NO SPEND | PANTRY CHALLENGE | Week 1

  • This is Week #1 of my NO SPEND PANTRY CHALLENGE. My goal is to feed two people by just using food from our PANTRY and FREEZER for the entire month of JANUARY! I plan on spending NO MONEY for the month! Other goals in the challenge are to use up older canning and pantry foods at or near their "best before" dates. It's my first NO SPEND PANTRY CHALLENGE so I'm just going to do my best, USE WHAT I HAVE, SHOP FROM MY PANTRY AND FREEZERS and see what happens! This week I made Carrot Pumpkin Soup, Bean and Bear Sausage Soup, Burger Corn Casserole and Peri Peri Chicken along with some other great meals!

    I began my "adult life" after a move, on an extreme budget, little or no cooking "stuff", no pantry, and definitely no cook book. This was pre-computer and, I did splurge on some 3"x5" cards which I pain stakenly filled with the recipies from packages; and every card found on grocery store aisles. Some of those recipies are pretty darned good.

    I always cut chicken breast in half thickness-wise (or sometimes 3rds) for several reasons ...
    #1 Modern chix breasts are huge and way too big for 1 serving.
    #2 They cook better and faster
    #3 Better seasoning throughout.

    This is so fun to watch. I’ve been trying to do something similar, but didn’t start with nearly as much in my freezer and pantry. My spice drawer is my next target. I have an overflowing drawer but tend to use the same few all the time. I love watching what you come up with!

      To work on an over flowing spice pantry, look at what you use in terms of spice blends whether they originate in a spice jar, seasoning packet, store bought side dish bag or box, salad dressing, etc...Then work on finding spice blend recipies for the things you already eat followed by new expiremental flavors.

    I'm half way through week number 4 of my freezer challenge. I can't believe how long it's taking me to cook down my food! Quite eye opening for sure! Your recipes look delicious! I had oatmeal with homemade jelly today too!

    My suggestion is that as you go through your pantry and freezer, you begin 2 lists. The first is a list of things to replenish in your combined (shelves and freezer) pantry. Do this as you eat through staples like say grains and spices, but also the "yummy" things you know you want to preserve this upcoming year; maybe canned pumpkin and carrots don't make it to the list or, if they do at reduced replenishment rates. This list should help you replenish what you absolutely need but also put you on better track this upcoming harvest season. The second list is a list of dishes and/ or recipies you come up with that you definitely want to repeat beyond the pantry challenge.

      Canned pumpkin hasn’t made it onto the preserves list for a couple of years 😂 I do keep track of and plan to replenish what I love. It takes years of growing and canning to learn what you love to eat and can again. It’s a labour of love though 🙂 I spend a lot of time with my garden planning deciding how much of each thing I want to grow based on how much we used it.       What a great start. I have so many similar items in my pantry but I think I’m looking forward to watching your videos and see what I making for the next week or two. 😁 I’m excited to see how those alfalfa sprouts turn out. I’m not a fan of alfalfa sprouts but I’m betting I could find other sprouts on Amazon that I could make it home. If tits something you enjoy I wouldn’t mind seeing some baking from your pantry. Something I could make on the weekend and then have for breakfast for the week.

      @@cheriland7461 Definitely my goal is to use up items past their best before dates as well as pantry items that I have that I bought but we just don't really use and some older frozen veggies! After a week I'm thinking even just using up those things might take quite awhile!!

    I'm thinking that canned pumpkin & carrots would have been great baked into a loaf, & maybe add some raisins...be great for breakfast.
    I still use my electric pancake griddle, that was my mother's, from 1952.
    It's actually great your pantry doesn't look like it is depleting, that means your food will last a long time (which is what most people want)

    I’m on day 18 of zero spend use what I have and there isn’t even a dent in what I have. I did get the hubs onboard with the exception of buying Girl Scout Cookies. He says he doesn’t care if the apocalypse hits, he will find those cookies to buy.

