NO SPEND Pantry Challenge 2023 Week #3

  • It's Week #3 of my 2023 PANTRY CHALLENGE! My goal is to feed myself and my husband by just using food from our PANTRY and FREEZER for the entire month of JANUARY and maybe longer! I plan on spending NO MONEY for the month. Other goals in the challenge are to use up older (or less popular) canning and pantry food items that are at or near their best before dates or have just hung around for too long. I created a pantry full of foods that I want to use up and plan on using at least one ingredient in each meal!
    In this video I try a viewer suggestion along with some tasty BREAKFAST RECIPES, LUNCH RECIPES AND DINNER RECIPES! I'm being a lot more brave with my GREEN POWDERED KALE!! I love all of the great suggestions! It really does help me come up with interesting meal plans for the week. I was so blown away by the amount of new subscribers this month! Thank you all so much! I'm so glad you found the channel and I'm looking forward to hearing your great ideas!

    I know there is a lot of American Football this weekend so I'm super grateful if you have shown up to watch Week #3 of my 2023 Pantry Challenge!! 🧡💛 The weather is warming up (weird for January!) and I think it has put me in a happy and chatty mood :) It made for a fantastic video loaded with tons of my Wandering Ramblings 😃🤣 I hope you enjoy this tasty week of **hopefully** new and interesting meal ideas from my pantry!

      The trick to making powdered milk not suck so bad it helps if it's whole milk powder but if it's what you have you can use a few packs of sugar like 5 and a tsp of white chocolate powder and a half a can of sweetened condensed milk and some watered down evaporated milk and mix it according to your directions and get it super cold you have a passable powdered milk..we got it quite a bit when I was a kid lol..and it's great for baking

    I've added a bit of vanilla to powdered milk. Makes it a little more palatable.

    Graham cracker with lime jello make into pie or "lime bars". Chicken stuffing casserole. Chicken breast, cream of something, stuffing mixed with melted butter and sprinkled on top. Bake till chicken cooked.

    I’m not the best cook, I prefer to bake 😊 I really like your content because you try new things and even when it doesn’t go your way you remain so optimistic and go with the flow. Cooking doesn’t have to be stressful and your laid back approach is so nice 😊 You just trust your gut and give it a try. Your Pantry Challenge videos are my favorite, You give so many good ideas and help me to remember to substitute if you need to and you can be flexible with recipes 👍🏻 I love that you describe the flavors and textures. Getting great ideas 😊❤ from 🇺🇸

    We had some stale chips and I crushed i and stuck it in a mason jar. We used it for topping for taco soup and corn chowder and it was perfect. I had to crush up another one when I made the soup again. My uncle bought us a jar opener which we said we wouldn’t use but we have a bunch. I have a few random ingredients to still use in the pantry and I keep hoping I will have inspiration to use it but I might have to pull the stuff out and put them in a cupboard like you do so I can’t ignore them.

      Great idea to pre=crush those chips! It would take up much less space! Exactly right Alison, I find that having everything in one cupboard really helps me focus on the items! Just one a meal isn't too hard :)

    I make greens powder every season. I can add veg to recipes without being the whole vegetable. The family is much happier about certain veg this way. It's also easier to add to smoothies too.

      I'm finding it so easy to add to a bunch of things without having to come up with a recipe for "kale" all the time! It's great! I think it's definitely something I'm going to be doing from now on :D

    Honey joys are an Australian children's party snack. They use corn flakes and a honey based toffee and make up really quickly if you want a sweet treat.

    Powdered skim milk tastes like regular skim milk if you let it sit in your fridge for 24 hours after you mix it.

    Canned evaporated milk is very drinkable if you mix it with enough cold water to make a quart. Buy when prices are low around Christmas. It's cheaper than powdered and tastes much closer to fresh.

      I agree about the taste! I use it all the time in exactly that mix 👍🏼 I suppose that’s why I have so much powdered milk to use up. I’ll have to compare the prices…one bag of powdered milk sure does make a LOT of milk.

