  • Since the 1950s, between Modena and Reggio, a restaurant has been pursuing a concept of Emilian haute cuisine which finds its maximum expression in a truly original mushroom lasagna, spugnolata. Creativity, territory, family traditions, no waste cuisine enclosed in a single dish. The same that has been on the menu for more than sixty years at Arnaldo Clinica Gastronomica, the oldest Michelin restaurant in Italy.

    About to burst crying while watching this video. It's hard to describe this type of beauty.     One of the best videos this year... the calm and classy vibe lingers on for decades.. I love the anti-waste policy that results in special dish which is not too traditional, but remains faithful to its origin.. generous portion too !

    Of all the cooking shows on TH-cam, Italia Squisita is number one in my book. These are truly first class restaurants, whose chefs have won their culinary spurs with the dishes they demonstrate. At the same time, they pitch this to the person cooking at home; these recipes are do-able by duffers like me. So entertainment and master-class instruction. This lasagna is a great example. I shall be trying to make it (well, something like it...) during the week upcoming. Kudos!

    Emilia-Romagna:
    laddove anche grazie alla cucina si respira aria di pura tradizione,storia e passione verso il "sentirsi italiani".
    Ciò che colpisce nella fattispecie è l'affetto e la cura verso la propria identità di cucina..la cura ed il rispetto verso le materie prime.
    Questo serve anche a capire come in cucina non c'è veramente NIENTE DA BUTTARE e di come anche con degli ingredienti di recupero si possono realizzare piatti da Stella Michelin. 🇮🇹❤🥰

Sono del Nord, ma credo che al Sud si mangi meglio, avendo materie prime per quanto riguarda frutta e verdura di qualità migliore (più saporiti). E guardando parecchi video TH-cam di ricette, i cuochi amatoriali più bravi e direi con più passione sono a mio parere quelli del Sud, soprattutto i calabresi.

    Da kann ich als Deutscher nur dumm gucken. Wie viel Mühe, Liebe, Leidenschaft! Ihr habt halt 2.500 Jahre Vorsprung in Sachen Kultur. Muss man einfach anerkennen.
    Herzlichen Glückwunsch! Eine fantastische Einladung in ihr Restaurant. Zu Hause nachkochen ist bereits wegen der vielen Fleischvariationen unmöglich. Das geht nur in der absoluten Spitze.
    Und die findet man in Norditalien. Und nicht etwa in Frankreich oder Deutschland. Auch gut ist das Baskenland und Katalonien, da ist mir aber zu viel Chi-Chi. Die italienische Küche ist gewachsen, ehrlich, mit Herz und Verstand. Kunst in Reinform.

      Die italienische Küche war immer schon gut, sehr gut. Nahezu überall, den ganzen Stiefel entlang. Und es gibt Regionen, welche die absolute Spitzenklasse erreichen. Im Norden: Piemont, Ligurien, Lombardei, Emilia-Romagna; im Zentrum: Toskana, Umbrien (u. teilweise die Marken u. Abruzzen); im Süden: Kampanien, Apulien, Sizilien. Herzl. Gruß nach D! P.S. auch auf der Insel Sardinien gibt's alerhand gutes zum kosten.

      @@leonorabruno84 Vor Sizilien fürchte ich mich. Da sollen so viele Kaninchen sein. Und ich habe als Kind mal kurz in eine Dokumentation hinein gesehen (seltsamer Name - "Ritter der Kokosnuss"). Da haben sie gezeigt, wie sehr aggressive Kaninchen Spaziergänger angefallen und schwer verletzt haben.
      Und dann ist es ja auch noch eine Insel, von der man dann im Zweifelsfall nur schwer flüchten kann...
      Nein, da lasse ich mir lieber vom Weinhandel die fantastischen Rotwein vom Vulkanhang liefern. Da hat es noch kleine Kellereien, die nur von wenigen kleinen Nebenerwerbs-Weingütern die Trauben kaufen und nach alten Verfahren vergären (Tonkrüge). Sowas hatte ich mal in einem Agritourismo bei Mailand. UNFASSBAR, die Qualität. Ganz anders als normale Handelsweine. Da wird die Gärung zB nicht mit Schwefel unterbrochen oder so ein Mist, um Massenware zu erzeugen, die immer gleich schmeckt. Jeder Krug (bei ca 12-15 Liter gross) wird da in einem gut durchlüften Keller in Lavasand zu 9/10 eingegraben und mindestens 18 Monate ruhen gelassen. Die Trauben werden mit Hand und einer Holzpresse durch Leinen gefiltert vorsichtig gepresst - aber erst entkernt. Und Holz darf auch nicht dran sein. Nach 18-24 Monaten wird in Flaschen umgefüllt und nochmals 3 Jahre Kellerlagerung auf dem Kopp stehend in speziellen Regalen über Kopf gemacht. Danach saugen sie mit einer Spritze den Weinsatz aus dem Hals ab und fertig ist das Produkt. Okay das Wachssiegel fehlt, um sicher zu gehen, dass der Korken wieder dicht ist. Den habe ich vergessen.
      Solche Weine sind unbezahlbar. Kosten aber 24-26 Euro die Flasche. Ich weiss dass der Händler sie für 19 einkauft, aber er soll auch etwas verdienen. Und transportieren und verzollen (CH) muss er sie ja auch.
      Jedenfalls findet man sowas außer im Tessin nur in Italien und im Baskenland.
