Was fortunate to have been stationed (USN) in Rota, SP with my family for nine years - we LOVED and cherished every moment. The Spanish people, food, countryside are over the top.
I wish I could remember how to make the Spanish tapa dish we used to get at local bars in the port city Puerto de Sta Maria. It was so simple - fried potatoes in olive oil w/garlic, fresh squeezed lemon (not too much), parsley, and salt.
I've had this dish in your video many times at local restaurants - Al, thanks for another great vid - keep em coming.
That is a typical dish of Cadiz, I have made a very similar version, called patatas aliñadas, check it out! Much love :)

I'm back to say that I just finished eating this amazing dish! WOW!! The descriptor in the title is NOT hype! The first forkful was an insane blast of intensely delicious flavor...I smashed the eggs all around in the potatoes and garlic parsley oil...omg....soooo wonderful. I added a few sliced hot cherry peppers for kicks and was not disappointed. I paired this with my own version of a kir royale, Pinot Grigio topped with sparkling Italian Pomegranate soda. I plan to replay this over and over as it was pretty easy to prep and just so dang tasty. Thank YOU once again. This channel is an epic food resource. I have garlic breath now, lol, and it's all good.

A half-cup of olive oil - wow, this is NOT a "light" dish, but insanely delicious! This looks like the perfect Valentine's Day brunch to me - but it would be a beautiful dinner dish, too.

I would squeeze the garlic out of a 2 or 3 of them and spread over the potatoes.
You remove the skin, that is why I cut a slit on it, very typical in Spain :) Much love

I wish I could add a photo here. I made this and it truly is incredible. I toasted an english muffin and used the fried garlic as spread - wow! I added a red onion to the potatoes in the last 5 minutes. Why? Because fried potatoes and onions go together like Romeo and Juliet. Oh and do not skip the parsley garlic sauce as that takes the dish over the top. Gracias Spain!

The use of extra virgin olive oil is a waste of oil, instead use pomace oilve oil for cooking.
