NO SPEND | PANTRY CHALLENGE | Week 2

  • This is Week #2 of my NO SPEND PANTRY CHALLENGE. My goal is to feed two people by just using food from our PANTRY and FREEZER for the entire month of JANUARY! I plan on spending NO MONEY for the month! Other goals in the challenge are to use up older canning and pantry foods at or near their "best before" dates. It's my first NO SPEND PANTRY CHALLENGE so I'm just going to do my best, USE WHAT I HAVE, SHOP FROM MY PANTRY AND FREEZERS and see what happens! This week I make Crab Pesto Pasta, Chicken Ranch Pita Pizzas, Banana Bread, Pulled Pork and Bread Pudding as well as some other tasty meals!

    What I love about your channel as opposed to other January no spend challenges is that you are actually using what's in your pantry without an additional small monthly budget. Also, I found many TH-camrs stocked up in the previous weeks to do the challenge. How is that challenging, productive or informative?

      Thank you for your great feedback! I'm so glad that you are enjoying the challenge! For myself, not having an extra budget helps me see where my pantry is lacking as well as teaches me how to cook meals from what I have stocked up! I also wanted to stay home and save money! Everyone has different goals in mind and different sized pantries so I think that's why there are so many different versions of the challenge. Stocking up before my challenge would have defeated my goals :P However, if I continue the challenge into February I might have to break down and get my husband some yogurt LOL Apparently my pantry is lacking a COW! :P

    Tip go through your fridge every Friday and use leftovers during the weekend as well as any open condiments, sauces and dressings. Don't open anything new until you've used up what you have in your fridge

    You can puree the carrots to make a bread just like pumpkin bread or banana bread. Or I've made carrot zucchini bread if you have shredded zucchini in the freezer.

    Some dressings are good mixed with a bit of mayo and put in pasta salads! I've never used ranch before but it might be worth a try! We do a lot of buffalo chicken ranch stuff and I've used the dressing in that before...it's great in wraps/tortillas...as a dip with chips or fried pita wedges...in a bun...as a nacho topping...over breaded chicken...as a casserole and even a pasta.

    Grind your stringy beans up and use them in soups, sauces, lentil burgers. Those carrots you don't like can be used the same way.

      I do definitely prefer those carrots in blended soups! I'd given those beans enough chances for my taste LOL Great tips :D

    I've had a lot of luck using bottled salad dressings as marinades for chicken OR using it on top of chicken while baking.

    So nice to see familiar Canadian brands in your cooking. Big thank you for your pantry challenge. Giving me ideas. Roasted red pepper chicken pasta using pantry pasta, leftover chicken breast and pantry jar of roasted red peppers. Got the idea from the Walmart flyer recipe that just came out.

    I loved the meals you made this week... the bread and butter pudding was a "light bulb " moment for me - I normally put bread ends out on my bird table, but that pudding looked awesome. I will be saving them in future! Thanks for the inspiration.

      Yes! Normally I have a lot left over after Christmas and try saving them to make stuffing or something but they end up in my freezer forever! This was a MUCH more enjoyable use for them! So good! :D

    Yum pumpkin pancakes sounds amazing and I have never done pumpkin seeds on the stove but those looked like a great soup topper. Another great week!

    Hi, love your videos. Very inspiring and lots of great suggestions, I was inspired to pick the last of the kale in our garden to make bubble & squeak tonight. I am a "Lower Mainlander" and also a Superstore shopper here (collect those points) and I loved the shopping challenges. It shows that it is possible in Canada, with our higher prices, to put food on the table. Cheers and Happy New Year

    I agree… ranch or a Cesar pasta salad is a great use of dressing and even other frozen bag. And you can stuff about anything in a egg roll wrappers (shredded pork, add sautéed cabbage, shredded carrots, onions, ginger…). I love trying to be creative with leftovers and random odds and ends! Can’t see what you cook up next week! 💕

    You reminded me that I canned a bunch of strawberry pluot jam I need to start using. It's a beautiful color. I'm thinking sweet crepes. So far this low spend January is easy. You never realize how much you have until you stop shopping.

      That jam sounds amazing and crepes sound yummy too! I agree...I didn't even know what was at the back of my fridge LOL The only challenge is trying to use at least one ingredient from the cupboard (that I set up for the challenge) in each meal but it hasn't been so hard yet!

    Crazy, I looked up Thousand Island dressing and I remember my FIL used it on burgers and then I line I saw where someone used it to make Big Mac Pizza's. Someone else uses it for pasta salads, both sound great to me You are doing an amazing job, loving watching your weekly videos!!!

    Glad the bread pudding was such a hit with your hubby! Now you need to try savoury bread pudding (also called Strata). They're really good too, and use up veggies!!!
    I have an idea to use up the canned carrots. Mash them into some boiled potatoes and make potato pancakes! To give your potatoe pancakes some flavour, add some ranch or Caesar salad dressing. You'll need to add extra flour, to offset the liquid, but it's very tasty.
    Try looking up recipes that use ranch dressing in them on Pinterest. You'll find some new ways to use that salad dressing up. Could probably sub the Caesar dressing for many of the recipes, too. I love having ranch dressing on hand. It's very versatile for recipes.