      I’m surprised at how little I’ve used in a week! It might take longer than I planned to use up the items that I had wanted to! It’s so great to have the support to do it ❤️ but, of course, Girl Guide cookies are an exception! 😏

    My favorite sandwich of all time - whole wheat bread one side buttered and the other side with mayonnaise then top with some good baked beans. I have no idea why this makes my day, but it does. Never thought to do it for breakfast so thanks!

    Loving this new series! So much fun. So, old appliances - I’m so scared to say this but I have a kitchen aide mixer from 22 years ago. It’s in great shape and works perfect, and I use it all the time. Keep your fingers crossed lol

      That's awesome! Mine is around 25 years old and the gears are just starting to get a bit loud in it but I love it and use it a lot! I'm hoping that it keeps going! I feel like every new thing that I buy just doesn't last very long! :( So glad you're enjoying the series! :D

      @@JessicaWanders I agree! There is nothing made like the “older” models. I’d take this one over a new one any day. The only downside is it’s super heavy and my poor husband has to get it down for me lol

    I have a waffle iron that I have had for 20 years. I make a double recipe every Sunday and then freeze them for quick breakfast options or snacks for the grand kids. Maybe you could try pumpkin spice waffles. I always use fruit in my waffles but I think I will try pumpkin spice next Sunday. Bet they would be good with vanilla ice cream!

      Someone I know was doing the freezer case waffles for breakfast on the run or augmented with other breakfast foods if there was time. Then there was a price increase (this was years ago now) and she became incensed so bought a cheapie waffle maker and made waffles from a mix, a week's worth at a time. When the waffle maker died, she bought a much better waffle maker then started making her own from scratch waffles. Long story short, she's convinced that she doesn't save money over the non-name brand waffles anymore but she's got them beat for both flavor and nutrition while becoming what she calls a "waffle snob" and making 2 week's worth of waffles at a time.

    I’ve seen lots of pantry challenge videos but yours is the best I’ve seen so far. I like that you show every meal. I have an electric mixer/whisk that I use in all my baking , it has the original purchase card in it which is dated May 1967! It still works perfectly 👍🏻

    Once again, I’m impressed with your creativity! Those sidekick mixes are great! I make one, toss in leftover chicken, ham, taco meat, etc, veggies and cheese. Great quick easy meal! Can’t wait to see the next video!

    I like all the recipes. I have never put beans on toast! It looks great! My mom always made cream of chicken soup on toast ! It’s even good for breakfast! My kids love it!

    Banana muffins would be a good snack item...it is at my house anyway! The canned pumpkin might be good in a chili or in cookies. The carrots could be carrot cake muffins or bread or cookies....especially if you make cream cheese icing. Yummo!!

    Great 1st week of no spend ! My husband won't eat soup that often, so I have to really get creative. Toasted banana bread for bfast would be a winner!

      I feel like the trick to get men to eat soup is to make a fresh loaf of bread whenever you make soup. LOL. Soup is just an excuse to eat fresh hot bread with plenty of butter.

    You should use your frozen banana to make banana pancakes and then take you frozen blueberries to make a sauce/syrup to put on top.

    I think it's great that you have so much! I wouldn't worry about it not looking like you've used very much. That's a good thing! I made the French Onion Soup from the US version of the canning book last year and its yummy! Awesome video!

    could yu try to do a casserole or stew swap with a friend or family member? That way you could make a big batch each , keep a small portion and swap for a new experience? always enjoy seeing what you come up with . thank you

    I have old and new appliances that plug in. I think I’m worried the rechargeable ones won’t have enough oomph to do what I need them to do.
    Oh and particular brand of curry paste is great! They have several varieties and heat levels. I’ve got a few in my fridge and they come in very handy when I want to make an Indian dish. It’s really easy to improvise and use what I’ve got in the house.