    Great week. My favourites were mashed potatoe patties, smoothie, taco salad/bowl and blueberry loaf. I love making one pot pastas. Super duper easy. People pay big bucks for greens boosters. Great to see you used it in several recipes and didn't mind the taste. Next summer you can do a combo green booster with spinach, kale, chard and even dandelion greens. Superfoods for a super boost!
    Added note: I was skeptical about the tomato soup from tomato paste. Wow. Totally impressed. That turned out absolutely amazing. Well done.

    Gotta try the blueberry loaf. Looked very yummy. When I need to open jars, I just put one of those thick elastic that comes with my broccoli from the store. Just place it around the lid and twist open.

    I use powdered or dehydrated kale in soups to add greens without the taste especially in soup using spinach.

      Great idea! I've been getting braver and I'm still not noticing any adverse taste. I don't mind the taste of kale but I'm so glad I can add it to things and not have it affect the flavour! Yes! Soups is a great way to add your greens :D

    Try making the powdered milk with hot water and putting it into the fridge to cool - that’s the way my dad always made it as kids

    Powdered milk is a necessity where I live. I use it in all my cooking and make my own instant hot cocoa. I love it that way.

      It's definitely something I always have on hand in the pantry. I usually only use it for bread. It's been great trying it out in some new recipes :) I can see why people use it. It would sure save on fresh milk and works great if, like you say, it's the only thing that you can get! :D I'll have to try that hot chocolate!

    Hey Jessica, all the delicious recipes you made making me drool 🤌🏾✨🤤
    Just one tip, when making Indian or Mexican dishes, if the recipe create a lotta grease, don't discard them. Those are actually flavour from the spices you poured in. Those spices when fried, release oil and hella flavours. Those grease actually help the dish to not get dried easily. 😊

I'm so happy you liked the meal ideas :D I agree about the oil but I was just following the directions on the package to "remove the excess grease" lol I spent a long time wondering what I could fry up in all that perfectly tasty oil! I normally drain oil from meats before I add spices so that I don't lose those lovely flavours! It was a whole lot of oil though...I think I'm missing some understanding of the recipe still lol Thank you so much for your thoughtful feedback

    When making a tomato based soup to which you are going to add milk, put in a bit of baking soda first. It will foam up but will cut back the acidity and the milk won't curdle.

    Maybe french toast casserole with the milk? Make it the night before and let it soak in the fridge overnight. Bake it up and top with a powder sugar/milk drizzle.

    You're doing great! Graham crackers are good in vanilla pudding. Marshmallows can be baked into brownies, at least I've seen it done.

    My grandmother would come to visit us when I was newly married, and I remember her saying the key to making the dry milk drinkable was to make it the night before and then refrigerate it all night. She promised it would taste better the next morning. It did, but I still didn't prefer that. However, I love using milk powder/water in the cooking. Also, I drop spoonfuls of kale powder into all kinds of things. In our house I usually use hubby for opening those hard jars, even though I have a plethora of instruments that purport to make the job easy. I've never bought or made any kind of bruschetta before, and have no idea of where it would be in the supermarket, but it looked interesting! The video ended too soon.

      @@JessicaWanders I have never know of it to be used as a spice , but it maybe used in the Indian culture as one. I know that in Australia they have a candy clamoring they refer to as musk, maybe it is something similar.

    You are bringing me back to my childhood here... My mother, raising five kids (all of us born in the 60s and 70s), would make powdered milk and cut it with purchased milk to try to improve it. I was never a hugely picky child with food and things, but I never liked milk at our house. My poor mom.

      Nostalgia can be wonderful but I agree, that powdered milk isn't such a great memory lol I also always have it in the house for bread making but with this challenge I'm really embracing it in a lot of other cooking! I think I'll be using it more for cooking in the future with the rising price of fresh milk these days! I don't think I'll ever enjoy it straight...

    I thought everyone made tomato soup with tomato paste. I like it because i have control of the additional ingredients. No high fructose corn syrup.

