QUICK & EASY Baked Sweet Potatoes

    INGREDIENTS for Berta Jay's
    Baked Sweet Potatoes
    ---------------------------------------------------------
    Organic sweet potatoes
    THAT'S IT!
    INSTRUCTIONS:
    Whole potato:
    1) Slice potato lengthwise.
    2) Place on a parchment lined baking sheet.
    3) Bake at 400°F for 30 minutes.
    4) Remove from oven and let rest for a few minutes. It's hot so be careful!
    Potato Circles:
    1) Peel and slice potato in about ¼ inch circles width-wise.
    2) Place circles on a parchment lined baking sheet so they do not touch.
    3) Bake at 400°F for 15 minutes; flip over and bake for another 15 minutes
    4) Remove from oven.
    5) Let stand a few minutes so you don't burn your mouth when you eat them!

    My objective for this channel is to share with others what I have learned over the last 30+ years about living and eating healthier. I share my knowledge with my small circle of friends all the time. I am not a doctor, nor do I hold any type of medical degree, but I believe that my tried experiences may help someone else.
    For over 30 years I have used every diet imaginable to lose weight, but I admit that I now am at home using the vegan lifestyle; I am still learning how to be more consistent with it; however, I have decided to eat more healthily, realizing the weight will come off if I am diligent. Though I have not reached my goal weight, I know that sharing with people in front of a camera with help me be more diligent!
    I want to share what I have learned about eating and enjoying the vegan lifestyle. I also have, with the help of my husband of 37 years, raised 3 grown children. I also will share some natural formulas I have used and still use for everyday problems.

    I grew my own sweet potatoes in containers this year - first time. They are almost a plant and forget them crop - super low maintenance crop and easy to cure for winter. I'll definitely plant more next year. Thanks for sharing your easy ways of baking them.

    I knew about the number 9 being organic, but did not know about the number 3 being gmo. Thanks for that info. I refuse to eat gmo knowingly. This is a big help!

    Berta, I made this! I love sweet potatoes, but until now I thought baking them takes a lot of preparation. I am so happy because the way you do it it's as easy as making toast, and they retain their moisture and sweetness. Now sweet potatoes will be a staple of my weekly diet. Thank you!

    Love you save energy!!! Be sure to tell people to save veggie scraps for veggi broth and when the broth is done, strain veggies out and put into a compose (dirt).

    Berta I’m from the south we grew up on sweet potatoes just put them in oven they are simply the best I bake pies for friends yet I don’t eat the pies but plan sweet potatoes 🍠 are the best thanks for sharing

      Just like me, Carmen...I really love them, too. Cooking them this way is probably the simplest way you can make a sweet potato.

    I once read a book about George Washington Carver, who became famous for his research on the peanut. He was an instructor at Tuskegee Institute and I believe said about the sweet potato that man could live on it - alone.

    I’m gonna make the slices today in my meal prep. Have you tried using lengthwise slices for toast? I cook them most of the way either in the oven or, if I forgot to do them, in the microwave, and then in the toaster for the last little bit, and I spread hummus and other stuff on them.

    "They don't even call it FOOD!" - I LOVE THIS, Berta. And you are so right. GMOs are not food the way God & Nature intended it to be. I steer clear of ALL GMOs. Please do more recipes for sweet potatoes - they're a favorite of mine too & as you know, so full of good things & nutrients. PS - do you ever use the so-called "white" sweet potato? At my market they're also referred to as "Jersey sweet potatoes." The flesh inside is whitish - & much drier, very similar to a Russet or Idaho baking potato. You can fix them these any way you'd prepare a "regular" potato - mashed, baked, roasted, fried etc. In my family, we always used the moister, orange-fleshed sweet potato for Thanksgiving etc. My Mom used to "candy" them in corn syrup & brown sugar. I think because it was the only way my Dad would eat them [his mom made them that way too]. I never candy them because I'm not a big fan of sweet food - I prefer savory. Not to mention that none of us need more sweets in our diets. OK, now I'm rambling. Anyway, I'm very interested in new & healthy ways to make sweet potatoes. Thanks for another great video.     I did them a bit different. I cut them in circles and put them in the George Forman grill. I does both sides at once, and leaves ridges on them.

