- Turkish mung bean salad, known as "maş piyazı" is a refreshing and crunchy salad made with cooked mung beans, onions, fresh herbs and spices. It's a perfect side dish or light meal for a hot summer day. (Piyaz generally referring to salads made with beans in Turkish cuisine, is adopted from the Persian word, (फ़ारसी - onion) and maş means mung beans in Turkish)
Mung beans are also a great source of plant-based protein, fiber, and vitamins and minerals such as iron, magnesium, and folate. They have also been linked to numerous health benefits.

Ingredients:
• 150 g mung beans, soaked overnight
• 50 g walnuts, 1/2 cup roughly chopped
• 60 ml olive oil, 4 tbsp
• 30 ml pomegranate molasses, 2 tbsp, sub for lemon juice to taste
• 1 tsp sumac
• 1 tsp pul biber, Turkish chili flakes
• 1 tsp salt, 10 g
• 4 stalks of green onions
• 3 cloves of garlic or 2 sprigs of fresh green garlic
• 1 red paprika pepper
• 2 sprigs fresh mint, 1/4 cup chopped
• 1 bunch of parsley, 1 cup chopped
• 50 g green olives, pits removed, finely sliced
• 100 g pomegranate seeds, 1 cup
Instructions:
1. Soak the mung beans in water overnight, drain and transfer into a pot
2. Fill with 1 liter water, bring to a boil and let it cook for 15 mins until doubled in size and soft
3. Drain the mung beans and set aside in a mixing bowl to cool down
4. Chop the walnuts and add into the bowl together with 1 tsp salt
5. Add 1 tsp sumac, 1/2 tsp pul biber, 2 tbsp pomegranate molasses and 2 tbsp olive oil
6. Gently mix and combine the ingredients and set aside
7. Finely chop the green onions, garlic and cut the paprika pepper into thin slices
8. Pit the olives and roughly chop into small pieces, roughly about the size of the cooked mung beans
9. Set aside half of the green onions, garlic, paprika and the olives
10. Heat up 2 tbsp olive oil in a pan, add half of the green onions and olives together with the paprika
11. Stir and saute for about 5 mins until fragrant.
12. Add half of the garlic, 1/2 tsp pul biber, sautee for another minute and remove from the heat.
13. Let it cool down a bit and add the cooked mixture into the bowl, stir to combine
14. Add the rest of the raw green onions, garlic, paprika and the olives
15. Finely chop the fresh parsley and the mint and add into the bowl
16. Finally add 1 cup pomegranate seeds, gently stir to combine

Soak mung beans overnight..next day drain the water and sprout them by keepimg thm in a warm place...rinse these clean under running water...lightly steam them and then use them in the salad...the advantage here is tht u dont need to throw away any water as u did in boiling...thus no nutrition is lost...secondly when u lightly steam them thy dont cause any indigestion and stomach aches..plus sprouting them increases their nutritional content

Yes, this pomegranate salad is generally made between late summer and the entirety of fall - when the pomegranate is ripe to be seized, but now with globalization people make it anytime really because pomegranates are offered year around.

Just made this salad and it's really good. Couldn't get pomegranate seeds and I once broke a tooth on one (!) so soaked some currants and it worked really well. I imagine some chopped fresh coriander (cilantro) would also be great. Mung beans (they're actually a pea) are full of nutritional goodness.
Black currants or raisins will also do?

I’ve just subscribed for that very reason. I can’t cope with music plus human voice when I’m watching someone cook. This is a rare treat on TH-cam and loads of other people comment on how they dislike added music, so it’s wonderful to find a recipe with just the peaceful inviting sounds of chopping and sizzling food. It’s mouth watering and restful to my ears.
I hope music lovers will be able to find their own music to add to this if they like, but I can’t subtract added music so I have to turn sound off when watching other channels - this leaves me in silence which can be lonely!

This looks delicious! Just cooked some black-eyed peas (hurray for the instant pot 👍🏻), and I have most of the ingredients. Even have pomegranate molasses 😊! No pomegranate seeds tho, so I think I use raisins instead. Love the mix of cooked and raw. As I do like to mix hot (p.e. potato's) with cold (p.e. creamy salad) as well.
Black eyed peas also work for this recipe. Hope you enjoy it!

Your salad looks so good and the mung beans nice and green. Mine always gets mushy in spite of boiling it only for 15 min and looks pale green 🤦♀️ no matter what pulse I cook it always gets mushy.

That's optional but adds more depth, savoriness and flavor with the cooked ingredients and spices. For a more fresh version, just use raw ingredients.

I don’t have green olives but I do have kalamata olives. Should be ok with those, yes?
Not a must, but yes the flavors will bloom after couple of hours. Kalamata will work perfectly!
