    INGREDIENTS for the Berta Jay's
    LENTIL SOUP
    ---------------------------------------------------------
    ½ cup vegetable broth (½ teaspoon dry Seitenbacher Vegetarian Vegetable Broth mixed with ½ cup of water)
    1 clove chopped garlic
    1 stalk celery - chopped
    1 medium onion - chopped - I forgot to mention the amount ;-(
    1/3 cup lentils - I used brown - set aside in ½ cup water
    1/3 cup brown rice
    ½ cup shredded carrots
    ½ cup fire-roasted chopped tomatoes (I used Muir Glen)
    ¾ cup chopped potatoes - I used a mix of white and sweet potato
    4 cups (1 tablespoon dry Seitenbacher Vegetable Broth mixed in 4 cups water
    SPICES
    1 bayleaf
    1½ teaspoons dried parsley flakes
    1 teaspoon dried marjoram
    1 teaspoon basil
    After cooking 30-35 minutes,
    Add ½ cup frozen corn, ½ cup green beans (I cut into 1 inch pieces) and 1 teaspoon salt
    My objective for this channel is to share with others what I have learned over the last 30+ years about living and eating healthier. I share my knowledge with my small circle of friends all the time. I am not a doctor, nor do I hold any type of medical degree, but I believe that my tried experiences may help someone else.
    For over 30 years I have used every diet imaginable to lose weight, but I confess that I am now at home using the vegan lifestyle. I want to share what I have learned about eating and enjoying food. And, since I am still learning how to be more consistent with this lifestyle, I have decided to eat more healthily, realizing the weight will come off eventually. Though I have not reached my goal weight, I know that sharing with other people in front of a camera with help me to stay on course.
    I have, with the help of my husband of 37 years, raised 3 grown children. I will also share some cooking shortcuts as well as some natural formulas I have used and still use for everyday problems.

    Berta, When I'm chopping up vegetables I keep all vegetable scraps in a large freezer containers and continue to add until full. I add and then put back into freezer. Once full I place all scraps into pan add water to cover then boil and cook until I've made a vegetable broth. I then strain vegetable scraps and cool broth. Place broth into ice cube trays and freeze until I need broth. Then I add vegetable scraps to compost pile. Love Tamson from Kentucky 💕 💕🌼 🌷🌻 🌷

    Looks wonderful Berta......will try it. I wanted to let you know how successful you salad prep has been. I found several different sized containers, washed my romaine (layered on leaf at a time; then layered in container with paper towels in between....I used spring mix, spinach and arugula, shredded carrots and radishes....all layered with paper towels....sealed good and labeled. My husband prepares his own for lunch and he loves it.....I am very happy that I won't be throwing away anymore soggy lettuce.....Thanks Berta Jay for this tip.💟😇

      I know there are many who think that such a simple tip won't work but I, honestly, had used this tip for years before I shared it on my channel.
      Simply said: This tip works!
      Last thing: this soup took me years to perfect but if your follow the directions it will taste delicious every time you make it. It is one of my family's favorites.
      Tell your husband, he's a gem. My husband prepares his own lunch also. We are blessed to have such wonderful men in our lives. Let's be more thankful for that.

    I like the vegetarian broth powder. I make my own broth with all vegetables scraps that I have, onion skins and celery,etc.. and save in freezer til I get enough to boil with bay leaf, and seasonings. After I boil I screen out liquid and but in fright. Or freeze in ice cube trays. I save money and use up scraps.

