NO SPEND Pantry Challenge 2023 Week #2

  • It's Week #2 of my PANTRY CHALLENGE! My goal is to feed myself and my husband by just using food from our PANTRY and FREEZER for the entire month of JANUARY or maybe longer! I plan on spending NO MONEY for the month. Other goals in the challenge are to use up older (or less popular) canning and pantry food items that are at or near their best before dates or have just hung around for too long. I created a pantry full of foods that I want to use and plan on using at least one ingredient in each meal!
    In this video I try a viewer suggestion along with some tasty BREAKFAST RECIPES, LUNCH RECIPES AND DINNER RECIPES! I love all of the great suggestions! It really does help me come up with interesting meal plans for the week. I hope that everyone gets a chance to read through the comment section! It's a goldmine of great ideas! Thank you all so much.

    Hi! Welcome to Week #2 of my 2023 Pantry Challenge! I really enjoyed reading everyone's awesome ideas last week! What amazing suggestions! I have a ton of great ideas for this coming week 🙂 I'd really love some ideas for using up PREPARED RANCH DRESSING. All the recipes I find use powdered ranch dressing mix 😕 What's your favourite way to use up this dressing? There has to be some great pastas or slow cooker ideas out there! Also, does anyone use YELLOW SPLIT PEAS for anything other than split pea soup?!
    I had problems sprouting my mung beans in my very chilly house 🥶 (it is January!) so I'm so glad to see some ideas for using them in recipes without sprouting them! I'm going to try sprouting them with a seed sprouting heating mat this week!

    I just need to say that I really appreciate how you do pantry challenges! Most people just cook whatever they would normally using things they have, with no restrictioins. But you make a use it up pantry with some really random things and I think that makes it way more fun to watch! I hope that makes sense. It feels more like a challenge since you're using unusual or random ingredients like mung beans!

      I love putting together some shelves of items that have been sitting on my shelves for a long time in order to focus on using them up! I have a habit of buying interesting things and then not using them 😂 I’m so glad you enjoy the ingredients!

    I know what You mean about couscous. Toast it in bit of oil stirring til light-golden & then add water=whole new dimension

    Oh my gosh next time you need to use up saltines you can melt chocolate and caramel onto them and it makes the yummiest treat and so easy. The salty crunchy cracker just works!

    I really do love watching your pantry challenges/freezer challenges. In the last 6months I've managed to clear out those obscure things in my fridge and freezer by focusing on just one item to get rid of in a meal (much like you do!). Thanks!!

    Hi Jessica, if you want to use your corn flake crumbs, make ranch chicken. Use the cornflake crumbs, add dry ranch seasoning and some Parmesan, the shaker one will be fine. Use any chicken, but chicken breast works best. Soften some butter, then coat the chicken in the soften butter, then roll in the crumb mix and bake in the oven until golden brown.

      Unfortunately I don't have the dry ranch seasoning :( I only have the prepared dressing. I know that the dry seasoning is a really common ingredient in a ton of recipes and that sounds amazing! I'm trying to come up with some kind of recipe mash up! LOL

      @@JessicaWanders I'm sure you could come up with a dry ranch seasoning with a lot of spices from your cupboard that would be similar enough... Google it !

      I just use the made up ranch dressing and then the corn flakes and parm and bake. It’s delicious

      @@JessicaWanders I use prepared ranch dressing to make chicken. Instead of using an egg wash I just dip the chicken in the ranch & breadcrumb coat as usual. I’m sure the ranch dressing with the cornflake crumb coating would be good in place of breadcrumbs! If you have bacon bits, I like to add that as a topping with the ranch chicken as well

    You can use that pancake mix to make biscuits or other quick breads. Just look at Bisquick recipes and sub the pancake mix for the Bisquick. I wish my husband was a soup person. I love soup anytime but he only likes in our short little winter.

