2 (16-ounce) Certified Angus Beef ® ribeye steaks
2 1/2 teaspoons coarse Kosher salt, divided
1 teaspoon fresh ground black pepper
2 medium yellow onions, diced

@@trvman1You don’t need the expensive rib eye for an authentic Philly style cheesesteak. Most cheesesteaks in Philly are made with the cheaper cuts like eye round, top round, etc….in my opinion it actually has a stronger beefier flavor than ribeye. I’ve done A/B comparisons of ribeye and cheaper meats and have found that the cheaper cuts actually taste better in the category of sandwiches

Love the charred crispy edges on everything. I put it all on fresh Cuban rolls from the bakery. It was delicious. I thought I had Provolone but was out so I used Fontina which is such a great melting cheese. 10 stars and so easy.
If you want it authentic philly style, which created it, you gotta go yankee and use Cheese whiz. Otherwise you're making your own version of cheese and steak.
I grew up in Philly and traveling outside of Philly I’ve discovered there are some good cuban rolls match well as a cheesesteak roll.
@@humanonearth1Cheese whiz is terrible and is probably the biggest food error in Philly history. The good news is some Philly places are trying to correct that error by making their own cheese sauce

Holy crap! This was basically perfect execution of a cheesesteak...all-important is the white American cheese...it melts with the juices from the steak to make a sauce to die for - the OG cheesesteak cheese - everything else is a steak AND cheese sandwich! Bravo.

Philly native here. I've seen most of these on TH-cam and usually they butcher it, pun not intended. You did a damn good job. I can't blame you for not having the right rolls as they're a local thing, and getting harder to find even here (I'm just outside the city). There are quite a few different ways to make these, but everything you did was acceptable. Very well done 👍

I made cheesesteaks in Philly back in my youth. I agree, more cheese - using white soft slice is good. Keep the toppings separate until filling the order (ie. do not cook the meat with the onions and neither cook the meat where the onions were cooked). The meat look overcooked and seared - a definite no no. It's a 'minute steak' and cooks quickly. I never toasted the roll on the griddle. I hate that flavor profile of butter and bread charred. I'm sure 99 out of 100 Philly folks don't like it too.
Spicy? Cherry peppers works for that.

As a Philly native, that's how it's done. Cheese on top of the steak, then roll, then the long metal spatula under everything and flipping it over. Perfect.

OMFG that looks soooo crazy good i had the best medium ribeye here at my bday dec 21, i havent got a ribeye sooooo thender and tasteful and you could just use a butterknife to cut it out with, and then with baked potatos and vegetables that have been grilled with defrend spicy/herbs butter and a homemade bearnaise sauce OMFG that was sooooo heavenly hehe
made this with leftover roast, brilliant to cut on waste, and delicious🤤🤤

This is like, a perfect cheesesteak recipe. Meat, cheese, onions, and bread. Nothing fancy, just quality ingredients done right. I hate when you find recipes that add in so much other stuff. I know Philly likes to add peppers, sauce, and other stuff, but when people think cheesesteak, this right here is what they want.
It's not philly people that add peppers and sauce, it's everybody else that tries to replicate the cheesesteak from out of town
Philly does NOT add peppers, only pizza sauce if it’s a pizza steak
Whoa whoa whoa... We do not add sauce and as for peppers, they aren't typical but when we DO use em, they're NEVER bell peppers. If I'm in the mood, I'll do banana pepper rings, sweet peppers or cherry peppers.
Nice sandwich you made here. 1 mistake. In philly, we almost never toast our cheesesteak rolls. A Philly cheesesteak should have a soft bite with the cheese melting into the soft bread. One reason we don't toast the bread, is because the bread is the co-star of a real philly cheesesteak (next to the ribeye). Good cheesesteak rolls are not just hoagie rolls available anywhere. Amaroso brand rolls are good mass produced rolls for a cheesesteak. But many of the best cheesesteak joints in philly either source from local area bakeries or bake their own.

That said, I think not only was toasting the roll wrong, but the grill too hot, and the seasonings were added too early. Also the cheese gets flipped onto the grill.
** Yes I stole that info from another video, but after living in the area and eating probably a thousand of these things in my life at most of the best spots in and around the city I think it was the correct information.

Yes indeed...Grew up in Philly and every time I see people making cheesesteaks outside of the Philly area it's always a bad roll with onions the wrong kind of beef and green peppers. I'm not kidding there is a sandwich shop near me that makes their "philly cheesesteaks" with roast beef.

Roast beef is a no no but green, red, yellow or orange peppers in the onion sauté is really good.
It's awful isn't. You can't find a hoagie roll anywhere.
I went to the Poconos and they had jumbo hot dog rolls for hoagies and cheesesteaks 😆

You can use normal pan it will have different crust tho

I usually make my steak sandwhiches from sirloin rump tips. VERY tender and flavorful as well as very affordable. Hell it's pretty much all I have when I make steaks now as everything else is just so damned expensive thanks to our new idiot in chief
Here in the US, one of those Ribeyes would be about $40-45. At least where I live.
That is just the natural high tax price of the UK.
Sirloin is actually more common. Most ppl in Philly get cheesesteaks from pizzerias, which use sirloin. Cheesesteak shops tend to use ribeye, but they're far outnumbered by pizzerias here and almost never deliver. You can't get our rolls outside of the Philly area so I'd imagine a fresh baguette might be the best option for you.

Agreed. Internet recipes seem obsessed with making buns crispy. But amoroso rolls are SOFT.
I agree. The roll should be soft but a little crunchy too like a freshly baked Amorosos roll or it could be one of those more crispy rolls like the Sarcones Bakery type in South Philly which I think is better. If you live in a southern state, some of rolls from Publix supermarket are actually pretty good. Or if you live in a Vietnamese community some of the rolls for the Bahmi sandwiches are not too bad either and have a similar texture. Also some of the rolls for a Cuban sandwich can possibly be a good substitute. Best to visit South Philly to try multiple hoagies and cheesesteaks to get a feel for how a Philly style roll is like. Some of the rolls in New York City are decent too
I have never had the roll toasted and I've eaten Philly Cheese Steaks for years. Never seen fat used to fry the beef either. They use Olive Oil.
You get more flavor using the fat. Beef tallow is used all of the time. Even in restaurants. It has a higher smoke point

What’s a Philly cheesesteak then? In Northern California it’s all over the place but I like the shaved sirloin with provolone and grilled onions with pickled sweet and hot peppers. Can’t find many places with the shaved ribeye out here tho

I haven't lived in the Philly area since 95. I definitely miss the cheesesteaks. The only thing that triggered me was even the suggestion of cheese whiz....
Main Liner (Philly suburbs) here, he actually gets it right. Other than grilling the roll (my places put them in the oven), and not shredding the steak more, that's how it's done. He got the construction, the second most important thing after the quality of the roll, dead on.
Awesome just made it ,dont have American cheese or provalone available so used a.mix.of cheddar ,Gouda and mozzarella and it was awesome