    I had way too much pumpkin puree once and in addition to all the suggestions here already, I also put some in a batch of homemade hummus and it was fantastic!

    Hahaha, you made me laugh when you gave up on the beans. I did the exact same thing with mine. They tasted like mushy tasteless twigs and I cried uncle! Into the circular file they went. Thanks for your opinions on your dishes, especially your candour.

      Yes…yes…”mushy tasteless twigs” describes them perfectly! 😂 Not all my frozen green beans are so horrible but, clearly, if I label them “stringy beans” to begin with they should have just gone into the compost or saved them as dried beans! It takes a lot to make me not eat something but they were horrible 🤮

    Nice variety! The pulled pork, banana bread and bread pudding looked wonderful! Try making a soup with the pumpkin, carrots and condensed milk. Add some Indian spices, purée and add a dollop of sour cream. The couscous makes a wonderful salad or side dish. The ranch dressing is great mixed into mashed potatoes. Add grated cheese and cooked crumbled bacon and some sour cream. Yummy side dish!

    We love warm bread pudding with some whipping cream poured over it (in our bowl)
    I love all your different jams (but I'm boring, and would love it on toast)
    Great meals :)
    Never heard of ground cherries?

    If you peal your banana before you freeze them it will be easier and less messy when you use them for baking :). Banana is not something I eat but my toddler loves them and I make him banana muffins so peeling them before hand is the only way I will use them.

      Thank you! I’ve heard this suggestion recently and I want to try it in the future 👍🏼 These bananas have been in the freezer for awhile 😉 I’ve never had a problem with just throwing them in the freezer, peel and all, but freezing them without it seems like it would be less messy!

    Great week. Perhaps you could make fruit lemon loaf with your lemons. I like blackberry lemon loaf but you could use any of the fruit in your freezer. If you have icing sugar you could even make a lemon glaze for on it. Your pizza looked good. I’m a fan of bbq chicken pizza. The burritos looked great! You have pulled pork leftover. You could always use the cranberry sauce as a side garnish with that!

    Everything looked delicious! I was going to suggest that to plump raisins up a bit for your rice pudding and bread pudding , I like to first soak them in a cup of hot water, or- what’s really yummy for bread pudding and apple pies is to soak the raisins in either some rum or bourbon- adds great flavor- just drain off the excess liquid before using. Can’t wait to see what you make this coming week!

    I can't get that live chat thing to post. I'm just home from church after sending home containers of a delicious turkey vegetable soup with a bunch of people. It had fresh turnips and butternut squash in it along with other ingredients and was delicious! I'm enjoying this month.

      Growing up, my mom would add sugar and milk to leftover rice. Served either cold or hot, it was similar to oatmeal and really yummy. I think it was for breakfast, but it could be the base for a great dessert. Maybe add some “sad looking” raisins or blueberries !

    I love beets!! Also roasting the pumpkin seeds was something my mom always did!
    A tip for the banana bread if you think it isn’t done yet you can cover the top with foil while it continues baking so that the top doesn’t burn!😊

    mmm you just reminded me I have a quart of canned pickled beets i made last year left. :) The recipe for them was in the USDA home canning guide and it is absolutely fantastic btw. They almost taste like aunt nellies if you have that brand. I put onions in mine though because i love pickled onions.

    You could make up some couscous add some beans to it such as chickpeas if you have any or even white beans cooked can I use your Italian dressing or Caesar dressing some onion and make a salad that way. And your feta cheese. I am enjoying watching your challenge that you’re doing this is some thing I need to do to clean out my freezers and my cupboards.

    All those beans... make chili, you can do a veggie version with beans, tomato sauce, loads of spiced aso (or bring up any meat from the freezer, put in the slowcooker and shredd) . Serve with home made bread or on rice.

    great way to use the leftovers! For the carrots have you ever eaten them with a sauce of brown sugar and butter? Melt butter in pan, then add in brown sugar {use amounts you want}, and let make a sauce. Add carrots, and let warm since they are already cooked! Consume! I have heart them called copper pennies too. Enjoy!

      I make that kind of glazed carrot a lot for holidays but I haven't tried it with the canned carrots. It might work to dull that weird taste that mine have. I love the recipe with fresh carrots! Thanks for the suggestion :D

    I've seen carrots as an ingredient in jarred marinara sauce. So i puree them and put them in any homemade tomato sauce recipes, the sweetness helps balance out the acid in the tomatoes.

    The green onions in water are a waste of time, since the water lacks nutrients for the onions to keep replenish. But, you can plant actual onion seeds in a pot in a sunny window. This method does take quite longer (about 2 months before you can start harvesting green tops) but with succession planting, you can have perpetual onion harvests year round.
    In the spring, plant some of the storebought green onions outside, and don't cut them. Let them go to flower and seed. Harvest seeds, and now you also have seeds.
    Also, MAD props for eating frozen chicken that expired June 2020. You are my favorite channel!