      I love the curry paste and I use it for a lot of things! Handy to have, for sure! I have that little grinder that I bought for the camper but i'm amazed every time I use it and it doesn't break lol

    Loving you pantry challenge already. I would love to see some "lunch preps" for you husband. I think a lot of people who work would love some ideas of things to make on the weekend (or with dinner) that work well for work lunch items.
    Some ideas that popped into my head while watching and reading comments:
    * a savoury bread pudding/strata would be an excellent way to use up some of your frozen veg and older frozen bread items. I often make it for dinner, then use leftovers for either a quick breakfast or filling lunch option. I keep packets of Hollandaise sauce in my pantry to top some of my egg based meals, like strata, breakfast bowls, eggs Benny, eggs florentine, etc. I have never tried making from scratch, but you could give it a try!
    *I keep home canned applesauce in my pantry to use for baking. It helps replace sugar, eggs and oil in the event I need to live off my pantry stock for extended time, plus it's healthy.
    *If you make the banana bread, you could use some slices to make banana bread French toast. A very rich breakfast, but perfect for a special Sunday morning fare.
    *you mentioned running low on snacks in a comment. If there is enough, perhaps you could make a small batch of "Chex mix" for a savoury snack or some spiced nut if you have nuts in your pantry (I think I recall you did, but might be wrong). You could also make a peanut butter based energy ball, or granola for a sweet but healthy snack.
    If you have enough bananas, or other fruit, you could maybe try drying them to make a simple trail type mix.
    I can't wait to see what else you make with all those ingredients in your pantry!!!

    Really interesting, I am having a good clear out too of my freezer and larder (pantry, I’m in the UK). Got loads of dried beans that need using up and some chicken and game too, so it’s good to see what you do with your ingredients. We don’t really can to the level that you do in America but we do grow our own chilli’s and sprout as well.

    I believe you can make Oatmeal cookies that would use up some of the ingredients you're looking to purge and give you a breakfast or snack option.
    1 overripe banana (thawed is okay)
    1 serving size of dry oatmeal
    1 teaspoon of cinnamon (optional)
    Additional ingredients if desired;
    Nuts, chocolate chips, raisins (I like chocolate covered raisins)
    Mash first three ingredients together with fork.
    Scoop or form cookies onto parchment paper or silicone mat.
    Bake at 350° for 11 to 17 minutes depending on cookie size.
    Let cool and enjoy.
    Note...If a sweeter cookie is preferred a small amount of sugar or maple syrup may be added while mashing the first three ingredients or a frosting glaze applied after cookie is baked.

It sat around for years while we used the microwave stuff and now I really need to change my diet, no salt, no oil, etc and it's gone. I've never had bear sausage, I've had other things but not that, so very cool you were able to use it in one of your recipes.

      Thank you so much Sandy! Oh no! I feel that way about my bread slicer! Just a wooden contraption for slicing bread but I never used it and never really had time to make bread. I gave it away and now I make bread all the time and can't find a cool one again!

    Periodically when im feeling scrunched for refrigerator space, i take a good look at how many condiments and cooking sauces are taking up valuable real estate. Often, I then work on meals to use up those sauces and condiments; sort of the opposite direction many take when eating through the pantry or freezer. - I used to cook at my parent's house every so often. More often than not they had plenty to choose from in the freezer and pantry shelves but, I started with thier refrigerator condiments and sauces, went through the produce drawer second, and cleaned out the left-over's containers. As needed, I pawed through the freezer.

      Yes! I’m trying to use up pantry items but I’m finding that I already have a bunch of dressings and sauces in the fridge! I think I’ll be looking at clearing out fridge items at the same time. Using up sauces is a great way to be creative with your meal plans 👍🏼 The more I look the more I think a good sorting might take awhile!

    Love this series. Old appliances? My gas oven is over 30 years old and it looks it, but while everything in the kitchen has been replaced at least once, it refuses to not work. It needs to stop working so I have an excuse to buy a new one.

