Ingredients:
1 cup full-fat cottage cheese
4 large eggs
1/4 cup unsweetened almond milk
1/4 cup browned butter
2 tablespoons Greek yogurt
1/2 cup almond flour
1/4 cup coconut flour
2 tablespoons flaxseed meal
1/4 cup erythritol or preferred keto sweetener
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 cup sugar-free chocolate chips or blueberries
Streusel Topping:
2 tablespoons almond flour
1 tablespoon butter (cold, cubed)
1 tablespoon erythritol
Pinch of cinnamon
Instructions:
Preheat your oven to 350°F (175°C) and line a muffin tin with 12 paper or silicone muffin liners.
Blend the wet ingredients (cottage cheese, eggs, almond milk, browned butter, Greek yogurt, vanilla extract) until smooth.
Mix the dry ingredients (almond flour, coconut flour, flaxseed meal, erythritol, baking powder, baking soda, salt, and cinnamon) in a large bowl.
Combine wet and dry ingredients. Fold in chocolate chips or blueberries.
Distribute the batter evenly among the muffin liners.
Prepare the streusel topping by mixing almond flour, butter, erythritol, and cinnamon. Sprinkle on top of each muffin.
Bake for 20-25 minutes or until a toothpick comes out clean. Let the muffins cool, then enjoy!

    Hey Dave. I’m enjoying your keto videos. I’m glad you asked about the expiration date on the almond flour. Please note: if you keep almond or coconut flour, or any other flour, long enough then tiny worms will hatch out of eggs inherently in the flours, and they will eventually turn into tiny moths after chewing their way out of the bags. Then you will have them all over your kitchen and eventually the rest of your house. I found this out the hard way. I was told to put all flours and grain into the freezer for a time to kill the eggs that are in there before storing them in the pantry. I’m telling you it didn’t work. Do not store any grains or flour long before using them unless you want to risk the worms and moths. You’re welcome. 😮

    Parchment paper? lay it up in the pan…press & crease into the bottom edges then fold along the edges & fold up the corners about 1/2 inch..viola’. flip it over & you have a custom fit liner…DUH! 🤔

    If. Ur using the paper towel use a scraper to lift it off the pt. I make blintz pancakes; 1c cottage cheese, 4 eggs, 1c sour cream, 1c flour( I use almond flour) 1tsp vanilla( I use almond extract), 1-2 Tbsp sugar( I use stevia). Put all ingredients in a bowl, mix well, cook on skillet over low/medium heat. I love these and they r high protein, low carb. I add butter and a little powdered sugar or maple syrup, or fresh fruit or jam. Whatever u like. They r denser than regular pancakes. You can purer cottage cheese to smooth out if you want but not needed.

    Hi Dave, I am new to your channel and I love how you keep your content raw and real! I have several suggestions for your parchment paper, you could buy different sizes or even pre-cut but they cost more if you just continue to cut the size that you need That’ll be fine. But here’s what I do, I cut the size that I need. I run it underwater and crumpled it up then I spread it out on my pan. It’s perfect. I don’t have to worry about trying to hold it down in the corners, after putting it on the pan, it’s OK if it’s wet, you you should lightly spread it with cooking spray or oil it with olive oil that way whatever you put on is guaranteed to not stick. I do this trick for my air fryer too.

    Dave, when you add whole fruit to a recipe, toss them in a little of your flour then add them. They will not stick. You do need to gently fold them in with a spoon or rubber spatula or you will squish them, I suspect that is what happened to yours. Also the addition of the yogurt would have given you a less thick batter. Keep on cooking!!!

    To serve as bread with a Keto or carnivore meal, I will replace the almond flour adding a cup of finely ground pork rinds (I'm still looking at my store for them, but not yet). I use fresh garlic bukbs crushed in my press at serving with butter drizzled and a tiny bit of dry herb garnish such as basil, Italian seasoning or just parsley...green onion even mixed in dough is delicious! Served with carnivore mac&cheese or Keto Crack! Because, my Husband is trying but hes a bread junkie. And, if I'm in charge of a meal with my extended Family...they get what I can eat as bread, sometimes low carb tortillas...maybectry making them with thus dough. I've cooked another recipe like crepes pouring a thinner batter onto a small skillet, swirling & shaking the pan. Flip to other side to flatten the stake abd serve or refrigerate for later wuth fillings: breakfast, lunch, dinner or a snack! Thanks for all you do! And, I really like my Ninja blender just like yours! 👍