    I use powdered milk in my bread machine. Always a staple in my house, even when I Was a child… I’m now 60+. I used it to stretch milk when I was low and not able to get out when the kids were small…. Equal parts of ‘real’ milk and powdered milk…ex: 1qt to1qt ratio. It made it rich and no one was the wiser! You just need to shake them together well, and refrigerate until very cold. I would do it the night before

    I'm only 33, but I have rheumatoid arthritis and some other autoimmune issues, so I feel the pain of not being able to open jars (Weakest wrists on earth). I slide a butter knife inside the jar lid and pull out slightly and it always works. Pops it right off. But if I'm in a sassy mood, I just beat the top of a jar with my chefs knife about 5 times, and then it also pops off 🤣🤣🤣

      I’m sorry to hear that 😟 It’s awful when our own bodies decide to wage war against us! Rheumatoid arthritis is rough 🧡
      Mr. Wanders isn’t always available as my jar opener lol He always get very concerned when I beat on the jar lids with the dull side of a knife😜🤷‍♀️ It usually works though! I like to reuse cute jars to hold spices and things so it’s always nicer if I can get it off without mangling the lid haha

    If u chill the reconstituted powered milk it's better. Also a bit extra powder it also is better imo

      So...I tried the chilling overnight and it's bit better but still really tastes like powdered milk to me unfortunately. Maybe I'll try adding some extra powder to it too! Thanks for the tip :)

    Korma...the instructions were odd. They mean fried onions, like French's crunchy fried onions (fried but not dark). It's supposed to be a crunchy topping. Not sure about all the oil added after frying the onions in it and then taking it back out again (maybe for the onion flavour? Onion juice hookie-pokie? 😁), but we do use a lot of oil in dishes generally. Lol. 🤷‍♀️
    No kale powder in the tomato soup? That would have definitely masked it. 😄

      Aha thanks for chiming in about the korma! It really wasn't clear that they wanted crispy deep fried onions...likely that was what the large amount of oil was for. There was another instruction that cautioned against overcooked onions so it was a bit confusing. I feel like trying korma the next time we go out for Indian just to see how it's supposed to be :P The taste was great but somehow the instructions didn't work for me.... It would have been even better with some square bread ;)

    Make graham cracker crumbs, then take the can of sweetened condensed milk, look up "Magic cookie bars" or recipes using Eagle brand or Carnation sweetened condensed milk (lots of dessert recipes to be found) HTH

    I make yoghurt out of skim milk powder and it is very thick and good it is about 18 ounces of powdered milk to about 30 ounces of warm water and my culture and `12 hours later it is done

    Thickness of yoghurt is determined by how long you let it ferment, I make thick Greek style yoghurt with skimmed milk, higher fat content milks produce a more liquid yoghurt in my experience x

    A nice glaze on that oatmeal loaf would be a bonus. I use those little packets in oatmeal in my apple crisp topping. My tomato soup looks curdily too sometimes, and we also use croutons on it as well. For the taco lettuce salad, were the ingredients cold, compared to hot when used in the taco bowl?
    Maybe the challenge could be....let's see how long I can make this stuff last, instead of fast we can use it up? (most people want their supplies to last as long as possible, because it costs money to replace the food)

      Hi kathryn :) Great idea to use those packets for apple crisp topping! In the rice bowl I heated up the meat mixture and rice before adding the sour cream and salsa so it was a nice warm dinner :) I don't think that we use up our pantry supplies very quickly and yes, it's good to keep a substantial supply on hand! I am not very interested in burning through the items in my main pantry but it's nice this time of year to stay home and focus on using up anything in the house that has been hanging around for a long time. It saves money after Christmas and keeps me off the snowy roads! I'll keep at it for awhile yet I think ;)

    Hey I liked your attempt at bbq and your attempt at Tex Mex isn't bad at all..I'm liking your videos and getting some pretty good ideas..I don't have a pantry or basement but we've definitely done pantry and fridge diving like you've been..haha I just boiled a small ham for various dinners and actually have some ham and pinto beans cooking now haha.. tortilla chips are good for that so are Fritos if you have them lol..and I get the homebody thing .I have to use an electric wheelchair sometimes for limited mobility and don't leave my house for squat unless it's church or an errand my towns not dangerous just boring lol..and instead of binging on stupidity I'll watch dyi food things like this for ideas lol..haha when it comes to jars I just tap the lids on the counter a bit and can usually twist it off..