      I’ve never tried to use pancake mix to replace Bisquick! I’ll have to try that out 👍🏼😃 Ohh I’m always a soup fan! I am lucky he enjoys it too lol

    A faster way to use pancake mix: mix the pancake mix, pour it onto a sheet pan, top it with berries and bake it in the oven until a toothpick comes out clean

    Another great week. The peach pork chops idea was fabulous. Pork pairs wonderfully with a sweet fruit. The casserole with the mashed potatoes/stuffing looked great. The mushroom gravy over the salisbury steak looked great. Great job. Those meals certainly didn't look like any hardship. In real life sometimes people just want/need to make a simple meal. I'm glad you show them too. Soup is the perfect way to use up extra crackers. Looking forward to next week. Be well. Melanie

      @JessicaWanders Those are the meals that encourage everyone that they too can do a purge. It might not be a no spend, it might not be a month long. A simple inventory of supplies to make decisions of what needs to be used up is something anyone else can do. It can literally be as simple as making tomato soup to use up crackers that need to be used asap. I love when ideas inspire others to try. Awesome week.

    Just add water? Add milk instead. Easiest way to elevate a box. Whatever says to add water and oil, add milk and butter if you can. A lot of people in North America complain about cake mixes and I never understood why, since in Brazil they taste pretty similar to homemade cake. But then I found out the instructions ask for WATER over there instead of milk like they do here and it all made sense.
    TL;DR: Add milk to your cake/pancake mixes instead of water. Whole milk, preferably. They'll taste better.

      Thanks for the idea! I often buy the “just add water” for when we are camping because they are the easiest and I do enjoy them even if they’d aren’t too creative 👍🏼🙂 I’m definitely going to try adding milk to see if I like it! Maybe use up some of this powdered milk lol

    Great video, Jessica! I do have some recipe ideas I have tried from Pinterest using bottled ranch dressing (family approved):
    *cheesy ranch potatoes
    *loaded potato ranch chicken casserole
    *chicken ranch tacos
    *chicken bacon ranch pasta
    Also, I have made Buffalo chicken pizzas using a mix of Buffalo wing sauce and ranch as the pizza sauce on the base layer. Ranch dressing mixed with Buffalo wing sauce or hot sauce makes a great dipping sauce for sweet potato fries, breaded chicken bites, wings, etc., as well as a sandwich spread.
    You could use some of your tomato sauce and pasta to make a tomato macaroni soup. I use chili seasoning to flavour mine. Add beans, ground mince of some variety or leftover meat, and any veg you'd like to make it your own.

      @Jessica Wanders You can certainly mix ranch dressing into mashed potatoes. However, the recipe I make involves cutting peeled potatoes into chunks or cubes, coating them in the ranch dressing, and then baking them in a casserole dish. Once they are very close to done, you top with cheese and finish baking for 10-15 minutes more, resulting in a cheesy and delicious flavoured potato side. So good!
      Also, I have taken leftover mashed potatoes (and any other leftover cooked veg that mashes done well, like carrot, turnip or squash), added ranch dressing, egg etc, to make potato pancakes. The downside is that you need to add extra flour to soak up the extra moisture from the salad dressing. Dry ranch seasoning works better because it doesn't add the moisture. But ranch dressing will work!

    My parents use to use stuff in such rolled in rouladen with mushroom soup or bbq on top in oven . Delicious. I use crackers for bind in hamburgers,meatloaf.... but there is a cake u can make with saltines and whip cream. Sounds gross but good. My sil made it. So many ways to make it. Nom nom

    You can use the oatmeal with frozen fruit to make breakfast muffins, may be able to use bud quick in that as well. You can use pineapple for Asian meatballs with ground pork, beef or chicken or just with chicken!

    In the south USA we make a cracker salad using chopped tomatoes, onions,and saltines with a creamy mayo dressing. You should try it,its delicious!

    We use stuffing mix on days I don't feel like cooking, for an affordable at-home version of fast food. I just make the stuffing like it says on the box and we put it in a bowl topped with canned corn, green beans, and whatever meat we have that is already cooked or canned, and serve it with a side of canned cranberry sauce. My kids call it Thanksgiving bowls, and it's one of their favorites. It has a lot of sodium, but probably still less than if I'd stopped at McDonald's, and it's faster and cheaper because it takes less than ten minutes to make the stuffing and open some cans.

