I never get mushrooms that clean! Except at the Farmers Market--those are incredible. And l love the onion cutting tip---I'm OLD and never thought of this!! These would be wonderful with baked or boiled potatoes.

I went for tapas last night. I love love mushrooms. I think I've seen a similar dish with brandy added. Cooking this and garlic chicken and rice for tea. Going to Barcelona in October really looking forward to it.
Looks good. The one thing I would say is that, the best oil to use is avocado oil, it has a high just point. Definitely would not use extra virgin olive oil, that's actually not even good for cooking, it's usually used as a dressing. And regular olive oil had a low heat point. I will be changing that aspect of this recipe. Otherwise everything else looks amazing!

Great, yes presentation is important to make your dish.. however all of my mushrooms are all different sizes 😅, I will have to sacrifice that element and cut my mushies, but the flavour I can repeat 😄 Egg on top, oh yes, breakfast sorted today ! Thank you ❤

As a Pizza Maker back in the 80s I learned to use a stiff bristled Paint brush to BRUSH off the mushrooms for cooking, never water..

Nice ... But I have a question, Why not salt the mushrooms at the beginning of cooking to draw out more moisture and intensify the flavour?
If you salt the mushrooms in the beginning, it will draw out the water from them, making them simmer in their own liquids :) Much love
