This better than bakery sponge cake recipe is light, airy, and just straight up DELICIOUS! It’s so versatile that you can pair it with literally anything. I love filling mine like a classic Victorian sponge cake with my homemade raspberry filling recipe and whipped cream - YUM!
HOW TO WHIP EGGS: • How to whip egg whites...
    INGREDIENTS:
    Sponge Cake
    - ⅓ cup (40 g) flour - regular, all purpose (see note 1 on blog post)
    - ½ cup (60 g) cornstarch
    - ¼ tsp baking powder
    - ¼ tsp salt
    - 4 large eggs - whites and yolks separated
    - ⅛ tsp white vinegar
    - ⅔ cup (132 g) white granulated sugar - separated in half (1/3 for the egg whites & 1/3 for the egg yolk mixture)
    - 1½ tbsp warm water - not boiling
    - 2 tsp vanilla essence/extract
    - 2 tbsp (30 g) unflavoured vegetable oil - I use canola
IMPORTANT: Cake tins must be ungreased (with only the bottom lined), and ensure the cakes are cooled upside down once baked. Bake at 160 °C (320°F) with the fan on for 25 minutes. If your oven doesn't have a fan option, then you will need to increase the baking temperature to 175°C (347°F).
Simple Syrup (I use about 3/4s of the quantity below to brush the cake)
    - ½ cup (100 g) white granulated sugar
    - ½ cup (110 g) boiling water
    Whipping Cream
    - 2 cups (375 g) cold whipping cream
    - 2 tsp icing sugar - also known as confectioners sugar/powdered sugar
    - ½ tsp vanilla essence/extract
    - 1 punnet fresh strawberries for decorating - sliced in half
    Raspberry Jam
    - 1 batch of my raspberry jam filling recipe: cakesbymk.com/recipe/raspberr...

Girl, if knew where you were i’d go personally take you a gift because this video helped so much. As an amateur baker, believe me when i say i’ve been through many sponge/white cake recipes and this is the only one that has never failed me on any aspect, even without a professional mixer. Done it multiple times and it always turns out perfectly fluffy, light and no sinking on the top. I’ve tried it with several fillings and frostings as well, and my personal syrup, and it always slaps. 10/10

@@CakesbyMKI've never made a cake before & I zam the Marie Antoinette cake Lover!!!!
I have horrible cake habits. I eat 4 or 5 whole cakes by myself a month...😮😮😮
      I can't help it....oh w Ice cream
No I'm not a diabetic thank Goodness or I would of been Dead.
I do have have Hyper para Thyroidism & Multiple Myloma
I'm not Heavy you can tell I eat too much in my face if you knew me. But that's it the hyperthyroid turned me into a eating machine. The pain from the cancer is my excuse to treat myself.
Anyway I never baked but I'm gonna by pans & stuff & try because cakes are sooo expensive & I get too little sponge - mounds of butter cream or nice sponge - fake butter cream.....fake meaning granulated sugar frosting....yuch. I don't like crunchy cream .
So I have to convert your measurements to teaspoons, cups, etc etc I will return in a week or so I have to get the ingredients incl pans so & rest 2 days after I shop. I look forward to trying so I can stop buying cakes that don't hit the right Notes.........
Meet you back here in 5 days with an update...
      I'm excited to try

I made this cake and it truly was the softest and spongesist cake.
The only thing I would change is I would not put vanilla in the cream filling and put less sugar in the syrup, and that's to everyone's own preference, of course.
I am making it again today but will be doing a apricot/pineapple filling.
Go ahead everyone and give it a try, you won't be disappointed!!! ❤

For the first time in my life I’ve actually made a sponge from scratch and OMG thank you so much, it was brilliant. Who says you can’t teach an old dog new tricks 😂. Love your videos. ❤❤❤

Have made it a 2nd time just to see if first time was a fluke….nope 2nd one was just as perfect as the first, so anyone who thinks they can’t make a sponge, give this one a go and you’ll surprise yourself at how you created something so beautiful

I have to say the lemon curd taste amazing. One time I ran out of cornstarch so I replaced it with custard powder instead and it turned out well. Thank you MK for sharing your recipe

Made this with my three year old son and it turned out so good! We actually over whipped the egg whites and the cake deflated after taking it out but it was still delicious and seem to have plumped up after adding the syrup and whip cream. I guess it's a somewhat forgivable recipe. Thank you so much for sharing! I'm obsessed with your recipes.
