What style of Dijon mustard are you using? The Dijon mustard we have here has a pale yellow color with a smooth texture. That looks more like a whole-grain style mustard, which, for what it's worth, would be delicious. :D
I would bet it might be right next to the regular Dijon mustard. It's so unique looking, I don't think you'll miss it or that there's so many to choose from, that may confuse you. I'll do the same. 😊

I tried your recipe here in India and it was fantastic! Albert, I love most of your recipes. I did have the smoked Spanish paprika, so I slightly roasted some Kashmiri chilly powder and used it instead. I have to buy Spanish paprika soon. My last purchase expired on the shelf.
No way! In Spain "potatoes" come from Peru... So it is impossible that, in addition to this anachronism, these potatoes can also be Arabized "Mozarabic", taking into account that the Muslim Arabs were expelled from Spain before the discovery of America in 1492 and, therefore, of the potato. The only authentically Spanish thing in this recipe is the guitar strumming at the beginning of the video... the rest is as iconically fake as a Loewe hnadbag... made in China. Enjoy the imaginative fake recipe (why not?)! ¡Buen provecho!
Nice receipe but that background klim-bim is absolutely annoying. While you were talking at the end I thought, my telephone rings in the other room. Totally idiotic music. Why even play it?
If you put "Spanish" in front of anything, it automatically makes it better. This is something this channel has taught me.

I believe it's called stone ground mustard.
