    how to keep after grinding to get proper fermentation in cold weather where it 35-55 F.

      Basic requirement for fermentation is a warm temperature. These tips might help you.
      1. Mix the batter well with your hands. The heat from the hands will aid in fermentation.
      2. Wrap it in a blanket and leave it for fermentation. Use a big vessel so that the batter does not overflow and make a mess.
      3. Switch on the oven lights and keep it inside the oven. Leave it there for a day
      4.Another option is - you can pre heat at very low temperature for 10 mins. TURN OFF THE OVEN. Switch on the lights alone and leave the batter for 15 hours or more.
      5. Keep it near a room heater where it is warm.
      Let me know if any of the above helped you after trying it our, so that it will be useful for others living in cold places.
      I am in South India, where the weather is hot, so fermentation is not an issue at all.

      @@Padhus-kitchen I am from chennai too but currently living in US so it is cold during this period yesterday i tried, it was ok but it didn't get fermented. Next time i will try your tips and then i will comment on this .

    I also use exactly the same measurements. I get very soft idlies for past 18 yrs. 👍
    I always use only cloth for preparing idli. That tastes very good.

    Nice explanation. I do in the same way for the last 35 years. I started with aattikallu 1 st then to a grinder which is so big. Now table top. Soft idli s very good for health.

      Actually Air should enter inside the batter, air will convert batter into fermentation. Mix batter DOWN TO UP in hand for 4 to 6 mnts.

    Superb 👌👌👌👌👌 Mam your way of explaining the method to fellow is excellent & easier to catch the tips if you go wrong Mam mostly use baking soda is it optional because I am south Indian lady but boen & bought up in Mumbai 3 yrs back I turned back to Chennai mostly people prefer to cook idli or dosa easy & fast to cook & it's healthy too.     Most of us dont have a wet grinder.We use a mixer grinder. Pl show how to make fluffy idlis using the mixer.

    3 cups idli rice or boiled rice, 1 cup urud dal, 1 tsp methi seeds, half cup poha...this is for grinding in a mixer

      @@soniajuneja9256 - Yes that is the link to buy, if interested. I am using only ultra grinder with conical stone for more than a decade. It has not given me any issues. Recently only I changed the grinder (again ultra only) because that has not given my any issues. I have no idea, if round stone is better than conical or triangle shaped stone.

      @@Padhus-kitchen Thank you, One Q on coconut scrapping - Like we are not that used to - to break the coconut, scrap, and make chutney every day due to morning rush hours. Is there any way to store the scraped coconut or whole coconut? or how to store the chutney

      @@soniajuneja9256 - I store the grated coconut in a freezer safe container in the freezer. If you find it difficult to grate coconut - you can follow this - after breaking the coconut - with a knife scrape and remove the flesh - put it in a mixie and blitz it for few seconds. You can store that in the freezer. But coconut chutney will be good only with freshly grated coconut. You can use the stored coconut for other dishes.
      Another alternative is - if you keep the whole coconut in the freezer, it will come off its shell easily. Then you can cut it into small pieces and blitz it in the mixie.

    Madam,
    What I loved about your video is, you explained the process perfactly unlike 90 percent of people who post their videos.
    Another unrelated thing I loved was you used the word Ground instead of presently video posting people say Grinded.😂.
    I am a professional chef in USA who introduced different idli, dosai Pesrattu, adai batters in Texas. I retired recently and happy to say the company is making batters in tonnes a month.

    One of the best video madam.. I’m a beginner in cooking.. I’m using the same grinder .. pls share the time to grind Urud dal n rice..

      Approximately around 30-40 minutes for grinding urad dal. It should be light and fluffy.

      Thank you. You can keep the batter for 1 week in the refrigerator. It will turn sour after that.

      Yes you can. Rice is not an issue. Urad dal has to be fresh.

    I always clean rice n daal nicely but idli colour is dark not as white shown in video .
