  • I brought home some Porgy otherwise known a Sea Bream and made some delicious soup! Good way to use the leftover bones after filleting a fish! Definitly try it out if you get the chance.

      @@ErthBeer haha hard to say because most are probably good, or at least appeal to different peoples taste. In many senses, there are many fish in the sea. I used to think tilapia sucked because it’s very mild, but I like it now since I’ve tried making it different ways (grilling them whole and cleaned on charcoal can give nice, flavorful results if you’re not squeamish about eating around bones) the fact that it was half as expensive as the trout I also cooked while also being a little larger was definitely a plus. But marks channel is cool because he highlights a lot of fish I wouldn’t think to even try, and I appreciate the inspiration

    Hey Mark, I’m really glad you made this video cause my godfather who happens to be quite a big fish eater, told me that sea bream is the worst tasting sea fish because they eat tons of seaweed. But now if I see some fresh in the store I’m definitely gonna buy some and chef them up

      You must always be careful about using common names for fish, it can cause confusion. The fish in this video eats squid and crustaceans, not seaweed.

      @@amb-yz9ee yeah that’s why I’m happy to learn that they mostly feed on shellfish. (Although according to Wikipedia bream occasionally eat some plant materials too) My godfather probably had bad ones.

      @@vincebaranyay2522 bream is a common name, when you look them up on Wikipedia, you have to be sure you are looking up the correct fish. Those are porgy, which are a large family of crustacean eating fish.

    Scaling tip from Hawaii. Fill da sink with water to scale fish underwater. This will keep scales from stinking up the kitchen.

    quick tip mark, if you wanna core the cabbage quicker without a knife, you can grab the cabbage and slam it on the counter, stem downward and then you can just pull it out.

      @@ErthBeer Each breed has interesting qualities but within each breed it is the ones which strike balance between wild characteristics or behaviour with the human connection or affection. Quite frankly, a good measure is litter box dependency because in my colony they maintain a natural instinct to urinates and defecate far from where they live, eat, and sleep - way out in the landscape. Also, I have a good hunter who feeds the weakest when I miss a feeding. By far he is the head of the colony and he disciplines and defends with tactical but fair punishment. His name is Kim Jong Kat.

    Maybe you could talk about some of the many types of Japanese knives sometime because there are many that should never come anywhere near bones, even fish bones. The steel is so hard that it can chip easily when used for the wrong purpose.

    Another great video Mark , down here in Melbourne, Australia we catch 3 species of Porgy in the Sparidae family and they are all classed as top eating fish. Especially for Asian style cooking whether steamed, fried with different sauces or grilled usually whole although some use our local snapper which is like the Japanese red sea bream or European dentex also great fun to catch and cook. My Vietnamese colleague said the whole family would fish with rice paper roll ingredients and as they caught the black bream grandma would cook them on the fire and Aunty would roll the meat into rice paper rolls with a dipping sauce and they would be eaten as they were caught.     Looks great! Lots of Asian countries have great fish soup and the special ingredient is always the head! It drives me crazy when I see people throw fish heads out instead of using it!

    It could be called "simple song" because when used properly, it is technically like an instrument while cooking and prepping. Like the sounds it makes as it Slashes, scrapes, cuts, cracks bones, and chops. In that regard, cooking is like a song as old as time, and unique based on the type of cuisine and how you learned to make it.

    Dang 6 o clock it’s dark in Georgia in November huh. It gets dark around 4ish here in the pacific northwest in November. Another great video. Thanks for sharing. We are blessed here to be able to harvest Dungeness crab and salmon.

    Found your channel recently and enjoying your content. Your soup was a little too, “busy” for my personal tastes but hey.
    I used to catch small porgies(about hand sized) in my area which were called sand porgies. If you go out to Montauk on a fishing boat you can get jumbos which get upwards to 18”-20.”
    Best thing about porgies (besides the taste!) is they are so much fun to catch. They put up a great fight and are voracious feeders. Just remember to use small hooks because their mouths are small.

    I absolutely love that you care for the cats. That is very amazing. Please leave them fresh water out not tap water. Pet them with the back of your hand and they will enjoy it more haha.
    Try to be sure they get fixed/spayed - I will even donate to help if needed.
    It is nice to put anti-choke collars on them with Airtag attachments to the collars as well.

      @@zyrtor1 done it many times and a lot of these aren’t very feral from the vids. Just an idea to track them it’s nice and they’re only 25$. Main thing is to have them fixed/spayed to not repeat the cycle

    Your videos keep getting better all the time. I think you're going to have a very popular channel. Hey, I made a meal the other day with some green onions and I rinse them off and after I chop them up and added them to my pan my spatula started making a noise on the bottom of the pan because there was sand in the darn green onions and it ruined my meal. First time that ever happened to me. I cook most of my fish on the Panini Grill, I'm going to start using some of your tips to try different ways.

    Being from nyc queens to be exact theres not too many fish i could catch and cook..There’s four .Black fish (tautog) Porgys fluke or summer flounder and sea bass…Porgys are great eating just too many bones

    not sure if its the same species but it looks the same... used to catch these fishing off south florida like miami / homestead area and they where really good... along with grunts... anyways you kind of remind me of fishermans life (if you ever seen his channel you should lol)

    Its very easy to break open some of the guts when you're opening the fish up, the green bile will contaminate the flavor of the belly meat with fishy and bitter taste.
