Afaik, only when you are making chiffon / cloud like cakes that you shouldn't grease the sides (to let them climb). For regular cakes, it's better to grease / line with parchment if you want them to not stick to the sides.

I'm making a four layer birthday cake on Sat 31 Aug for someone who is lactose intolerant and cannot find a dairy free frosting recipe anywhere and products are not readily available in our out of the way place. Can you suggest what I can use to fill, frost and decorate my cake please. Last year I used dairy free margarine and its not nice. Absolutely love your site - happy subscriber. xx

People who have turned my frosting recipes vegan/dairy free usually use vegan butter and a vegan milk alternative, but you mentioned that those products may be hard to find. I can't really recommend anything at this stage sorry :(

Thanks so much Patricia! :D With sponge cakes, I would recommend not greasing or lining the sides (as recommended in the video) regardless of what type of tin you're using (although you want to avoid using non-stick pans for sponges), otherwise the sponges will deflate :) Hope that helps and hope you enjoy the recipe!

Hi there! :) You could totally do that (I usually use a simple syrup, like in my vanilla sponge recipe), but when I made this cake, I felt the syrup wasn't needed and the sponge with the cream was moist enough on its own :)

It would be so wonderful if you could create healthy "cake", "filling" and "frosting" recipes and even do a "series" of videos on your channel covering healthy versions (including all the recipes you have already covered in your previous videos). It's an Italian cream cheese with very high fat content. You could maybe try to substitute with regular cream cheese
