VEGAN Pea Salad || COOKING WITH BERTA JAY

    INGREDIENTS for the Berta Jay's
    PEA SALAD & DRESSING
    -----------------------------------------------------
    INGREDIENTS
    Vegetables
    2 cups frozen peas - thawed
    1 cup frozen corn - thawed
    1/4 cup chopped cherry tomatoes
    1/4 cup shredded carrots
    DRESSING
    1/2 cup cashews - (optional - I mix mostly cashews with walnuts & sunflower seeds)
    6 tablespoons water (1/4 cup + 2 T)
    2 tablespoons ACV (apple cider vinegar)
    1 tablespoon sweetener ( I used 1/2 tablespoon each xylitol (dry sweetener) + 1/2 tablespoon maple syrup (liquid sweetener))
    SPICES
    1/2 teaspoon each of granulated garlic & granulated onion
    1 teaspoon curry powder
    3/8 teaspoon salt (I use Himalayan salt)
    1 teaspoon onion flakes
    My objective for this channel is to share with others what I have learned over the last 30+ years about living and eating healthier. I share my knowledge with my small circle of friends all the time. I am not a doctor, nor do I hold any type of medical degree, but I believe that my tried experiences may help someone else.
    For over 30 years I have used every diet imaginable to lose weight, but I confess that I am now at home using the vegan lifestyle. I want to share what I have learned about eating and enjoying food. And, since I am still learning how to be more consistent with this lifestyle, I have decided to eat more healthily, realizing the weight will come off eventually. Though I have not reached my goal weight, I know that sharing with other people in front of a camera with help me to stay on course.
    I have, with the help of my husband of 37 years, raised 3 grown children. I will also share some cooking shortcuts as well as some natural formulas I have used and still use for everyday problems.

    I'm definitely going to give that a try, thank you. I would never have thought of using frozen vegetables this way in a salad. Love the head scarf, it goes perfectly with your jersey. x

    To save on having too many higher carb veggies I would probably use the frozen peas, then raw broccoli, carrots, raw yellow summer squash, and raw zucchini zoodles with the sauce. But probably would just add all stevia instead of some maple syrup. I'm pre diabetic. I worry about getting to much carbs. Then I would plate it ok top of bed of fresh greens.     Berta Jay, this has my name written all over it. I love Pea Salads. I was just looking at the big bag of frozen peas in my freezer and wondering what to do with them. I am going to make this and ill let you know how it turns out. I do the same thing with the measuring spoons where you measure dry first and then wet so you don't have to use two spoons. I loved this video. I'm a believer! I just subscribed too. Lets support each other! Ill let you know how it all turns out over the weekend.

      My dear, cynthia, you don't need a paper and pen when you watch...just scroll down and look at the 'Description' box BELOW THE VIDEO. It's there where I list all the ingredients and sometimes more instructions to help the viewer to 'cut and paste' and then print it later. Check it out for this recipe. Some of my older recipes I did not do this because I didn't know completely what I was doing then. So as I get comments on the older videos, I am adding an ingredients list.

    I love your videos! I watched 2 hours of them tonight when I discovered you. You are so down to earth, easy to follow, practical, and inspirational.       I wasn't going to start this channel because I am not at my goal weight yet. I have struggled for decades but I WILL NOT GIVE UP! And I don't want you to give up either! That's too easy because anyone can give up and throw in the towel.
      Remember, this is a journey we are on...this plant-based eating! Who says we have to be perfect at it...we just have to stay on the road of our journey. You stay tuned & keep watching. I have more to share for you to hear and you to learn!
      Get back on that bandwagon and if your fall off again...get back on until this becomes your committed lifestyle!
      I pray I'll say something in each video that will strengthen and make you more determined than ever to stay with this lifestyle. You did it before - you can and will do it again, Faye. I admire and believe in you, dear friend. 🥰

    This looks great. I'll be trying it soon. Do you have a recipe for a corn salad? I was thinking; corn, cilantro, green onion, etc. with some kind of lime dressing? I can see it in my head but haven't gotten around to experimenting yet.

    Can dressing be prepared without using a blender or mixer? Maybe just crush the nuts?

      You CANNOT just crush the nuts, betty, because they have to be mixed until smooth with the other ingredients. I am so sorry, I don't think you can do this without some type of blender or mixer. Perhaps you could use your favorite store-bought dressing. 🤔😔

      It's from a little store in my area; it's made by "Anchor Hocking." You might be able to find the bowl at Target. See if you can find it there. You can also try at Walmart.

    I have started collecting your recipes. Do you ever prepare legumes from the dry state? I know it is best to cook on stove top and not the slow cooker to cook out toxins. (That doesn’t apply to Lentils). Also, do you ever use Turmeric?

      Yes, to both questions. I have NOT heard that using a slow cooker will not cook out toxins. What toxins are there in dry organic legumes, L? 🤔

      It talks mostly about kidney beans, but when I originally learned about phytohaemagglutinin, an article written by a dietician said any legumes except lentils could have varying amounts of phytohaemagglutinin. Bringing the dried legumes to a full boil for a few minutes is supposed to protect you. At the bottom of the article is the recommendation for cooking.
      I am not a vegan, but eat this way part time. I really enjoy your channel. Linda.
