Beer Braised Pork Knuckle by Baladin Craft Brewery with Christian Meloni Delrio

  • To discover the Beer Braised Pork Knuckle, a great dish of the Central European tradition, now a must in all Italian breweries, we went to the Baladin in Piozzo. Together with Teo Musso and chef Christian Meloni Delrio we filmed the recipe served for more than 25 years by the historic Piedmontese craft brewery. Long cooking times, quality ingredients, delicious condiments and side dishes, and of course a great Stout beer as in the original Schweinshaxe.

    Thank you for the wonderful recipe. Let me add some information from Japan. The soy sauce at 3:13 is actually ponzu sauce. It is written in Japanese on the bottle label. Ponzu sauce is mainly used as a dipping sauce. Traditional ponzu sauce is made by adding soy sauce, citrus juice, and dashi stock from kelp and bonito. However, you can substitute it with a mixture of 15ml of vinegar, 23ml of soy sauce, and 7ml of lemon juice.

All'epoca era consigliato prenotare lo stinco, ricordo che quando non prenotavi avevi l'ansietta speranzosa di trovarne ancora uno disponibile per cenare ❤

    Vielen Dank für dieses fantastische Gericht, zubereitet mit dem wohl besten Bier der Welt (welches ich erstmals in meiner Wahlheimat Schweiz in Biel trinken durfte). Ich liebe die norditalienische Küche über Alles. Sie ist Genuss und Lebensfreude pur. Daher lerne ich gerade Italienisch. Verstehen kann ich euch bereits gut, nur mit dem Schreiben und Sprechen hapert es noch. Aber auch das kommt.
    Ein grosses Lob auch an den Koch, der seine Liebe zu seiner Kunst in jeder Sekunde ausstrahlt. Die Leidenschaft kann man spüren und sicher auch schmecken.

    Buongiorno , anni fa ho frequentato il birrificio Baladen , ho mangiato questa buonissima specialità bevendo le meravigliose birre prodotte dal mitico Teo Musso che ho avuto il piacere e l’onore di conoscere , una bella persona , speciale , molto cordiale ed affabile. Che dire , mi sento molto fortunato di avere vissuto questa esperienza unica. Sono ligure , della città di Savona e mi recavo in langa per incontrare la mia ragazza , di Torino , e insieme abbiamo scoperto questo meraviglioso territorio fino a che , esplorando , siamo giunti a Piozzo dal Baladin e da allora la tappa in questo bel paesino per gustare le birre e lo stinco di Teo era d’obbligo , che bellissimi ricordi , grazie Teo , sei grande . FF

    Prenderò spunto i alcuni passaggi senz'altro. Birra ottima.! Quantità di spezie edi zucchero...? In più frutti e un po' tanto secondo me (zuchero, zenzero, burro bacche, fior di garofano ) e un po' lontano dal sapore della cucina italiana. Per la cottura utilizarei una pentola adatta no sicuramente una padella antiaderente. La saluto, come una umile casalinga che in 33 anni di cucina, di pietanze ho cucinato.! Grazie! 😊❤

    A livello di birre continuano ad esser buone,delle signore birre,anche se FORSE quando era una realtà più piccola,era leggermente migliore

    This is a shank dish. Time-consuming dish for the home cook. I bet the dish tastes great but I'm also disappointed that no one described the taste. Good watch, nonetheless.

    Appena rifatta la ricetta per l'ultimo dell'anno, ok arrestate questo uomo perché è illegale questo piatto! E' troppo buono, alla confettura ho aggiunto un pizzichino di sale ed è ancora meglio. Eccezionale, magari ci vuole un po' di pazienza, ma ne vale assolutamente la pena.
