & corn syrup are what caramel is made from. I just omitted the cream to keep it healthier. If you try this recipe, you won't be disappointed. You'll have a healthier and delicious caramel corn.

The saucepan in the video is my old non-stick Berndes but they are getting old so I'll be replacing them with the Calphalons from Target. I still like Berndes because it has glass lids for seeing your food but it's too hard to find, plus the Calphalon has glass lids too.
I made your caramel popcorn recipe. To add some pizzazz, when I took it out of the oven I drizzled it with melted chocolate. So now it's zebra caramel corn. Very easy to do and wow is your recipe terrific. Thank you

Hi @jennycancookrecipes If you don't want to do it in the oven, you can also do it in the microwave. You take a grocery paper bag. Spray it with some Pam inside for your popcorn in, I just pour my plain popcorn in and then pour the sauce over. It. Shake it very well. Well roll it down to put it in the microwave and do it for a minute and a half. Take it out, shake it back in the microwave for another minute and a half. Take it out, shake it and put it in for a half a minute. Two different times. When you're done, you can just cut the paper open and outcomes your caramel corn and have the time it's crunchy before it's even cooled.

I never made caramel corn before, but you made it look easy, so I had a go. I didn't have any corn syrup so I used honey and maybe that's why it didn't look exactly like yours. And I also used cashews because I had some left over. It tasted pretty good, but next time I think I'll make more syrup. I didn't have quite enough to cover the kernels as much as you did. Adding the baking soda sure made the syrup puff up. Big fan. Thanks.
I just did your recipie. Delicious. Worked perfect. I had no nuts to add. What brand oil use to pop corn? What brand popcorn is best? thing I did different was add salt during second stir, because forgot if you use salted popcorn, or did not salt popcorn.??

I made this. I had walnuts in the cupboard so I used them. Delicious recipe. I'm going to make more soon. Next time I may do 1/2 cup of unpopped popcorn. We ate it so fast!
I have my own recipe for caramel popcorn and it is very similar. I add about a tablespoon of honey in addition to the corn syrup. I don't leave mine in the oven that long though. It still hardens just fine.
Jenny--you are not overstating how good this popcorn is! My husband doesn't have any interest in caramel corn and he can't stop eating it!!! Great recipe and wonderful video. :)

If you use the paper bag method, just clip a small hole in the bottom corner of the bag and the unpopped kernels can be shaken out.

I never made caramel corn before, but you made it look easy, so I had a go. I didn't have any corn syrup so I used honey and maybe that's why it didn't look exactly like yours. And I also used cashews because I had some left over. It tasted pretty good, but next time I think I'll make more syrup. I didn't have quite enough to cover the kernels as much as you did. Adding the baking soda sure made the syrup puff up. Big fan. Thanks.

I just did your recipie. Delicious. Worked perfect. I had no nuts to add. What brand oil use to pop corn? What brand popcorn is best? thing I did different was add salt during second stir, because forgot if you use salted popcorn, or did not salt popcorn.??

I made this. I had walnuts in the cupboard so I used them. Delicious recipe. I'm going to make more soon. Next time I may do 1/2 cup of unpopped popcorn. We ate it so fast!

I have my own recipe for caramel popcorn and it is very similar. I add about a tablespoon of honey in addition to the corn syrup. I don't leave mine in the oven that long though. It still hardens just fine.

The reason I don't add the syrup in the pan is because some of it will fall on the pan and I want every ounce to hit the nuts and popcorn.

I can't tell you how long I have admired you. Now the cooking Jenny. You have always let us in your heart and by letting us in your kitchen it's even better! I learned how to cook and bake from my Mother I recently lost and the one thing I miss the most is cooking/baking/making chocolate with her. I would love to be a guest on your cooking show.