    Just finished a bowl of this soup, which I made for the first time. Delicious! So nutritious and easy to make. The only thing I did differently was I added some canned mushrooms for some additional nutrition. I'm sure it did not affect the flavor.
    This will likely be a frequent soup this winter. Thanks for another great recipe, Berta Jay! ❤

      I made the soup over the weekend and it is delicious...hubby liked it too! 🙌🏾💥🙌🏾 I will likely double the recipe so it will last longer. I put some collards in the crockpot with fire roasted tomatoes and roasted some beets, and a mix of potatoes to add to my salad. This made a great meal for lunch?       Because you said you'd watch again, Lona, just for the ingredients, I will post them under the video. This one of my family's favorite soups. When I started my channel I had so many things to do I just didn't include the list of ingredients. Check out my latest videos, I now do it all the time.       Bette, this soup is one of family's favorites. It takes a while but it's really worth it. A little tip about this soup: the longer it stays in your fridge, the better it tastes; however, it only lasts about 3 days at my house 😄

    Hey Hey Berta Jay, I have a tip for you as well. If you bake your potatoes and let them build up a slightly tough outer layer before adding to the soup, the'll retain a bit of a chewier texture in the finished soup. I just made a pot of veggie soup today as well. Cheers!

      @@bertajay oh my I made this tonight and left put the green beans and corn. Soooooo good. I used the recipe for flat bread of the seedy potato and flour and made biscuits in oven and used your sweet potato butter on the biscuits. Oh and I also made your parmasean cheese and put that on the lentils. Very good.

    Looks scrummy.i did chicken bones roasted with parsnips overnight very little salt it worked csnt rember if it was majsrom or oregsno i put in. I used just coue granules of himslyan salt and it was really nice.like faint chicken taste.i may have put stock cube in it quarter or do.i dont us salt.a lot id like to try this soup.i got sit peas.i love Black eyed peas at moment i got them first time they so pretty.i keep getting hard bits in mung beens.im going to try it but not sslt cheese on tpp may be or yoghurt.its tomostoes hard to get.i like the cups for measuring.it looks delicious.have you tried eating lasagne after couple days in fridge its same.took four hours frim cordin bleu book wine too was used.i discovered blavk eyed peas have vitamin A in them..

    I am wondering if one can use regular white rice instead of brown rice. Would there be mushy or under-cooked rice? I was looking for a lentil soup recipe, I am not vegan. This soup looks amazing.

      Honestly, Christine, I am not SURE about using white rice because I don't cook it anymore. But you could try it and see. 🤔 This soup of mine is absolutely delicious. I worked on it for a while and over the years has become one of my family's favorite. Give the white rice a try and see. I hope that suggestion helps you. Thanks for your question.😊

    I have a problem with getting lentils soft. Almost wonder if I should even pre cook.

      Have you tried soaking your lentils in water before cooking? Do that, M, for about a 30-45 minutes before cooking. Be sure you cover soaking lentils with water by at least 1/2 inch. Also, there are different types of lentils which require different cooking times. So, what color lentil are you trying to cook?

    That recipe is delicious I'm sure. One suggestion: Use barley instead of rice. It's more nutritious.

    Can u use the different colored lentils interchangeable? Does the taste or texture vary? I like lentils but haven’t had a good recipe like this to use. Going to make this tonight for tomorrow. No potatoes so I’m going to use cauliflower I have on hand, and it will have a crurciferious, thanks dear

      You can use other colored lentils; but, understand that they WILL give you a different taste and texture, especially the red lentils. Cauliflower sounds like a good substitute. I am sure your soup will be delicious! You're welcome and thank you for your comment. 😊

      Not sure because my family eats it so fast l've never had the chance to freeze it😄. But l believe it would freeze well. Give it a try.

    The idea of this lentil soup is good, However- do not forget to add 3-4 tablespoons of pure butter at the end of cooking. This way your soup will be perfect- adds depth to the overall flavor. Generally cooking any soup without olive oil or butter is simply unfinished.

      It’s worth it to remember that this recipe is not advertised as “vegan” at all, instead is advertised as a “tasty lentil soup”. There is a difference.

      It truly has taken me too long to respond to your comment, Bgbaby75, but, Joni is correct when she says that vegans don't use dairy products. I am a whole-food, plant-based vegan. My food is not advertised that way because I desire that people who are not WFPB will chose to try some of my simple but tasty recipes.
      I don't want to cause any dissension so add the butter if you would like to and make my recipe yours. I just choose not to use oils. I hope you understand. It is for health reasons for me.
