  • Here’s a traditional Iyer Idli recipe for you:
    Ingredients:
    - 6 cups idli rice
    - 1 cup urad dal (split black gram)
    - Salt to taste
    - Water for soaking and grinding
    Instructions:
    1. *Soaking:*
    - Rinse the idli rice and urad dal separately under running water.
    - Soak the rice in enough water for at least 6-8 hours.
    - Soak the urad dal in another bowl for 2 hours.
    2. *Grinding:*
    - Drain the soaked urad dal, then grind them to a smooth and fluffy batter, adding water gradually. The batter should be light and airy.
    - Next, drain the soaked rice and grind it nicely , adding water as needed. The rice batter should have a smooth and airy.
    - Combine the ground urad dal and rice batters in a large bowl. Mix well with your hands to incorporate air into the batter, which helps with fermentation.
    3. *Fermentation:*
    - Cover the batter bowl with a cloth or lid and let it ferment in a warm place for 8-12 hours or overnight. The batter should double in volume and become airy and bubbly.
    - Add salt and mix again.
    4. *Steaming:*
    - Grease the idli molds with a little oil.
    - Gently stir the fermented batter. If it’s too thick, you can add a little water to get a pouring consistency.
    - Pour the batter into the idli molds, filling them about 3/4th full.
    - Steam the idlis in a idli steamer or pressure cooker (without the whistle) for about 10-12 minutes on medium heat.
    - Check if the idlis are done by inserting a toothpick or knife into one; it should come out clean.
    5. *Serving:*
    - Remove the idli stand from the steamer and let it cool for a few minutes.
    - Use a spoon to gently remove the idlis from the molds.
    - Serve hot with sambar and coconut chutney.
