LOW SPEND Pantry Challenge 2023 Week #6

  • It's Week #6 of my 2023 PANTRY CHALLENGE! My goal is to feed myself and my husband by just using food from our PANTRY and FREEZER. I did buy some grocery staples making it a "Low Spend" Challenge this week! My goals in the challenge are to use up older (or less popular) canning and pantry food items that are at or near their best before dates or have just hung around for too long and to SAVE MORE MONEY by having a very FRUGAL FEBRUARY! We have some big travel plans this summer that I'm trying to save for!
    In this video I try some more awesome viewer suggestions along with some tasty BREAKFAST RECIPES, LUNCH RECIPES AND DINNER RECIPES! I'm loving all the great MEAL IDEAS! It's so much fun to try out meal suggestions I've never tried!

    Welcome to Week #6 of my 2023 Pantry Challenge! We did pick up some groceries making it a LOW PEND Challenge Week! I'm sure that we will last until the end of FEBRUARY with these supplies. I was excited to try out a few viewer suggestions this week 😃 I feel like I made a pretty big dent in the items that I want to use up in the pantry! It was a great week of MEAL IDEAS. I'm loving how creative everyone is being with suggestions 🧡
    My heart goes out to all those affected by the EARTHQUAKES in Turkey. It's been hard to watch the devastation all week. If you are able, please consider donating to a humanitarian organization helping those in need. 🧡

    Hi Jessica!! Your gravy is spot on. My mom often made up biscuits and gravy for breakfast because it was a cheap meal for a family of 6. The hot dog fried rice reminds me of the spam fried rice we had in Hawaii. Your parfaits looked yummy! Great recipes! You could make rice pudding with your rice, or burrito bowls with rice as your base. Thanks for sharing! ((Hugs!))

    I'm a little behind in the videos.
    In Nova Scotia we call smokies sausages, smoked sausages. I guess I always thought there were 2 kinds of sausages, smoked and regular. I've never had mozzarella smokies but cheddar smokies are very common here. Actually, we had them for supper last Thursday. Lol.
    I love mushrooms in black bean sauce. So delicious. And adding the carrots was a fab idea. Really, how can you go wrong with carrots! Great week.

    You're doing great! My 6 year old helped me organize and clean out on of our freezers this week. I made caramel sauce and homemade ice cream with frozen heavy cream.

      Hi kdonor! Ohhh Freezer Challenge is later in the year LOL That caramel sauce sounds wonderful! I've never tried freezing heavy cream. Do you just have to shake it after you thaw it?

      @@JessicaWanders Yes it freezes well though I had trouble getting it to whip which is why I made non whipped foods. I am kind of just challenging myself with all my storage methods whether shelf stable, canned or frozen. I have odds and ends everywhere and it's just too much for me to manage.

    In the south pork rib let’s are served like ribs or cut off the bone and served on a bun. Mostly smoked or grilled then drenched in barbecue sauce and served with fries to dip them in barbecue sauce from riblets

      After trying them I can see how they are basically the same as ribs! The black bean sauce recipe worked really well but I'll be grabbing them again if they go on sale so cheap again! yummy :)

    These were amazing! I saw that lettuce prices are coming down, along with a few groceries. I'd mentioned it to my husband, who works for a freight brokerage as the director of procurement, and he disclosed that the cost of shipping goods via truck/rail/port is coming down now that drivers are in surplus and fuel is lower in cost. He said that the overall costs should be much lower in 6 month's time. That is based on US economic standards, but he also deals with customs at the both borders.
    We've also seen a crazy February here in Northern Nevada, as well as this winter. We started the month in single digit temps, and then this last Friday it got up to mid 50s. But Saturday we awoke to several inches of dense snow that melted by noon. It's so bizarre!

      I can't even believe the weather! We have had RAIN several days this February which is almost unheard of here. It makes me worried about the summer temperatures to the honest. Your weather sounds very similar! We are going wildly back and forth between -10C (14F) and +10 (50F). Raining...Freezing...Snowing...Melting...It's really making a mess of things! I think just about all the snow from the winter has melted now. I think it might be a crazy gardening year, for sure!

      @@JessicaWanders our weather has been strange here in Florida also. Start at 60 F at 6 a.m., and up to 93% by 8:30! The rain is coming through in bands but I'm afraid it's going to be a really hot summer!

    Those little bisquick mixes are AWESOME! I get them a few at a time for 1.25 each and they make 6 good sized biscuits

    Your gravy looks perfect, it should be very white. Orange juice is the perfect accompaniment to biscuits and gravy! It is sometimes served with eggs and hash browns. Some people even like to top it with a runny fried egg. My family just wanted the biscuits and gravy and orange juice.

    For my biscuits and gravy I use Grands flaky biscuits, Jimmy Dean breakfast sausage, flour, milk and basically all of the flavors you used plus a pinch of sage and some dried parsley for added color.

    I have never seen tuna salad like that before, but there are so many variations, too. I just use tuna, relish, and mayonnaise.

      There are soo many variations! I really needed to use up the Ranch Dressing from the pantry so I tried it as a substitute and it was just fine! I've done loads of tuna sandwiches just like you describe :) Just depends what I have laying around :P

    I wonder if you could do a twist on spinach artichoke dip with your homemade yogurt, canned artichokes, and kale powder. Or maybe make a creamy pasta sauce with it!

