    That was a very good attempt at a banh xeo. Good job on adding beer to it. Any carbonated liquid will make it crispier. My mom used to add coconut soda to her batter.

    I've never been out of the states, but I've always had chickens! Non-refrigerated eggs is the usual. If you have to refrigerate your eggs, they have been through a wash that removed the natural, protective bloom and/or are old!
    That clam opening technique was awesome! I will definitely try next time I forage some cockles!

    Hey Taku
    I am impressed with the bánh xèo. As for the fish sauce, you may want to add some sugar. It would give it a little sweet, salty, and sour taste. My wife’s recipe for fish sauce is 1/3 fish sauce, 1/3 lemon juice, 1/3 sugar. You can also add some chopped garlic and chilies.

    • @billyb9067

    My family is from Central Vietnam. Growing up, we ate Banh Xeo with a Peanut sauce, and we eat it with a fork and knife.
    Vietnamese people from other regions wrap the Banh Xeo up with springroll wrappers, and then they dip it into a Fish Sauce.

    Taku, to get it crispier you need to double the amount of oil and put a cover on top (doesn't need to be sealed but enough so the top side of the Banh Xeo will cook as well). After 4 minutes, take off the cover, fold the Banh Xeo in half and depending on how crispy you want it cook for 30-60 seconds each side.

    • @vengefulspirit99
      @vengefulspirit99 ปีที่แล้ว +3

      This exactly. It is also okay to turn the heat down almost all the way. This allows more time for the Banh Xeo to get even crispier without overcooking the toppings.

    • @ziggybender9125
      @ziggybender9125 ปีที่แล้ว +1

      Less oil can be better for your health in dishes that absorb it though, his is still crispy just not next level crispy

    Hey Taku, been enjoying your and Jocelyn's travels for a few years. Not one to comment, let alone comment on the comments! Purging clams and other filter feeders is awesome! I prefer to use ground black pepper or fine ground white pepper as it accomplishes the same thing, and imparts pepper flavor! Writing you from the Maisian Coast (Midcoast Maine) which is my mission - get Americans to eat all the seafood that we have here. Peace and Love!

    My family and I lived in Huntington Beach, California in the latter-half of the '70s. I remember Mom would use, what looks like, a huge fork. She would poke it in the sand. When she hits something, that's a clam. A store owner in Newport Beach, California gave her a ring. If you can pass a clam through that ring, it is too young and you'd have to put it back.

    Every time you say cockles all I can hear in my head is Denis Leary's song called "Asshole"... "way down in the cockles of the heart, maybe the sub-cockle region, maybe in the kidney, maybe even in the colon..." :P Cheapest hack for getting clams is to use a slotted litter box scooper to sift through the sand. I love pomegranates.. We've got a tree in our yard and I pick them and pick them apart every year. There's still a whole gallon or two of kernels in our freezer waiting for me to figure out how to squeeze them and make syrup or something out of them. I ate a ton of them this year, a couple gallons of kernels.. They're really good for you and a really good snack for someone that's on high blood pressure meds, they have more antioxidants and vitamin C than oranges and are good for your kidneys and liver which is important with all these meds wreaking havoc on my system.
    Something I'm looking forward to trying soon is bolani, Afghan flatbread. They typically serve it was a yoghurt sauce but I don't know about that as I'm not a yoghurt fan.. and I'm pretty lactose intolerant these days thanks to my IBS. I think I need to find a meat recipe to go with it and find some nice rice I'll actually eat too and use it to pick up the meat and rice and basically make little tacos. It's very similar to naan and how the Indians eat curry. The big plus for me about Afghan food is while there's a lot of flavors/spices it's not super spicy.