      That's a great oven!! I finally had to buy a new dishwasher this week because we stopped being able to get parts to fix ours (even thought it was only 10 years old!) and the salesman said that new dishwasher only last about 4-5 years! :( All my newly acquired appliances seem to hardly last at all...you might want to keep your old reliable one :P
      There should be a great market for appliance repair businesses but it instead all the old ones have closed up!

      I was trying to understand what you were saying about it being old because even though I'm over 70 I had never before even heard of an immersion blender until about two years ago. Hubby bought me one and I just looked at it for several months. Finally, I saw one of my TH-cam people use it, and couldn't believe how easy it looked. Now, I don't know how I got along without it. I honestly thought it was some new invention.

    I would have sautéed the bear sausage with the onions. Sautéing them separate left all the flavor bits in the frying pan!!! Love the creative pantry cooking!!!

      Great Idea! That would make sense! I think I'm in the habit of frying my ground beef separately so that I can drain the fat but the bear sausage didn't have much anyway!

    I am doing the pantry and freezer challenge also ! It is nice to see different ideas !
    I put all my meat in my main freezer after I inventoried it and the vegs, fruits and bread in the other freezer.
    Easier to decide on a meal for me !

      Great idea!! I did have a kind of arrangement going on but that chest freezer is tough to keep organized! I usually try to keep things that I want to use up quickly in my kitchen freezer where they are handy but everything is quite full at the moment and it's tough to move stuff about. I love that so many people are doing the pantry challenge! I agree, it's great to see so many ideas!!

    I really loved watching your creative cookery! The bear bean soup looks amazing. The strawberry rhubarb jam made me think of my grandma. She used to make strawberry rhubarb pie when rhubarb was in season. I can’t wait to see what else you cook up.

    Odds & ends of frozen bread including hot dog buns are great for a 9x13 pan of Bread Pudding. I usually defrost my bread pieces ( cubed) then, spread them out on a cookie sheet pan and “dry/ lightly toast” them in 300’ oven for about 10-15 minutes. Then, proceed w your recipe! Susan

    Loving this challenge do far I noticed when you use things out of canning jars, you use a metal utinsil. Just remember that little ping of the glass when your jars start breaking in the canner . Glass chips easily when you aren't thinking about it.

    I really liked the French Onion Soup with the Sidekicks meal!
    What great kismet -- a suggestion aligning with what you'd planned.
    I often use those mixes to help use up some leftover protein and veg -- boring I know.

      It really was serendipitous! It was really the suggestion from Emerson Williams that made me look! Quite a string of funny coincidences for sure! LOL I have quite a few winter squashes that need to get used up! I use them all interchangeably in recipes :)

    Ahah yeah, I also feel like some old appliances last forever! My mom had an imersion blender that lasted over 30y. My mother in law gifted me a dehumidifier that I am SURE is older than me (I’m 27)! My parents gifted me an old oil heater, but because my house is a bit big we bought a new one. The old one is supposedly less powerful and smaller… yet it heats up a big bedroom and the new one barely heats a tiny bathroom…

    Any series that you do I'll be along for the ride as it's great to watch an ongoing challenge and see it unfold.
    I'm sure you're happy to be doing it as well as you get to use up things that hadn't been touched in a while which is very satisfying! I'm doing the same but just aren't documenting it, but as another viewer said it's surprising how long it takes to get down!

      I can imagine from what you have that it could probably take 3 months before you notice a visible dent in your supply, and no Sham butter chicken in sight! :)
      You could do a meal prep video cooking up a whole lot of it to last for the week and blend that into the mix. I'm sure many of us would be happy to watch past January.
      Good time for all of us to get creative ways for how to use what we already have on hand, especially when the shelves are looking more empty! Were having that here in Australia due to staffing issues with a lot of staff being off sick, self-isolating etc, hardly any toilet paper again!! 😒😕

