    As far as my knowledge goes the secret ingredient is Methi / Fenugreek seeds grinded with urad daal and rice makes the fermentation process fast.

    I live in Melbourne..and I always add poha to my idli and dosa batter..still it takes more than 24 hrs to ferment the batter..
    U can add poha for soft idli and dosa also soak poha for atleast 30 mins before grinding

      I live in Boston so it takes 24 hrs to ferment. Add salt after grinding and keep the batter in the oven with oven lights on. That’s the key

      Yogurt menu in Instant pot is the best option for faster fermentation. It is a boon in cold countries

    You can also add a handful of cooked rice also soaked with the normal rice. Or some people add sago with rice before soaking.

    Wow Super and Delicious 😋!!. Only suggestion maybe to use cast iron pan as the teflon pans are bit risky to health once teflon layer starts coming out.🙂

      Yes, we can use Cast iron pan for Dosa. However, we have Induction in kitchen so can’t use it.
      You can make dosa on it, if you have.

    What other rice can you use if no sona masoori rice is available. We get only Basmati rice and long grain rice. Parboiled rice is not even sold anymore. Thanks.

      Hie! You may use Ponni rice or regular raw rice, such as short-grain white rice as a substitute.
      If you can't find any of the above options then you can use Basmati rice.
      However, keep in mind that the texture and flavor may differ slightly from idli rice, so the results may not be as authentic.

      Hie! We have added sugar to make crispy Dosa. It’s completely optional if you want to skip it. 👍🏻😊

      She means one additional ingredient 'poha' (flattened rice) which helps in fermentation.The other 2 ingredients are essential while making idli/dosa

      Poha is the "one ingredient". However Poha is known to give a softer texture. To ferment you need a warm temperature continuously for 8 -10 hours.
