  • Learn a delicious recipe for a perfect mung bean curry with coconut milk, which can also be made into a mung bean soup. This recipe is inspired by a classic recipe from Kerala, the coastal region of India. The combination of coconut milk and mung bean is very typical in many Asian cuisines, and once you try it, you'll realize that it's a match made in heaven! It's also surprisingly easy to make, and you can reduce the amount of spices if you feel like.
    Mung bean is one of the healthiest beans you can eat, because it's very easy on the digestion system, and rarely causes any discomforts that are often associated with legumes. If you are just starting out to include beans and lentils in your diet, then it's the best bean to start with. We also love the mung bean for how versatile that is: curries, soups, sprouts, salads, cakes and even drinks are just a few things that you can make with it. I added two fresh chopped tomatoes, and curry leaves. We can get fresh curry leaves from time to time from an Indian store. I freeze them, and find this is the closest to fresh.

    Hello from Germany! I tried your dish today - it was the first time I ever used a pressure cooker and my first mung beans, too. I added more bell peppers (lots of home grown bell peppers cubed up in my freezer)and some panneer to turn it into a main dish. Turned out nicely, thank you very much!

    Just made this and it's excellent, going to eat it with some roti. I tried your timings for the mung bean in pressure cooker and they were rock hard :) - Thanks for the recipe though! What does work is 3 minutes full pressure and 10 minutes natural release.

    Love the simplicity and healthfulness. Probably will not use coconut oil as it just adds too much saturated fat on top of the milk but otherwise great. Mung beans are so healthy and good for you. Even though you didn’t mention how to cook the mung beans without a pressure cooker, I’m sure most average bears can figure it out. ❣️

      HI Simone, Thank you. I am so glad that you liked the video. The pressure cooking is the last step in cooking beans and it's only job is to reduce the cooking time tremendously. So if you are going to cook in an open pot , you will have to soak the beans as usual for atleast 6 to 8 hrs and then cook it with 1:3 water , 1 cup of soaked bean, 3 cups of water . Do not add any salt and don't cover the pot with a lid. It will take about 35 to 45 mins on medium heat for the beans to be ready 😊

    Ideally once the Mung bean is combined with the spices, add water and cook it until needed. The coconut milk is usually added last, and once it reaches boiling point, put the flame off.
    This is our practice in Kerala.

    You can soak overnight, cook them in the pressure cooker! It will be faster! Garnish later!

    do you have any recipes without potatoes and wheat and fenugreek seeds? I am Danish and here it is almost impossible to make yellow curry powder without the fenugreek seeds and every time I get those seeds or potatoes or wheat it ends up with eczema and hospitalization due to blocked airways and many stomach aches know in a recipe for yellow curry without the seeds or how I can make a yellow curry mixture without the seeds myself

    Not clear how long the beans need to cook in pressure cooker or on stove. Then they still cook at the end, risk of mushy beans 😢?

      For Mung beans in a pressure cooker or insta pot. The Cook Time is 3 minutes once the full pressure has reached ( Your pressure cooker should indicate that or when the pressure is being released from the cooker continously ) . At this point turn off the heat and let the pressure normalize which should take about 10 mins or less. These are indicative as it can differ from one pressure cooker design to another.

    I know mung is very healing but I’ve yet to find a way to make them taste good 🥹 I don’t hVe a pressure cooker and I cannot eat garlic, onions or peppers. I tried ginger, turmeric, coriander, carrot, celery & salt and coconut milk, but is still did not taste great…what am I doing wrong ? 😥

      If you could give me the quantities I can probably understand better , you may also like to describe. how does your mung bean curry taste like ? I am assuming it is on the sweeter side because of the coconut milk and that you have been very careful in adding spices t an extent that it is too little ( It is my assumption , I may be wrong 🙂 ) , Since you have taken out options of making it pungent by excluding onion , garlic and peppers, you might like to make it sour by adding tomatoes or a spice called Tamarind. If you have been adding too little spice , then increase the coriander and ginger may be by a teaspoon more. You might like to add some herbs at the end , like Parsely or Cilantro. Sometimes we need to try making the recipe more than twice to understand the version that suits us the best☺

      To cook Mung beans without a pressure cooker, 1. rince soak them overnight, next morning drain the water and rinse once - to remove the smell. ( 2 ) Cook Mung beans in an open pot ( 1 cup Mung bean 3 cups water ) , 1/2 tsp of turmeric and 1 tsp of salt ) . ( 3 ) It should take about 15 to 20 mins to cook on Medium heat 300-375°F (150-190°C). Do not cover the pot with a lid and you may have to stir it once or twice to ensure beans do not stick to the bottom of the pot. Add more water if necessary or if the water has evaporated too fast.