      I finally used up that Butter Chicken mix! haha It was well worth it's price! I haven't been out to the stores obviously but I do know that our health minister has said that we should be prepared to have 1/3 of our workforce off sick. I'm sure that will have an impact on the grocery store shelves. I hope it doesn't turn into another huge toilet paper crisis again :P I think I'd have to make a run to the store for cream to make yogurt (and some more cheese possibly) if I keep going into February...but it might be fun to try and keep going! I hope that you are staying safe and away from the fires I've been seeing reported :(

      Thank you, that's very kind of you to think of me. I'm not near where any fires are, there's floods too at the moment in other parts of Australia but where I am isn't affected by any of that.
      We probably are lucky if we have 1/3 of our staff total and there's very few truck drivers available also, so our supplies are being affected quite badly. The toilet paper shortage is back big time!!
      I would suggest grabbing some of that where you are if you're going out to get cream and cheese, as it just seemed to happen overnight for us!
      One minute we could shop like normal and the next the shelves were looking bare! 🤷

    Oatmeal, peanut butter, cinnamon, and real vanilla make for a scrumptious cereal! Oatmeal, chocolate, some sugar depending upon the type of chocolate used plus personal taste, and real vanilla is pretty darned good. You can also do oatmeal, peanut butter, chocolate, and resl vanilla; and then you've basically got no-bake , oatmeal cookies.

      Hi! I definitely will comment more next video! I was doing that really regularly in the last challenge...I don't know why I haven't been! The carrot curry soup was great and something I make fairly regularly and the bear sausage bean soup was a big hit! I haven't ever made just a bean soup before and I was impressed! I think I could work on the spices for it to improve it in the future. It was a great way to use up a variety of garden beans! I'm so happy to have you here and enjoying this new series!

    Jessica, you are starting off great with your no spend challenge!! Those meals looked really good. You could probably make some banana pancakes too with the bananas. You have a lot still to work with. I can't do a no spend, cuz I need milk, eggs, and few other items, so I do a Low spend challenge and just set my budget very low, only spending on just what I need for groceries, but no other spending for the month... like clothes or household items and such. It's my first pantry challenge so I'm not sure exactly how it should go but I figure that I'm on the right track as long as I'm not spending any money :D I would definitely do a "Low Spend" month if I didn't have some eggs and canned milk that I needed to use!     I just noticed how "old" this video is yet my comment may still be relevant.
    You see, I have a very dark future of "no spend" not because I want it but because I believe it will be imposed upon us all.
    So I only recommend spending it while the spending is still good.
    After all, my money grows more worthless every day. The things I paid $10 for two years ago now cost me $20 so my money has lost half its value already.
    Now is not the time to be frugal just for the sake of being frugal. IMHO.

January (and probably at least part of February, if I'm realistic lol) is just a great time for me to stay at home and not spend money on groceries. The weather is usually miserable and it's dark at 4:00pm! I just want to curl up by the fire and not go anywhere!
      So...I rummage around in my working pantry for items that I want to use up, items that I have been avoiding finding a use for or items I don't enjoy very much to find better recipes for. I agree that drawing down our pantries right now might not be the best idea! I prefer to be frugal ALL YEAR :D Rising grocery prices is taking a huge toll...but my whole wheat flour won't last forever unfortunately...
      I will be starting my 2023 Pantry Challenge this weekend and would welcome your comments in the new challenge as well!

    I love those "Sidekick" type of mixes, but hardly ever eat them as is. I view them as a jumping off base for all kinds of creative conglomerations depending on what food I have available to add to it. I really enjoyed your video.

    I buy spinach and freeze it fresh in the bag. The next day I squeeze it to break it up so it's easier to use and takes up less room.

      I haven't checked out the Asian stores near me. We don't have a fresh Asian market in any towns near me unfortunately! I certainly miss that about living in Vancouver, BC. I have noticed that even the International Aisle has the same things for much cheaper (especially spices and rice!) so I'll have to plan a trip to check out other places when my pantry challenge is finished!     Peanut butter jar lids fit perfectly on canning jars as lids. They are free so no need to buy from Amazon once you have a stash.