    Rice pudding is a good way to use up rice and you can use the powdered milk to make it too

    Hey Jessica! Did you know you can make cheddar bay biscuits out of that mix…so good brushed with a garlic-parsley butter. Also, you can make sausage-pancakes on a stick! Oh so good! Just like making a corn dog, but you are placing a pop cycle stick or wooden skewer in browned sausage that has been blotted with paper towels to remove any grease. Then you let them cool. Next dip in pancake mix that is not thin, but thick enough to hold on to the sausage. Then immediately place in a deep skillet or Dutch oven that has hot oil deep enough to deep fry them. Use long tongs to turn them…keep turning them or they will cook only on one side and not turn over to cook on other side. Next drain on paper towels and serve hot with syrup of your choice. These would be good to freeze after cooking for when ya’ll go camping or to send with your husband for his breakfast. Just an idea to use up link sausage and biscuit mix or you can use any pancake mix or homemade. These are very expensive in the stores where I live. 😊

    We had poutine last night for supper. Yours looked very interesting too. I don't like my homemade gravy when I don't have a roast, but I will give yours a try. Worcestershire sauce and vinegar may be the 'special ingredient". I wonder if I can use white vinegar instead of apple cider vinegar?
    I have an opened bottle of black bean sauce from a while ago...it was good, but it was very salty. I'll just need to try remember that, next time I gather up nerve to use it again....FOUI ( fear of using it)...lol

      Hi kathryn :) I very rarely make gravy without cooking a roast either chicken, pork or beef but I was quite surprised at how good that quick gravy was! I thought it tasted a tiny bit too "vinegary" but Mr. Wanders thought it was great. I'd love to hear if the white vinegar works too...it does have a bit of a different taste to it so I'm not sure...worth a try!
      Overcome the FOUI! haha I'm going to try the black bean sauce on noodles I think and go light on the soy sauce!

    We do not have biscuits and gravy here in Australia. I have tried them when staying with family in Montana and Texas. They are awful. The biscuits are like a heavy brick version of a savoury scone. The gravy is a thin white sauce with blobs of meat. I ate them because family made them. I said thank you to thank family members for their love, effort and time in preparing a meal. No, I did not offer my true thoughts because they did try Vegemite which I pack with me whenever I travel.

      It sounds like you really didn’t like them! The type and quality of the biscuit can really vary and can affect the whole dish. Did your family try the Vegemite and enjoy it? I’ve never tried Vegemite and have often wondered what it tastes like 🤔

      @@JessicaWanders Randy in Houston, and David in Arkansas, but no one in Montana liked Vegemite. The problem for Americans and Canadians when they try Vegemite is they spread it far too thick, similar to the quantity used for PBJ. Australians use just a feint smear. It's extremely salty and yeasty, made from the byproducts of the beer industry. On the upside it is high on folate or folic acid (can't remember which one in particular) and also vitamin B.

    I think the white sesame seeds in stores are peeled and that's why they are different in colour and taste to your garden grown seeds.

    Uncle Roger is who you were thinking of for the fried rice. Hot dogs in fried rice and Spaghetti is very popular in a lot of Asian countries.

    My grandpa is the pickler in my family, and I live across the country from them now…so I need a good dill pickle recipe! I miss homemade pickles. 😩

      Hi Sarah! I haven't done a dill pickle recipe yet. We didn't have any pickling cucumbers last year to pickle :( Our whole cucumber harvest was really bad! Hopefully this year is will be better! They are hard to get as crisp as store bought ones and I don't normally use "pickle crisp" but I like them just fine.

    Semolina makes a nice custard/pudding. lemon semolina custard or perhaps a semolina pudding with lemon or orange glaze? Maybe make some chewy graham cracker bars with marshmallow cream topping.

      I have historically felt like this as well roxanne 8! I never knew what the attraction was either. It is very filling and the sausage adds some meat/protein. I've always thought that it's just like left overs from turkey dinner? It has grown on me the more I try it out! :D

      Hi! In this $21 a week series I bought yogurt in week #2 and then tried to add reconstituted evaporated milk to it last week. It turned out pretty thin.

    Do you make your own garlic/onion powder? Or just buy in bulk?

      I have made onion powder before but not garlic powder. I pick those spices up in bulk when they go on sale. I use a lot more actual garlic and onions that I grow than the powders really… 🧄 This year I have a ton of garlic that will start sprouting if I’m not careful but I’ll be throwing it in the freezer soon!

      I don't usually put onion actually but that would be good I only have frozen celery at the moment that I didn't think would be very good and I've NEVER added egg! What an interesting idea! I'm going to have to give that one a try :D Thanks for the idea Tara!

    I'm confused. One minute you said, "I'm so happy to have yogurt we like.", and in the same sentence you said, "but neither of us liked it much."
    What does that mean?

      Hi Janet :) The yogurt that I made out of the cream from the grocery haul last week is more to our taste than the yogurt I made with the skim milk powder in Week #5. Sorry for the confusion. Although I was happy that it was possible to make the yogurt I made the other week out of the skim milk powder, both my husband and I prefer our regular yogurt made with 10% cream. Hopefully that clears it up.

    I'm sure I'm the only one, but I HATE maple syrup. One drop in the ocean and all I can taste is maple syrup. 🤮🤮🤮 And most recipes are like ..add a 1/2 cup of maples syrup or whatever. And I'm like OMG NO! Even if I liked it, that's way too much!
    (ranch dressing too. It's like funky feet 😄)

      But, I agree that sometimes it can be overpowering and some recipes abuse it lol To each their own 🧡 There are some things I just can’t get used to…eggplant, pasta salad…chicken hot dogs lol