    Maybe it's because it's skim milk powder?? In Australia I used to buy the long life (shelf stable) milk (only because of my hubby..always fresh I used to get but it's creamier I feel) anyhoo we buy full cream milk powder...so I wonder if there would be a huge difference in taste? I do agree it taste better if it sit for 30mins to get it fully mixed but we use it now for recipes and for coffee and tea ☺️ as we live in our van

      Could be! I haven't seen full milk powder anywhere in the stores but I do know that you can buy it online. I haven't ever tried it! I'm sure it would taste a fair bit different! I do use more powdered milk when we are out in the camper, for sure! Just so much easier to store and lightweight too!

    We've been doing this since Christmas day as our family dinner was Christmas eve. We've been eating MOSTLY from the fridge and freezer ever since with only buying milk and some fresh fruit now and then....other than cat food, dog food, and medicine as needed. I don't think we've even made much of a dent in there, but we are starting to get almost everything used up from the fridge at least.

      Good for you Suzanne! It really can take a long time to use up things! I'm still so surprised every time I do a challenge at how far everything goes! There's not much in our fridge but the freezers are really full and the pantry is still pretty stocked and I can't even just get through this selection of items I want to get rid of very quickly LOL I'll just keep at it!

      Me too! I don't have a big garden to can things up but I do have huge amounts of food and my rules are the same as yours, except if I want to make something and one ingredient is missing, I can get it. So far I am low on oats and that's it!

    You might want to put a tablespoon of the kale powder in a smoothie. You won’t taste it but you’ll still get the nutrients

      It does go quickly in a pressure cooker! I only have a very large pressure canner/cooker that I don't want to wash if I don't have to lol I don't mind the time. If I want to save on energy I just bring them to a boil and let them sit for an hour and do that a couple of times.

    So I'm new to watching you. I am a Senior. And when I was a child I went hungry many many times. And I learned from a very young age not to be a picky eater. My siblings and I ate many breakfasts of Raw Oats and Powdered Milk. And as far as Kale goes I don't understand why you would not want the flavor of it in those Potato cakes you made. And why it would matter if the Kale turned your potato cakes green. Just wondering? I wish you success in your Pantry Challenge.

      Welcome to the channel :) I'm not much of a picky eater myself. I think that many things that we like or don't like are just what we are used to.
      I do like the taste of kale I just wouldn't want to over power the flavour of the other things in those dishes I was making up. I am trying to learn how much kale powder I can add to things without it imparting it's flavour to the dishes. It turns out that it's a fair amount :) Maybe green potato cakes would be fun!       I used to make what we called pizza crackers, crackers a bit of pasta sauce with cheese on top and then pop them in the microwave. They are so addicting!

    I know in one video you said you wanted to buy a new stove eventually, but if the buttons bother you that much in the meantime, you could probably find someone to 3d print something for you that would work? Just a thought, I don’t actually do any 3d printing so I’m not very helpful 😅

    The powder milk will taste better if you let it chill for 6-8 hours.
    Almost all yogurt in the US is fat free. I see you make yogurt with cream, we would call that sour cream. It’s interesting seeing the differences in our countries.

      Hi! Thanks for the tip about the milk! I think that would definitely help some! I do use the thick yogurt as a sour cream replacement but because it doesn't have any added acid like lemon juice or vinegar I don't usually call it sour cream. To me there's not a lot of difference. I think the yogurt with cream is just more of a Greek style yogurt? I really love it with the 18% coffee cream but that's very decadent and expensive! It's always interesting to see what people are buying and eating in other places! Love it!

      @@JessicaWanders that’s so interesting! Sour cream is here just cream and cultures if you read the ingredients. Greek yogurt is filtered milk most of the Greek yogurt I buy is 0% fat but it’s a higher protein content. I’m in WA and close to the Canadian border. Sometimes our discount grocer has some Canadian products and I always buy them because you guys have cleaner food than us when it comes to preservatives and food dyes.