    All the meals looked yummy. I've made the meatloaf (but we do mini's in muffin tins) with Stove Top and it's always good. We add a bit of A1 sauce to the mixture and lessen the water on the Stove Top box to 1 cup. Add 1 lb of ground meat of your choice. It's always tasty. The peach pork chops appealed to me the most, as I have canned fruits that need to be used up. I'm thinking that might be good with chicken breasts or thighs too. Oh, and your squash pickles with the tuna made my mouth water. Thanks for sharing!

      It's so popular that I can't believe I haven't tried it! The Salisbury steaks were very good and kind of like little mini meatloaves so I totally think that it would be great as a whole meatloaf!! :)

    I have wanted to try to stuffing mix and meatloaf. I think it’s on next weeks meal plan. I saw your rice and beans and all those tomato products and thought sausage…jambalaya. I have cooked chicken going on my meal plan next week. After seeing your biscuit mix, chicken and biscuits or chicken soup with drop biscuits. You are giving me ideas for myself in this one. A simple pasta, meat, and tomato sauce sounds good too. Maybe Stromboli on Friday for us with homemade dough. You can put anything in those! I need to write this down, I’m old, I forget. Put chicken, entire pack of stuffing with condensed soup of your choice and cook for 8 hours on low. Just dump it all in there. Good luck on deciding what to make. Look forward to seeing it!❤😀

      I definitely will try stuffing mix in a full size meatloaf! I think it turned out really great and was so easy! I was considering chicken and biscuits too

    I sometimes coat chicken breasts with mayonnaise then add Parmesan on top. It is surprisingly good. Maybe it would work with the ranch. Or mix ranch and mayo together to make the ranch thicker so it sticks to chicken breasts. For stovetop there are recipes on Pinterest for stovetop spinach balls. I made them for Christmas once and everyone loved them. Still stuck at home unable to get negative Covid test so we are eating from freezers and pantry. Wonder how long this is going to last! If you have a lot of saltines to use up you could make Christmas crack.saltines, butter brown sugar and chocolate chips. Super easy. Again check out Pinterest for recipe.can’t wait to see what you make next week

    Ouuu there is a fry that newfies make kinda like a poutine but with stuffing on top. They call it dressing in restaurant.

    I've seen people do bread and milk in meatloaf , I wonder if you did milk with your stuffing if that would moisten just as nice.

      Are you using the type of stuffing mix that has the spices in a separate packet and then not adding the spices? Or are you using the stovetop kind where the spices are all in the breadcrumbs?

      I use the regular stove top stuffing mix. Iv used the chicken and added peaches, apples……it is really good. I make a topping of powdered sugar, milk, vanilla and it really is good.

      @@bethjones8127 that's really interesting. I've seen desserts where you use rosemary or basil with fruit so I don't see why it wouldn't work with sage and fruit as well.

    The oatmeal is thick because you're supposed to add the water BACK into evaporated milk. So if you have 6oz evaporated milk add 6oz of water, etc.

      I do always add water when I reconstitute the evaporated milk Hmm maybe! I didn't mind the thick oatmeal though YUM :)

    Haha you gave mr. wanderer K.P. duty huh..haha my dad's ex army not me but mom used to make him her prep monkey as well and he'd go dang it I thought my kp days were over 😂..haha my mom would say you rather wash a soup pot or wear one 😅😆

      That's awesome! LOL Mr. Wanders is always so eager to help out but his machining skills don't transfer over to the kitchen very well! He gest stuck as kitchen prep or dishwasher all the time! He's VERY supportive of me continuing to make him food so he helps out tons when he's home lol

      No, this has always been my channel :) Always check on your subscriptions! TH-cam routinely goes through subscribers and can unsubscribe people that they think aren't active or are what they think are "fake" accounts unfortunately :( I hope to have you subscribed again!