    I like to toss my sweet potatoes in cinnamon and bake them at 450 for 20min turning them halfway through. Nice change to the dinner or store them in the refrigerator and reheat for breakfast with a little humus

    Great stuff, Berta! Do you have a pressure cooker? That’s another fast, delicious and FOK/McDougall compliant method that I use a lot for sweet potatoes.

    I save everything from vege ends, etc in a bog and freeze it. When it gets pretty full I put in iPot and cook. Time doesn’t matter I sometimes add extra spices,..then I always have low/low sodium broth for WAY less that purchase price. I freeze in various containers . If freezing in glass be sure to leave room for expansions..... ask me how I know 😂

      @@bertajay Berta, totally understand. There are only two of us so I freeze my broth for soups, etc. If you’re ever in a jam, a quick delicious broth can be made with mushroom powder, nooch and whatever your favorite spices are. 😁

      @@bertajay I buy dried mushrooms on line and just put some in my spice blender (aka coffee blender 😉) and freeze the remainder. You can also get a great selection at oriental stores...but no one is ‘going’ there right now.

      @@bertajay If you purchase organic produce we all know its a little pricey. So grow your own if you have a little area. You can re-grow celery , tomatoes , potatoes , lettace , anything. And saves money just takes a little of time. :)

    I consider sweet potatoes a 'food group'! :)
    Have always loved them----just didn't get the full flavor until some time ago when I started baking them, cut up or not, with no added anything-----Just straight!
    I use the air fryer for them quite a bit-----And when baking in oven I don't wrap them, even----
    (Berta, in more recent vids you are composting, right?)

      Thanks for your comment, Ruthann. I do compost in the warmer months. Not sure what to do with snow on the ground;-); keep in mind, the more I learn, the more I do.

      g winter, I just put the compost out in the regular place on the snow, or frozen ground. Doesn't take long for the snow, sleet, and rain to do a job on breaking it up----
      Some people use a container inside and then take it out.

      Berta Jay I’ve always used bags like you do for food scraps, but now that I’m trying not to take them and using reusable bags instead, I either use a bowl or bring my kitchen compost bin close to where I’m working. Just a thought. :)

    I would highly suggest if you are producing a lot of vegetable scraps, to start composting. Instead of tossing it in the garbage, toss into a composter, then in a few months, you have some rich stuff to add to potted plants or a vegetable garden or whatever growing plants you have.

      Berta Jay Mashed sweet potatoes combined with sugar, butter, eggs, cinnamon, pecans, and vanilla baked in a casserole dish. It uses both white and brown sugar, but I don’t see why you couldn’t substitute maple syrup or honey or something else. Brown sugar should really be used in the topping, though, for texture. Also, I don’t see why you couldn’t use a flax egg, either. My family makes it mainly on holidays as a side dish, but it’s wonderful as a dessert, too. I forgot to mention, some recipes use marshmallows, but that makes it way too sweet for us.

    2 things: saving money!- pl see Chris Hogan & Dave Ramsey: both men have fabulous tips on money (can be seen on TH-cam). In fact, I bought The Total Money Makeover for each of my adult kids. #2- My mother's easy sweet potato recipe. Children love it. Half an orange. Take out pulp. Put the mashed sweet potato in the orange half and heat. Delicious. I add cinnamon, nutmeg, pumpkin & pineapple.

      Peppie, I am a wee bit confused about your mom's wonderful recipe. Please clarify:
      1. Do I mash the sweet potato and put the orange pulp in it?
      2. When I heat (bake) the mashed sweet potatoes, what is the temperature of the oven? what happens to the orange rind?
      3. How do you ADD the pumpkin & pineapple to the mashed sweet potatoes? Are they mashed or blended before adding?
      4. Help me out here, Peppie. 🤔😊

      I do not use aluminum foil at all, nor do I use anything products with aluminum in it. If I use aluminum foil I put some waxed paper between it and the food I cook. Check this board-certified doctor's research on the subject; his name is Dr. Michael Greger. He has written several books; one of which is "How Not to Die."