      I usually buy Adams peanut butter...I'm not sure if they are the peanut butter lids that you use? Actually, I usually save those peanut butter jars for storing dry goods in so robbing the lids wouldn't be too helpful for me lol But, yes our canning jars are the same as yours...except I think we also have 750ml and 1.5L jars? Not sure you have them in the US?

    The Hurst fifteen bean soup makes an estimated 13 servings. When I dissected a bag of the soup beans the equation is two tablespoons of each bean the size of a kidney bean or smaller. The larger beans like the fava beans and large lima beans were 1/4 cup each.

      ​@@JessicaWandersYes, the Hurst Hambeen soup has two types of spice packets. Ham or Cajun are the two choices Walmart sells in USA. It is a basic mix with artifical smoke flavor. I don't like their spice packet. This soup is a fun soup for spice experiments. Trader Joe's 21 seasoning salute seasoning (one tablespoon minimum) or the equivalent of a McCormicks Grillin type seasoning blend of choice makes a better flavored stock. Beef stock is the most complimentary soup base. If you prefer a chicken stock, then Mrs. Dash / Dash original spice blend is fantastic. The Spike original seasoning blend is a milder seasoning for a chicken stock choice. If you want a ham base an old fashion smoked ham bone works better than their spice packet.

    I think in the French onion soup you should cook the pasta in the soup not pot in water separate👍

    My kitchenaid stand mixer is likely from the 70s (we figure. My parents bought it for me at an auction as a moving out gift) which would mean that it's older than me!

      I also forgot to mention that I also have that same Moulinex lol. I used it this evening to make refried beans (making bean and cheese burritos tonight and huevos rancheros tomorrow)

      They are Langostina Brand 🙂 Similar to this set amzn.to/3oQ6sMv but mine has tempered glass lids and came with a steamer basket pot :) I got the set at a good price when Sears was going out of business in Canada. I really love them!

    ❤️ LOVE ❤️ - Great job! My favourite of your meals was the casserole and both soups. Interesting to use corn in a casserole. Not something I think of. It looked really delicious. The bean soup (which I was thinking in my mind as yuk) incredibly appealed to me. It looked amazing. Great addition with the bear sausage. Gives that little extra interesting aspect. Sometimes the simplest things, like making the recipes on the package, are things we just don’t think of. Your French onion soup looked great but adding the sidekick took it to a whole different level. Was that yeast stored in those little jars in your freezer door? You said you were going to make banana bread. Throw the rest of the blueberries in the bread. Bam. Two items used up in one recipe. In Nova Scotia we call that a twofer! Hahahahaha. Two for one! 😉. Watching you choose the items and choose what to make is fascinating for me. Well done Jessica. Super entertaining.

      You sure can store dry yeast in the freezer! I never use mine up quick enough so I keep it in the freezer so that it lasts longer! When you add water when you're baking the yeast wakes right up again :)

    You should up the budget on your challenge next time for you and your husband from 21 dollars to $42 or whatever you feel comfortable with, so you don't have to worry about what he eats too. :) I'm doing a $1200 on groceries challenge for my husband and I this year. I'm hoping I can use what i have frozen and what i can find on clearance to feed us all year. He knows I'm trying to reduce our food waste but I never told him about the challenge lol. He doesn't understand. ;) I also won't stop him from eating out when he wants to. He works hard as a UPS driver and he can stop for a slice of pizza for lunch if he wants.

      I considered this but $42 a week just really wouldn’t be the challenge I’m looking for. At that amount it become much easier to buy things in bulk. At $1 per meal choices get harder and it’s more challenging to accumulate the basics. It’s fun for me to have to get creative 🙂 $1200 is a excellent goal! Normally my husband uses his “work budget” for whatever extra food he wants but he’s really been on board with the pantry challenge and hasn’t been buying extra this month 😀