      Thanks so much for all the tips :) I actually grow quite a few onions and chives in the garden during the growing season and just freeze them up but it was a fun experiment to try out! I always save my onion seeds...and carrots...and spinach too :D I work so hard during the garden season that I enjoy a break from it in the winter lol So glad to have you watching and happy that you are enjoying the videos

To me seems like red chili peppers that are salted but I'm sure if you Google you'll totally get more insight from people who actually know what they're talking about 😂 I'm not Morrocan so I'm just saying haha!

    Some interesting meals here, and they all looked so yummy and appetising! The banana bread looked superb on the inside and I like the idea of the pumpkin pie spice pancakes, lovely!
    You could use your canned carrots and pumpkin by blending them into a puree and making scones (biscuits), pumpkin/carrot puree bread, even pizza dough with the puree added, really lovely and something different for a change.
    I would have tried to roast the green beans, maybe they would have been better if you could have done that to dry them out a bit, or use them in a risotto? Don't know if you have any more but I would have tried roasting them to crisp them up and turn them into veggie 'chips'. :)

      The Banana Bread was so good! Great ideas to add the purees to baking :) Interesting solution to the beans. I think that was the only really bad bag of green beans in the freezer. Last year was a horrible year for green beans. It was too hot so we got small stringy beans! It's frustrating :( Thank you for your great feedback!

      Ive used a recipe from Grateful Prayer Thankful Heart blog to use up canned yams. It's for sweet potato crumb muffins, and you could probably substitute in your canned pumpkin or carrots. It would use up some flour and oatmeal and carrots. I always cut the sugar down from the recipe so it's more breakfast than dessert.

    I saw you toss those green beans and thought "toss them in with some bones and make a good bone broth" than a second later you showed chicken bones. Nothing like a good bone broth. So healthy and good for you. NEXT TIME :-)

    About those salad dressing bottles.... Do you have pasta?
    You can make a "pasta salad" with boiled, not totaly cold pasta, peas (boil shortly in water, cool them down), some kind of onion/shives and perhaps garlic and chredded chicken or a can of tuna in water (not the oil one). Mix with some of the dressing. Perhaps add chredded cheese, some parmesan + salt and pepper.
    If you´re out of chicken take some pulled pork and put on top or make some bacon and top with that. If it feels like small portions, just fry a couple of eggs and put on top.
    You can have the salad as is, in a sub or rolled in some kind of flat bread like burritos.

      I'm not always a big fan of pasta salads but I'm sure if I make it myself it would be great! Sometimes they have a little red thing in them that I don't prefer...pimentos maybe?     I used to buy Fantastik vegetarian chili now i just make a cheap batch of veg chili and use it as a base for the week for sweet potato topping, nachos, rice bowls, tacos, quesadillas. Just chop up your toppings (lettuce, cheese, onion, tomato, etc.) and your set for the week.

    Jessica you can use the salad dressings as a marinade for meat, cook up some coascoas add bell peppers diced and diced pickles and salad dressing for a salad as a side dish, a pasta salad to make adding the salad dressing again as a side dish or even for the main meal

    The thousand island dressing might be good in what I've seen people use on taco salads or a big Mac bowl or big Mac burger. You could maybe do big Mac egg rolls and use that as a dip. Or the Chili's restaurant southwest type theme egg rolls with black beans and corn and peppers and taco type seasoning and ranch as a dip

    You can also make a black bean and corn dip and make pita chips ( open pitas up brush with olive oil and sprinkle with a little garlic sal or just plain table salt) to go with dip. Green beans are only good if canned. Freezing changes texture and taste. If you like beets, try making pickled beets. If you have plenty of bread you can make a pumpkin bread pudding with the raisins. You can make a breakfast casserole out of rest of bread. Use ground sausage, 6 slices of bread, green onions, cheddar cheese, little bit of ground mustard, S&P, about 4 to 6 eggs to make up your savory custard to pour over the torn up bread. Makes up a 13 by 9 inch casserole. Place foil over mixture and place in frig over night. Uncover and bake in oven for around 40 to 45 minutes. If using a glass dish be sure to start off in a cold oven that way your casserole dish will not break. There are many versions of this just google it. The pumpkin bread pudding is delicious with a caramel sauce drizzled over it, or whipped cream, or even pancake syrup. In the blueberry one you made try adding in some cream cheese, like blueberry cheese cake flavor.

    I like betroots a lot . Last week I decided to try a new recipe : I bought raw betroots , peeled them , cut them in small cubes and roasted them in a tablespoon of olive oil . Roast until a little caramelised .when cooked add garlic and sea salt .It was delicious , makes an unusual side dish .

      I often wrap my beets in foil like you would baked potatoes and bake in the oven, on the barbecue or in a slow cooker. The peels slide right off when they are cooked.

      @@JessicaWanders I roasted them for 25 minutes.But the cubes were small ( less than half an inch ).cooked in water beforehand they will lose a lot of flavour in my opinion

    Do u have to cook the cabbage before putting it in the freezer?
    I really enjoyed this week's food.

      I don't cook it first. Sometimes I shred it and other times I just freeze it in quarters or chucks. I'm usually putting it in soup so it works fine. :)

      Thank you. I just have been throwing it away if u have any left, and it's been too long in the frig. I'll remember to freezer it from how on. I appreciate it.
